2 egg whites
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons water
1 cup white sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
18 ounces pecans

Steps:

  • Beat egg whites, vanilla, and water together in bowl, until frothy not stiff.
  • In gallon size zip-lock plastic bag shake together sugar, salt, cinnamon and nutmeg, until well mixed.
  • Add the egg mixture and pecans at the same time to sugar mix.
  • Zip bag and shake well to cover all pecans.
  • Line a large cookie sheet with tin foil and spray the foil with cooking spray.
  • Spread out pecans on foil and bake at a 250 degree oven for 50 min, stirring every 15 minutes.
  • Let cool and store in airtight container.
  • Enjoy!

1 lb pecan halves
3/4 teaspoon salt
1 teaspoon cinnamon
1 cup sugar
1 egg white
1 tablespoon water

Steps:

  • Beat the egg white and water until frothy but not stiff.
  • Stir in the sugar, salt, and cinnamon.
  • Add the pecans and stir well until the pecans are completely coated.
  • Spread the nuts on a large baking sheet and bake at 200 degree Fahrenheit for 45 minutes, stirring every 15 minutes.
  • Remove them from the oven when dry and toasted.
  • When cool, store in an airtight container.

Diabetic spicy pecans with a little kick! This is just enough cayenne to give that kick. If you like hot and spicy, add more. NOTE: Newer crockpots tend to run at a higher temperature, so you may need to adjust cooking time accordingly!

1 egg white, slightly beaten
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon cayenne (or more)
1 cup Splenda granular, sugar substitute

Steps:

  • Put the pecans in crock pot. Add the egg white and stir until the pecans are evenly coated.
  • In a bowl, stir together the cinnamon, salt, cayenne, and Splenda. Pour the mixture over the pecans and stir until they're evenly coated.
  • Cover the crock pot; set on low, and let it cook for 3 hours, stirring every hour or so.
  • If the nuts aren't dry by the end of the 3 hours, uncover the crock pot, stir, and cook for another 30 minutes until dry.
  • Store in an airtight container.
