1 cup light corn syrup
1 cup white sugar
4 eggs
1 ¼ cups chocolate chips
1 cup chopped pecans
½ cup butter, melted
2 tablespoons bourbon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie plate.
  • Beat corn syrup, white sugar, and eggs together in a bowl using an electric mixer on low speed until well blended; stir in chocolate chips, pecans, butter, bourbon, and vanilla extract. Pour mixture into the prepared pie crust.
  • Bake in the preheated oven until set, 45 to 50 minutes.

2 cups graham cracker crumbs
⅓ cup butter, melted
16 oz cream cheese, at room temperature
¾ cup sugar
¼ cup milk
½ cup sour cream
2 tablespoons flour
3 teaspoons bourbon whiskey, divided
2 eggs
1 cup dark brown sugar
¼ cup cornstarch
½ teaspoon salt
4 egg yolks
⅔ cup maple syrup, or dark corn syrup
½ cup cream, warm to the touch
4 tablespoons butter, cold
2 cups roasted pecan, chopped
whole roasted pecan, to serve

Steps:

  • Preheat oven to 325°F (170°C).
  • In a bowl, combine the graham cracker crumbs and melted butter. Stir to combine.
  • Pour the mixture into a 9-inch (23 cm) springform pan and press it evenly into the bottom and halfway up the sides. Transfer to the refrigerator to chill.
  • In a large bowl add the cream cheese, sugar, and milk. With a hand mixer, beat until fluffy and fully incorporated.
  • Add in the sour cream, flour, 2 teaspoons of the bourbon, and the two eggs and gently continue to mix until the cream cheese filling is smooth.
  • Pour the mixture into the springform pan with the graham cracker crust and bake for 1 hour, or until the cheesecake no longer jiggles.
  • While the cheesecake is cooking, prepare the stove-top pecan pie filling.
  • In a bowl combine the brown sugar, cornstarch, and salt, stir together and pour into a medium saucepan on low heat.
  • Pour in the egg yolks, maple syrup, and warm cream and whisk until smooth.
  • Cook on low heat until the mixture thickens like a pudding, 5-10 minutes. Remove from the heat.
  • Stir in the cold butter and the final teaspoon of bourbon and whisk until fully emulsified. The pudding-like mixture should be around room temperature.
  • Fold in the roasted, chopped pecans and then pour the mixture over the cooked cheesecake and spread it out as an even layer.
  • If you like, sprinkle with extra chopped pecans or garnish with whole pecans.
  • Let the cheesecake chill in the refrigerator until completely set.
  • Slice and serve cold or at room temperature.
  • Enjoy!

3/4 cup brown sugar, packed
3/4 cup light corn syrup

3/4 cup good quality chocolate chips
1 1/4 cups toasted pecans, shelled & chopped in half if desired

Steps:

  • Preheat oven to 350 degrees.
  • Prep pie crust according to directions, either refrigerated, or from scratch using a deep dish pie pan.
  • In a large mixing bowl, on medium speed with whisk attachment, whip butter, sugars, corn syrup, eggs, vanilla and bourbon together until frothy.
  • Remove bowl from mixer and fold in chocolate chips & pecans. Blend well by hand.
  • Pour into prepared pie crust and bake 50-60 minutes or unti loset.

The Kentucky Derby is a two-minute horse race, but its cultural impacts are long-lasting, including a rich culinary tradition of mint juleps, hot browns and Derby pie. Only Kern's Kitchen Inc. can make a true "Derby-Pie" - the creators of the dessert trademarked the term before partnering with the Kentucky Derby Festival - but while the naming practices are sticky, the concept is universal: a chocolate-chip and walnut-laden batter baked in a pie crust. This version is adapted from author ZZ Packer, who shared her great-aunt's recipe. Many versions exist - some spike the batter with bourbon; others swap in varying nuts or crown the pie with whipped cream - but Fannie Lou's is easy to assemble, and makes a lasting impression.

