SIMPLE PUFF PASTRY APPLE DESSERT

These are easy to make and really tasty. I just made another batch and found that I like them even better using brown sugar. I also had to add 2 tsp of flour as a thickener to this batch because the apples released a lot of juice.

9 puff pastry, squares (5x5)
5 apples, peeled, cored and sliced into wedges
1 teaspoon lemon juice
4 tablespoons butter
1 teaspoon cinnamon
1/3 cup brown sugar
4 tablespoons cream (you can use half and half)
3 tablespoons turbinado sugar

Steps:

  • 1. Prepare apples. I peel them and then use a corer/slicer that gives you 8 wedges. Cut each wedge into 3 pieces. Place cut apples in a bowl of water with the lemon or lime juice as you cut it so it won't discolor. When you are done cutting all apples, drain them well.
  • 2. In a very large skillet, melt the butter over a low/medium heat and toss in the apples.
  • 3. Sprinkle with cinnamon and sugar. I use golden delicious apples (NOT red delicious, which will turn to mush) Cortlands are really good too. If you use a tart apple, like granny smith, you will need to increase the sugar to 1/2-2/3 cups.
  • 4. Cook the apples until they are a little soft, but not cooked to mush. Cool for 5 minutes.
  • 5. Fill the 5x5 inch puff pastry squares & close in a triangular shape, pinching the edges well all around. Place on a baking sheet.
  • 6. Brush cream on each one & sprinkle with raw sugar.
  • 7. Place in preheated 400 degree oven until nicely browned. It usually takes about 20 minutes, but watch after 15 minutes, so that they don't burn. I have found that they bake best on the middle shelf. The tops burn on the top shelf and the bottoms burn on the bottom shelf, so bake in two batches if you have to.

My failed attempt to make a triple-layer strawberry malt mouse resulted in this scrumptious dessert. I don't use puff pastry often, but it was simple to work with. My husband declared it one of the best desserts ever.

1 package (17.3 ounces) frozen puff pastry
5 cups sliced fresh strawberries, divided
6 ounces white baking chocolate, chopped
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla extract
1 cup confectioners' sugar
1/3 cup malted milk powder
2 cups heavy whipping cream, whipped
Strawberry syrup, optional

Steps:

  • Thaw one puff pastry sheet (save remaining sheet for another use). Unfold pastry; cut lengthwise into three 3-in.-wide strips. Cut each strip into thirds, making nine squares. , Place 1 in. apart on ungreased baking sheets. Bake at 400° for 11-13 minutes or until golden brown. Remove to wire racks to cool., Place 2-1/2 cups strawberries in a blender; cover and puree; set aside. In a large microwave-safe bowl, melt white chocolate; stir until smooth. Cool slightly. Add cream cheese and vanilla; beat until smooth. Beat in the confectioners' sugar and malted milk powder until smooth. Stir in the puree. Fold in whipped cream., Split pastry squares in half horizontally. Line an ungreased 13-in. x 9-in. dish with bottom pastry halves, cut side up; spread with 3-1/2 cups strawberry cream. Top with 1 cup of sliced berries. Cover with pastry tops, cut side down. , Spread with remaining strawberry cream. Sprinkle with remaining berries. Drizzle with strawberry syrup if desired. Refrigerate leftovers. ,

1 cup water
1/2 cup butter (1 stick)
1 cup flour
1/2 cup sugar
4 eggs
1 teaspoon vanilla

Steps:

  • 1. Bring the water to a boil in a large pot over the stove. (You'll be adding the rest of the ingredients to this pot.).
  • 2. Add the butter and allow it to melt completely.
  • 3. Turn off heat and mix in flour and sugar, followed by eggs and vanilla.
  • 4. Transfer dough into pastry bag (or plastic sandwich bag with 1/4 inch cut off bottom corner).
  • 5. Squeeze dough onto well greased cookie sheet. Form thick lines or dots.
  • 6. Bake 20-25 minutes at 395 degrees. Watch for the top to tan. They should be light brown for the best texture.
  • 7. Wait to cool before filling and/or frosting.

1 ready-to-bake puff pastry sheet (1/2 of 17.3 oz. pkg.)
2 tsp. cinnamon sugar
1-1/4 cups half-and-half
1 pkg. (3.4 oz.) JELL-O Cheesecake Flavor Instant Pudding
1 cup thawed COOL WHIP LITE Whipped Topping
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
1/2 cup fresh raspberries

Steps:

  • THAW pastry sheet according to package instructions.
  • PREHEAT oven to 400ºF.
  • UNFOLD pastry sheet on floured surface and slice along the seams to make three equal sized sections. Place on two baking sheets lined with parchment paper or silicone baking sheets. Sprinkle cinnamon sugar over the tops of two of the pastry sheet sections.
  • BAKE 15 or until a golden brown. Move to wire racks and cool completely.
  • BEAT pudding mix and half-and-half in medium bowl with whisk for 2 minutes. Fold in COOL WHIP. Refrigerate until ready to use, at least 5 minutes.
  • SPLIT each pastry into two layers so you have six layers in all. Spread pudding mixture on one layer and top with berries. Repeat layers and continue with second dessert, making sure the two sugared layers are on top.
  • GARNISH with any excess pudding or COOL WHIP and berries.
  • TIP: Refrigerate for one hour (or up to four) and use a serrated knife for easier slicing.

1 package puff pastry, thawed
1 large goat cheese log, softened
¼ cup maple syrup
honey crystal, optional
pecan, or walnut, in pieces
1 egg
1 tablespoon water
turbinado sugar, for topping

Steps:

  • Remove 1 sheet of puff pastry from the package from the freezer and goat cheese log from the refrigerator. Allow to thaw for 25 minutes.
  • Preheat your oven to 400°F. Line your baking sheet with parchment paper. Set aside.
  • Unwrap pastry dough, place between two sheets of parchment paper and roll with a rolling pin until it is a 12" by 12" square.
  • Lather on goat cheese as you see above, then drizzle your honey, sprinkle on your crystals, and finish with your pecans or walnut pieces.
  • Cut into 8 1" strips, then, fold each strip in half, stretch it out slightly then twist to make your sticks.
  • Repeat 7 more times.
  • Combine your egg and water to make a wash. Using a brush, lightly coat the pastry dough then sprinkle over with the turbinado sugar.
  • Bake for 20 minutes.
  • Remove from the oven, allow to set for 3 minutes.
  • Serve warm.
