1 sheet refrigerated pie crust
1-1/4 pounds tomatoes (5 large), cut into 1/2-inch slices, seeded
1/2 cup thinly sliced green onions
2 tablespoons minced fresh basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup reduced-fat mayonnaise
1/2 cup shredded reduced-fat cheddar cheese
2 bacon strips, cooked and crumbled
2 tablespoons shredded Parmesan cheese

Steps:

  • Unroll crust into a 9-in. pie plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 10-15 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., Reduce oven setting to 350°. Place half of the tomatoes in crust. Top with onions and remaining tomatoes. Sprinkle with basil, salt and pepper. Combine mayonnaise and cheddar cheese; spread over tomatoes, leaving 1-1/2 in. around the edge. Sprinkle with bacon and Parmesan cheese. , Bake until tomatoes are tender, 30-35 minutes. Let stand 10 minutes before cutting.

If you have never had tomato pie, this is the one to try. It is easy to make and so very delicious. The recipe came from starting a regular tomato pie until the light bulb came on. It said to me "you have cream cheese with chives and onions in the refrig.". The rest is history. Really, try it and enjoy!

Number Of Ingredients 8

1 deep dish pie crust, i used pillsbury
4-6 tomatoes, fresh off the vine:)
salt and pepper to taste
8 oz philadelphia cream cheese with real chives and crisp onions
6 oz mayo or miracle whip
6 oz shredded cheddar cheese, you can use whatever is in the frig.; we like cheddar
6 slice cooked bacon, crumbled
6-8 fresh basil leafs

Steps:

  • 1. Bake pie crust according to package directions. Be sure to prick pie with a fork before baking.
  • 2. Slice tomatoes medium thick and set aside.
  • 3. After pie is done, arrange tomato slices into pie.
  • 4. Layer fresh basil over tomatoes.
  • 5. Combine cream cheese and mayo. Spread mixture over pie ingredients.
  • 6. Sprinkle shredded cheese on top of pie.
  • 7. Sprinkle with crumbled bacon.
  • 8. Bake about 22-24 minutes or until cheese has melted.
  • 9. Enjoy!
