DELUXE MARSHMALLOW BROWNIES

I found this recipe in a garden club cookbook many years ago. I always serve these at Fourth of July picnics and at church suppers.-Martha Stine, Johnstown, Pennsylvania

Number Of Ingredients 16

1 cup butter, cubed
4 ounces unsweetened chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 cup chopped walnuts or pecans
TOPPING:
1/2 cup butter, cubed
4 ounces unsweetened chocolate, coarsely chopped
1 cup sugar
1 can (5 ounces) evaporated milk
3-3/4 cups confectioners' sugar
3 teaspoons vanilla extract
4 cups miniature marshmallows

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Cool. In a large bowl, combine the sugar, eggs, vanilla and melted chocolate. Combine flour and baking powder; add to chocolate mixture and beat just until blended. Fold in nuts. , Spread into a greased 15x10x1-in. baking pan. Bake at 325° for 25-30 minutes or until a toothpick inserted in the center comes out clean., Meanwhile, in a large heavy saucepan, melt butter and chocolate. Stir in sugar and milk. Cook over low heat for 20 minutes, stirring frequently. Gradually whisk in confectioners' sugar until smooth. Remove from the heat; stir in vanilla. , Place marshmallows over warm brownies; pour warm topping over marshmallows. Cool on a wire rack for at least 2 hours before cutting.

Number Of Ingredients 8

2/3 cup butter or 2/3 cup margarine, melted
1 1/3 cups sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup chopped toasted walnuts (optional)

Steps:

  • Heat oven to 350 degrees.
  • Grease an 8" square baking pan with non-stick cooking spray.
  • In medium bowl stir together butter, sugar, eggs and vanilla.
  • Add flour, cocoa and salt stirring just until blended.
  • Mix in half of the walnuts, if desired.
  • Spread mixture and sprinkle with remaining walnuts.
  • Bake about 30 minutes, until top appears dry and center is set.
  • Cool brownies in pan on wire rack.
  • To wrap, cut brownies into squares.
  • NOTE: To toast walnuts, spread on baking sheet.
  • Bake in 350 degrees oven stirring occasionally, about 10 minutes or until lightly browned.
  • Remove from oven and cool completely.
  • My dh has also added chocolate chips to the batter with WONDERFUL results!

2/3 cup butter or 2/3 cup margarine
5 ounces unsweetened chocolate, cut into pieces
1 3/4 cups sugar
2 teaspoons vanilla
3 eggs
1 cup flour
1 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat butter and unsweetened chocolate over low heat, stirring constantly, until melted; cool slightly.
  • Beat in sugar, vanilla and eggs in a 3 quart bowl on high speed 5 minutes.
  • Beat in chocolate mixture on low speed.
  • Add flour; beat just until blended.
  • Stir in nuts.
  • Spread in greased 9x9x2" square pan.
  • Bake just until brownies begin to pull away from sides of pan, 40 to 45 minutes.
  • Cool.
  • Cut into about 2" squares.

2-1/4 cups sugar
5 eggs, lightly beaten
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon salt
1-1/2 cups chopped pecans
FROSTING:
1 cup sugar
1/4 cup butter, cubed
1/4 cup milk
1/2 cup semisweet chocolate chips
1/2 cup miniature marshmallows

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Combine dry ingredients; gradually add to creamed mixture. Stir in pecans. , Spread in a greased 13-in. x 9-in. baking pan. Bake at 325° for 30-35 minutes or until a toothpick comes out with moist crumbs. Cool on a wire rack., In a small saucepan, combine the sugar, butter and milk; cook and stir over low heat until sugar is dissolved. Remove from the heat; stir in chips and marshmallows until melted. Chill until mixture reaches room temperature. In a large bowl, beat until frosting reaches spreading consistency. Spread over brownies.

1 cup(s) peanut butter chips
- fudge brownie frosting (below)
FOR FUDGE BROWNIE FROSTING
3 tablespoon(s) butter, softened
3 tablespoon(s) cocoa
1 cup(s) powdered sugar
1 tablespoon(s) milk
3/4 teaspoon(s) vanilla

Steps:

  • Heat oven to 350. Grease 13x9 inch baking pan. Beat butter, sugar, eggs, and vanilla in large bowl until fluffy. Stir together flour, cocoa, and baking soda; add alternately with syrup to butter mixture, beating well after each addition. Stir in peanut butter chips. Spread batter in prepared pan.
  • Bake 40-45 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack.
  • Prepare Fudge Brownie Frosting: Beat butter and cocoa in small bowl until well blended; gradually add powdered sugar alternately with combined milk and vanilla, beating until smooth and of spreading consistency. Add additional milk, 1/2 teaspoon at a time, if needed. Spread frosting over brownies. Cut into bars.