1 unbaked 9-inch pie crust (see recipe)
4 tablespoons butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup dark brown sugar
1/2 cup flour
3/4 cup chopped walnuts

Steps:

  • Heat the oven to 350 degrees. Transfer the crust to a pie plate and prick the bottom with a fork. Cover lightly with a sheet of foil, pressing it gently into the crust and making sure the edges are covered. Place weights (metal pie weights or dried beans) on the foil to weigh down the bottom and hold up the sides of the crust. Bake for 10 minutes, then remove foil. Continue baking until the crust is firm and has lost its sheen but is not browned, about 5 more minutes. Set aside.
  • In a medium bowl, whisk the butter, eggs and vanilla extract. Add the brown sugar and flour and stir until thoroughly blended. Using a rubber spatula, fold in the walnuts and chocolate chips.
  • Pour the batter into the crust. Bake until puffed and golden brown, about 30 minutes. Remove from the heat and place on a rack to cool. Serve warm.

1 (9 inch) store-bought pie crust, unbaked
3 tablespoons bourbon whiskey
¾ teaspoon instant coffee granules
¾ cup chopped pecans
¾ cup white sugar
3 eggs
¾ cup white corn syrup
6 tablespoons butter, melted
1 ½ teaspoons vanilla extract
¾ cup semisweet chocolate chips

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Press pie crust into a 9-inch pie plate. Prick the bottom of the crust with a fork.
  • Bake pie crust in the preheated oven until it looks dry, 4 to 5 minutes. Let cool. Reduce oven temperature to 350 degrees F (175 degrees C).
  • Pour bourbon whiskey into a small pot; heat over very low heat. Stir in instant coffee until dissolved. Stir in pecans.

1 1/2 cups pecans, chopped
1 cup semi-sweet chocolate chips
1 cup dark corn syrup
1/2 cup sugar
1/2 cup dark brown sugar, firmly packed
1/4 cup water
4 large eggs
1/4 cup butter, melted
2 teaspoons cornmeal
2 teaspoons vanilla extract
1/2 teaspoon salt

Steps:

  • Preheat oven to 325 degrees.
  • Fit piecrust into a 9" deep-dish pie plate.
  • Combine corn syrup, sugar, brown sugar and water in large saucepan and bring to a boil over medium heat.
  • Cook, stirring constantly, for 3 minutes.
  • Whisk together eggs, butter, cornmeal, vanilla and salt.
  • Gradually add in 1/4 of the corn syrup mixture.
  • Whisk in remaining corn syrup mixture.
  • Place pecans and chocolate chips on pie crust.
  • Pour filling over pecans and chocolate chips.
  • Cover rim of pie plate with foil to keep the edge of the crust from over-cooking.
  • Bake for 50 minutes.
  • Let cool before slicing.

3/4 c sugar
1/8 tsp salt
1 egg yolk
3/4 c regular white milk
1 9 in., pie shell, baked
1 pkg unsweetened bakers chocolate squares
1 pt heavy whipping cream
1 tsp vanilla extract
1 can(s) carnation evaporated milk

Steps:

  • 1. Put 1 cup evaporated milk in bowl, set in freezer until ice crystals form/ appear on sides of bowl,beat until whipped and almost doubles in size in the bowl beat in 1 tsp. vanilla extract, then place back in freezer to keep chilled until later.
  • 2. In a double boiler pot, combine 1 package of unflavored gelatin, the 3/4 c. sugar, salt(1/8tsp.), egg yolk,and regular white milk,simmer in this double boiler while stirring in and melting 3squares(reserve 1 square for later) bakers unsweetened chocolate, stirring occasionally. 1/2 cup chopped toasted pecans
1 cup 6 oz. semisweet chocolate morsels
1 cup dark corn syrup
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/4 cup bourbon or water
4 batch large eggs
1/4 cup butter, melted
2 teaspoons plain white cornmeal
2 teaspoons vanilla extract
1/2 teaspoon table salt

Steps:

  • Preheat oven to 325 degrees. Fit piecrust into a 9-inch deep-dish pie plate according to package directions; fold edges under, and crimp. Sprinkle pecans and chocolate evenly onto bottom of piecrust.
  • Stir together corn syrup and next 3 ingredients in a large saucepan, and bring to a boil over medium heat. Cook, stirring constantly, 3 minutes. Remove from heat.
  • Whisk together eggs and next 4 ingredients. Gradually whisk one-fourth of hot corn syrup mixture into egg mixture; add to remaining hot corn syrup mixture, whisking constantly. Pour filling into prepared piecrust.
  • Bake at 325° for 55 minutes or until set; cool pie completely on a wire rack (about one hour).

