For comfort food with a touch of the exotic, this dhal is quite simple but soooo tasty and has become a staple of our diet.

2 tablespoons olive oil
2 garlic cloves, crushed
1 onion
1 teaspoon turmeric
1 teaspoon garam masala
1/4 teaspoon chili powder
1 teaspoon ground cumin
2 lbs canned chopped tomatoes
1 cup red lentil
1 tablespoon lemon juice
2 1/2 cups vegetable stock
1 1/4 cups coconut milk
1 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • In large saucepan, warm olive oil and add garlic and onion. Saute, stirring 2-3 minutes. Add turmeric, garam masala, chili powder, and cumin.
  • Stir in tomatoes, lentils, lemon juice, vegetable stock, coconut milk, and bring to a boil.
  • Reduce heat to low and simmer, uncovered, for 25-30 minutes or until lentils are tender.
  • Serve warm. You can garnish with lemon slices and cilantro if desired. Also good with naan bread.

FIJIAN DHAL SOUP

I developed this soup after going on a 2 month vacation in Fiji. For those of you who enjoy a somewhat spicy soup, this one is for you. If you want to make it really spicy add a little more cayenne pepper.

4 cups water
2 cups dry lentils
½ teaspoon fenugreek seeds
½ teaspoon mustard seed
10 cups water
2 tablespoons olive oil
6 cloves garlic, chopped
2 cups chopped onion
½ teaspoon crushed dried chile pepper
4 carrots, chopped
3 large stalks celery, chopped
1 teaspoon salt
½ teaspoon ground turmeric
1 teaspoon curry powder
2 tablespoons chicken bouillon powder
3 tablespoons soy sauce

Steps:

  • In a medium size stock pot add 4 cups water, dhal peas, fenugreek seeds, mustard seeds and soak for about 1 hour. When softened, drain and rinse well.
  • In a large stock pot, add 10 cups water and drained dhal pea mixture and bring to a boil. Reduce heat and simmer for about 1/2 hour or until peas are soft.
  • In a saute pan, add olive oil, garlic and onions and cook until lightly browned.
  • Add onion mixture, crushed chili pepper, carrots and celery to large stock pot. Cook for 15 minutes or until carrots are tender.
  • Puree soup in batches in a blender or food processor. Return to stock pot and add salt, turmeric, curry powder, chicken soup base and soy sauce. Simmer for another 5 minutes and then serve

This is a hearty soup of yellow lentils and sweet potatoes. Adjust the seasoning as you like with the jalapeno, and garnish with your choice of cilantro or green onions.

1 ½ cups dry yellow lentils
2 ½ cups water
¼ teaspoon ground turmeric
1 sweet potato, peeled and cut into 1-inch cubes
2 tablespoons vegetable oil, divided
1 onion, finely chopped
1 tomato, finely chopped
3 fresh jalapeno peppers, seeded and finely diced
salt and freshly ground black pepper to taste
chopped fresh cilantro, for garnish

Steps:

  • Rinse lentils under running water; drain. Place lentils, 2 1/2 cups water, and turmeric in a medium pot, and bring to a boil. Cover, reduce heat, and cook until lentils are tender, about 30 minutes.
  • Meanwhile, place cubed sweet potato in a steamer over 1 inch of boiling water. Cover and cook until tender but still firm, about 15 minutes (time may vary depending on size of potato pieces). Once tender, mash sweet potato and lentils together; set aside.
  • Heat the oil in a skillet over medium heat, and cook the onion until lightly browned. Stir in tomato, jalapenos, salt, and pepper, and continue cooking another 3 to 5 minutes. Place lentils, vegetables, and potatoes in a stockpot over medium heat. Stir in water as needed to attain desired consistency. Serve warm with cilantro or green onions.

2 cups dried split yellow peas
12 cups water
4 tablespoons ghee
1 -2 chili pepper, minced
1 teaspoon cumin seed
1 1/2 medium onions, diced
8 garlic cloves, thinly sliced
1 1/2 teaspoons turmeric
salt
cilantro, chopped for garnish

Steps:

  • Rinse split peas and place in a pot with the water.
  • Bring to a boil and simmer for 30 minutes, skim occasionally.
  • Heat the ghee in a frying pan, brown the chili and cumin seeds, then ad onion and garlic.
  • Saute until onions are golden brown on the edges then add turmeric.
  • Add spicy butter mixture to split peas, simmer for about 1 hour.
  • Season with salt to taste.
  • If the soup appears to be too thick, add more water for a medium-thick consistency.
  • Fold in the cilantro leaves before serving.
  • Serve hot.
