Sweet-and-Sour Cucumber Salad image

This Sweet-and-Sour Cucumber Salad is spiced with a little dry mustard.

6 large cucumbers, peeled, seeded, and thinly sliced
2 Vidalia or other sweet onions, thinly sliced
1/4 cup sugar
2 teaspoons coarse salt
2 teaspoons dry mustard
2 teaspoons celery seeds
1/2 cup corn or canola oil
1/2 cup cider vinegar

Steps:

  • In a medium bowl, toss together cucumbers and onions. Set aside.
  • In a small bowl, whisk together sugar, salt, mustard, and celery seeds. Whisk in oil and vinegar until emulsified. Pour vinaigrette over vegetables; toss to coat. Cover, and refrigerate at least 4 hours to let flavors blend. Serve chilled.

2 cucumbers
1/2 cup thinly sliced onion
1 cup vinegar
1/2 cup Splenda sugar substitute
1 -2 teaspoon pepper

Steps:

  • Peel and slice cucumber and onion.
  • Set vegetables aside.
  • Mix Splenda, Vinegar and Pepper (taste to see what is the right amount of seasoning for you).
  • Add vegetables to sweet/sour dressing.
  • Cover and refridgerate for 1 hour to allows flavors to blend.

1 teaspoon salt
1 teaspoon grated ginger
3 tablespoons sugar
1/2 teaspoon prepared wasabi

Steps:

  • Wrap sliced cucumbers in paper towels to absorb excess liquid and refrigerate.
  • In a bowl combine lemon juice, vinegar, salt and ginger. Add sugar to taste. Add wasabi and stir until sugar and wasabi dissolve in mixture. Transfer cucumber slices to a bowl. Pour dressing over cucumbers and toss to coat.

1/4 cup white wine vinegar

It is a variation on a cucumber salad my grandmother always makes in the late spring and summer. Of course, she uses real dill out of her garden. In any case, my dad is now diabetic and so we made some substitutions. It is a refreshing addition to any meal.

1 cup fat free sour cream
1/4 cup Splenda sugar substitute
2 teaspoons dried dill weed

  • Mix together fat free sour cream, Splenda and dill (add more Splenda if you desire it to be more sweet).
