Steps:
- Beat egg whites, vanilla, and water together in bowl, until frothy not stiff.
- In gallon size zip-lock plastic bag shake together sugar, salt, cinnamon and nutmeg, until well mixed.
- Add the egg mixture and pecans at the same time to sugar mix.
- Zip bag and shake well to cover all pecans.
- Line a large cookie sheet with tin foil and spray the foil with cooking spray.
- Spread out pecans on foil and bake at a 250 degree oven for 50 min, stirring every 15 minutes.
- Let cool and store in airtight container.
- Enjoy!

Steps:
- Beat the egg white and water until frothy but not stiff.
- Stir in the sugar, salt, and cinnamon.
- Add the pecans and stir well until the pecans are completely coated.
- Spread the nuts on a large baking sheet and bake at 200 degree Fahrenheit for 45 minutes, stirring every 15 minutes.
- Remove them from the oven when dry and toasted.
- When cool, store in an airtight container.
PECANS WITH A KICK (CROCK POT)
Diabetic spicy pecans with a little kick! This is just enough cayenne to give that kick. If you like hot and spicy, add more. NOTE: Newer crockpots tend to run at a higher temperature, so you may need to adjust cooking time accordingly!

- Put the pecans in crock pot. Add the egg white and stir until the pecans are evenly coated.
- In a bowl, stir together the cinnamon, salt, cayenne, and Splenda. Pour the mixture over the pecans and stir until they're evenly coated.
- Cover the crock pot; set on low, and let it cook for 3 hours, stirring every hour or so.
- If the nuts aren't dry by the end of the 3 hours, uncover the crock pot, stir, and cook for another 30 minutes until dry.
- Store in an airtight container.