4 eggs, lightly beaten
2 c sugar
12 oz package semisweet chocolate chips, melted
1 c self-rising flour, sifted
1/2 lb butter, melted (2 sticks)
2 tsp vanilla
2 c pecans, chopped (i buy these from trader joe's)
2 9 inch unbaked deep-dish (a must) pie shells (or 3 regular 9 inch unbaked pie shells)

Steps:

  • 1. Preheat your oven to 350 degrees F.
  • 2. Mix together the eggs, sugar and melted chocolate.
  • 3. Add the flour and mix it all together; stir in the remaining ingredients (expect for the pie shells!).
  • 4. Spread the mixture into the pie shells. Bake for about 30 minutes. Take the pie out and let it set for a while. If the chocolate doesn't seem to come together firm enough for cutting, bake it for up to an additional 10 minutes (might want to put foil around pie crust edges). Serve warm with some ice cream. This pie does freeze well.

Derby Day is the First Saturday of May. I was perusing through some of my cookbooks and I'm not sure about you, but I tuck handwritten recipes I want to keep inside my cookbooks - I know, not the most organized method of storage - perhaps I'll work on fixing that for 2012. Any way - I'm posting this recipe that I found stuck in a cookbook, that was written down by my Granny. It's actually a recipe that my Mom got from a chef who worked at a restaurant in the Doctors Office Building (corner of Floyd & Liberty in downtown Louisville). More info below.

1/2 cup(s) flour
2 - eggs
1 stick(s) butter, melted and cooled
1 cup(s) broken pecans or chopped walnuts
1 cup(s) semi-sweet chocolate chips

1 - unbaked pie shell (single crust)

Steps:

  • Fit pie crust into 9-inch pie plate. Preheat oven to 325°F. There are some folks who would prick the crust and partially bake it to prevent a soggy crust. I think doing this depends on your weather and if your pie crusts tend to get soggy while baking.
  • Mix sugar and flour together. Add eggs, butter, nuts, chocolate chips and vanilla. Stir until blended. Pour into crust-lined pie plate.
  • Bake 1 hour at 325°F. Test for doneness with a toothpick - it should show no more than dry crumbs.
  • Variation: add 2 Tbsp Bourbon to pie filling while mixing and continue as directed. This one doubles easily, too, but I tend to mix the fillings separately to make sure the ingredients stay evenly divided on each pie.

Maybe he worked for them back in the day - I don't know, I was young at the time. I just know it is one "de-lish" pie. SO - I've called it Derby Day Celebration Pie to keep in the theme of things. Each month our power company features a recipe and it comes in with the bill. This was the recipe this month and oh my goodness this is so so good and very easy. The recipe only made one pie and a deep dish at that. Well I didn't have a deep dish crust but I did have 2 regular so I made 1 1/2 of the recipe and it worked great....

1/2 c flour
1 c sugar
1 stick butter (melted)
1 tsp vanilla
1 eg well beaten
1 c broken pecans
1/2 to 3/4 cup choco chips
1 unbaked pie crust

Steps:

  • pour melted butter over flour and sugar add vanilla dn egg then add chcolate chips & pecans. Mix and pour into pie crust 350 for 45 minutes

This is an easy, one-bowl recipe and is classic KY Derby fare. I met my husband at a KY Derby party in Louisville, KY so have a particular fondness for the flavor AND the memory!

1 c sugar
1/2 c flour
2 eggs, slightly beaten
1 stick butter or margarine, melted
1 c chocolate chips, semi-sweet
1 c pecans, in pieces
1 tsp vanilla extract

Steps:

  • 1. Mix sugar and flour. Add all other ingredients to dry ingredients and blend by hand. Pour into an unbaked pie shell. Bake one hour at 325 degrees.

1 cup sugar
1 stick of butter
1/2 cup chocolate chips
1 cup light corn syrup
1 cup pecans
4 eggs
1 tsp vanilla

Steps:

  • Spread chocolate chips evenly along the bottom of the pie pan. Mix melted butter, sugar and corn syrup. Add vanilla. Lightly beat the 4 eggs. Pour eggs into mixture and beat 1-2 minutes with mixer. Pour in pecans, and lightly mix until pecans are wet. Pour into pie pan. Shake pie pan until pecans rise. Bake at 350 degrees for 1 hour OR until the filling doesn’t sway back and forth like liquid when you shake it (it should look more like jello when you shake the pie pan). I found that it cooks best on the middle rack.
