1/4 cup salsa (I use hot)
3 tablespoons mayonnaise
3 green onions, thinly sliced
1 lb sliced deli turkey
8 slices sourdough bread or 8 slices any sandwich bread
4 slices monterey jack pepper cheese
sliced jalapeno pepper
4 tablespoons butter or 4 tablespoons margarine

Steps:

  • In small bowl, combine the salsa, mayo, and green onions; mix well.
  • Evenly divide the turkey over 4 slices of bread, then place a slice of cheese over each.
  • Spread salsa mixture evenly over the cheese, then distribute sliced jalapeno peppers over the salsa mixture; top with remaining bread.
  • In a large skillet, melt 2 T butter over low heat.
  • Place the sandwiches in the skillet and cook for 2-3 minutes.
  • Add more butter if needed, turn the sandwiches over and cook another 2-3 minutes, or until cheese is melted and bread is golden brown.
  • Serve immediately.

4 slices sourdough bread
1/4 cup canned chopped green chiles
1/4 pound thinly sliced deli turkey
1/4 cup shredded Colby-Monterey Jack cheese
1 tablespoon butter, softened

Steps:

  • Spread mayonnaise over two slices of bread. Layer with green chiles, turkey and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side.

I am emptying out my freezer that I have lots of cooked meats in and made this very simple sandwich tonight that the kids loved(so did I). I used leftover sliced turkey from when I cooked a turkey and put some in the freezer for sandwiches and casseroles.

6 hoagie rolls
12 slices turkey
12 slices bacon, cooked
1 1/2 cups monterey jack cheese, shredded
1 1/2 cups sharp cheddar cheese, shredded
mayonnaise (optional)

Steps:

  • Cut out a v shape in the top of each hoagie roll and save the piece that you cut out.
  • Press down inside the roll to make it look like a canoe.
  • Put a couple of slices of turkey in the bottom of each.
  • Top with 2 slices of bacon.
  • Sprinkle or lay monterey jack cheese on top.
  • Sprinkle some sharp cheddar on each.
  • Put the top back on each hoagie and bake at 350 for about 10-15 minutes.
  • When done I take the top off and add a little mayonnaise.

We often on the weekends get some fresh deli meats, cheeses and fresh rolls. Its a great meal. But the nest day no-one wants the leftovers. But, this they like! This is so simple! The next day this is what we do. The measurements are not exact since it depends upon how thick/large the slices are and how large the rolls are. I like fluffy water rolls or soft rolls for this. This is the simple version which I like best but you can add tomato, lettuce, pickles etc...

4 slices roast deli turkey
1 tablespoon mayonnaise
1 roll

Steps:

  • 1. Slice the roll in half then very lightly brown in the toaster oven ( set the oven on "toast" and watch).
  • 2. Place one slice of swiss on top of each roll half then put back in the toaster oven. Toast until the cheese is just melting and bubbly.
  • 3. Remove the halves and fold 2 slices of turkey onto each side.
  • 4. Top turkey with mayo and any other fixings. Place the two halves together to form a sandwich.
  • 5. Squash down sandwich and cut into 2 pieces.

I was bored so I decided to make a healthier version of a turkey melt that I liked from some frozen meal thingy :3

1 slice whole wheat bread (I use Trader Joe's)
1 part-skim mozzarella string cheese (Same as above ^.^)
1 slice smoked turkey breast (Applegate Farms)
paprika or other spices

Steps:

  • Toast bread till crispy and delightful in the toaster.
  • Pull apart strands of cheese and lay over toasted whole wheat bread.
  • Lay slice of turkey on top of the cheese bed.
  • Put your broiler up to high and place the sandwich on the rack near the top of the oven.
  • Broil for around 5 minutes or until the cheese is golden bubbly.
  • Add paprika or other random spice or seasoning of your choice and enjoy ^.^.

This is a delicious recipe to use up any leftover turkey from the holidays! You can also make this using deli-sliced turkey. I have use provolone cheese in place of the mozza cheese. You can prepare these melts hours in advance, cover with plastic wrap and refrigerate until ready to bake.

2 ripe avocados, peeled and mashed
2 -3 tablespoons mayonnaise
1 teaspoon garlic powder (or use a small amount of fresh minced garlic)
salt
black pepper
8 slices thick white bread or 8 slices whole wheat bread
1 lb thinly sliced turkey breast
8 slices tomatoes (sliced thin)
8 slices red onion rings, thinly sliced (can use more)
8 -12 slices cooked bacon
4 -8 slices mozzarella cheese (or to taste)
softened butter

Steps:

  • In a bowl stir together the avacado with mayonnaise and garlic until well combined; season lightly with salt and pepper to taste.
  • Divide and spread the mixture onto one side of the 4 bread slices.
  • Top evenly with turkey slices, 1-2 tomato slices, 1-2 onion slices/rings, 2-3 bacon slices and lastly the mozza cheese slices (1 or 2 slices).
  • Top with remaining bread slices.
  • Carefully spread soft butter onto the outside of each sandwich.
  • Place the buttered sandwiches on a baking sheet, then place a second baking sheet on top of the sandwiches.
  • Bake at 400 degrees for about 20 minutes or until golden.
  • Slice in half or into fourths.
  • Delicious!
