DIABETIC DIRT CAKE

Diabetic Dirt Cake image

I had this recipe from a long time ago. I have recently converted this to diabetic so that my husband can have a sweet treat. Most diabetic Dirt Cake recipes don't include the cream cheese, which is what makes the recipe for me! Hope everyone enjoys this as much as we do!

Time 30m

Number Of Ingredients 8

1 box sugar free oreos
1 box large sugar free-fat free instant vanilla pudding
3 c milk (i used 2%, but you can use 1%, fat free, or whole)
8 oz cream cheese fat-free
12 oz cool whip (i used lite instead of sugar free. it has less carbs)
1 c splenda granulated
1 tsp vanilla extract
4 Tbsp butter (i used parkay spray butter. you can use whatever butter product that you normally use)

Steps:

  • 1. 1. Mix vanilla pudding and milk. Set aside. 2. Cream together cream cheese, cool whip, butter and vanilla. 3. Mix cream cheese mixture with pudding. 4. Chop Oreos in a food processor or blender. (I like to chop my fine. It really looks like dirt. But you can make yours as chuncky as you like.) 5. Spread a thin layer of cookie in bottom of large bowl or pan. Spread a thick layer of pudding. Then another thin layer of cookie. Keep layering until you have used everything. And your top layer is cookie. The Bowl that I use makes 3 cookie layers and 2 pudding layers. 6. Put in fridge and let chill for a couple of hours. 7. Enjoy!!!!

If you or someone you love has been diagnosed with Diabetes, then you know carbs are NOT our friends! This is a great dessert as its virtually carb free! What makes this dessert more fun if served in a sand bucket to look like a bucket full of dirt! You can also change all the chocolate ingredients to vanilla ingredients and make...

Time 1h

Number Of Ingredients 5

1 box jello brand sugar free choc. pudding (lg. box)
1 pkg vanilla cool whip lite
1 pkg sugar free oreos
1 small kids sand bucket and shovel
1 pkg gummy worms

Steps:

  • 1. Prepare pudding as directed on box, using 1/2 cup LESS milk as called for. Place in fridge while preparing everything else.
  • 2. Separate the oreo cookies, scraping the white icing from inside. Place cookies in a heavy duty zip lock baggie and using a wooden rolling pin, crunch the cookies until very small pieces.
  • 3. Start with a layer about an inch deep in the bottom of your cleaned sand bucket...layer cookies, pudding, cool whip and keep repeating until your to the top. make sure your top layer is cookies so it looks like dirt. You can also push a few gummy worms down in the top to look like worms (optional) are coming out of it. Be sure to serve with the shovel!!! Best if served cold, but not good the 2nd day as the cookies will start to take on moisture.
