So many mushroom soups - so much milk & cream! Well not this one! This soup is warming and very tasty. It can be Kosher if you like. You can substitute 1/2 the olive oil with butter if you like. I used about 1/2 cup reconstituted dried exotic mushrooms for flavor too.

4 tablespoons olive oil
1 onion, sliced thin
4 garlic cloves, minced
1 (10 ounce) package cremini mushrooms, sliced
1/2 cup dry white wine
2 tablespoons all-purpose flour
1 quart beef broth
salt
pepper

Steps:

  • Heat the oil in a 5 quart chef's pan or dutch oven. Add the onions, mushrooms and garlic and saute until soft and just beginning to brown. Turn up the burner to high and add the wine, scraping up any browned bits from the bottom of your pan and reduce for a minute or two until a bit creamy then add the flour, stir to coat the vegetables then add the Beef Broth while stirring. Bring up to a boil while stirring, the soup will thicken slightly (this is not a super thick soup) Then reduce heat and simmer for 10 minutes or so. Ladle a bit out to adjust the seasoning - some commercial broths can be salty so taste first. Then add your salt and pepper and enjoy! Bon Appetit!

2 tablespoons olive oil
2 medium sweet onions, finely diced
2 lbs fresh mushrooms, chopped
1/4 teaspoon salt
1/3 teaspoon black pepper
1 lb ground sirloin
1 large egg
1/3 cup plain breadcrumbs
1/2 teaspoon onion powder
4 cups beef broth
2 tablespoons butter
2 tablespoons flour, plus 1 t
1 cup milk
3/4 cup sour cream

Steps:

  • Warm olive oil in a large soup pot over medium heat.
  • Add onions, mushrooms, salt and 1/8 teaspoons pepper; sauté gently, stirring occasionally, for 10 to 12 minutes.
  • Meanwhile, combine ground sirloin, egg, bread crumbs, onion powder and another 1/8 teaspoons black pepper, mixing thoroughly.
  • Shape into meatballs ½ inch in diameter; add to pot with vegetables.
  • Pour in broth and bring to a gentle boil.
  • Reduce heat to low and simmer 30 to 40 minutes.
  • In a small pan, melt the butter; add flour and cook 1 minute, stirring, until thickened.
  • Add milk and cook, stirring constantly until thickened, about 2 minutes. Stir into soup.
  • Remove soup from heat and immediately ladle into bowls.
  • Top each serving with 1 tablespoons sour cream.

2 tablespoons butter
3/4 cup onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
1 1/2-2 cups fresh mushrooms, sliced
1/4 cup flour
1/4 teaspoon pepper
1/2 teaspoon salt
2 cups beef broth or 2 cups vegetable broth
1 cup half-and-half cream or 1 cup light cream
1 1/2 cups wild rice, cooked
1 teaspoon chervil or 1 teaspoon tarragon

Steps:

  • Begin cooking wild rice while preparing vegetables and other ingredients.
  • Meanwhile, in a big sauce pan, melt butter.
  • Add onion, celery and carrot. Cook for 3 minutes on medium-high heat.
  • Slightly reduce heat (low-med) and add mushrooms. Cook for 3 minutes.
  • Add flour, salt and pepper and cook for about 3 minutes or until mixture turns golden.

This mushroom soup is really simple, and makes a thick, creamy textured soup. Water can be added after cooking to make a thinner soup, or try adding cream if you like. I make this in a wok but you can use a stock pot, whichever you have available. Serve hot with toast.

4 cups fresh sliced mushrooms
1 onion, chopped
1 stalk celery, chopped
5 cups chicken broth
¼ cup uncooked white rice
3 tablespoons soy sauce
salt and pepper to taste

Steps:

  • Heat oil in a wok over medium heat, and saute mushrooms, onion, and celery or carrot in the oil for 10 minutes.
  • Add chicken or vegetable stock, rice, and soy sauce. Bring to a boil, and simmer for at least an hour.

My mother makes this soup all without measurements. The first time I tried this soup my knees went weak. Nothing beats the aromatic scent of the fresh thyme which always reminds me of cool nights in the fall when soup is just the right thing to warm your bones. I will try to put in, as accurate as possible measurements, but descriptives will be easier for me.

2 large portabella mushrooms
4 ounces white mushrooms (approx. 6 med. size)
1 cup vidalia onion (spanish or cooking onion is fine also)
2 cups chicken broth (approx)
1 cup half-and-half cream (approx)
4 tablespoons butter, margarine or 4 tablespoons oil
4 tablespoons flour
1 teaspoon dried thyme
1 teaspoon salt (to taste)
1 teaspoon pepper (to taste)
1 pinch cayenne pepper
2 tablespoons soya sauce

Steps:

  • Slice all the mushrooms and cut up slices into small pieces.
  • Chop onion.
  • On medium heat, melt butter (I prefer margarine), saute onion until transparent.
  • Add mushrooms, saute until soft.
  • Add in thyme, salt, pepper and cayenne (optional).
  • Add flour to mushroom mixture to create roue, stir in well, texture should be pasty but not gluey.
  • Add in chicken broth till covered but enough that it's not watery but still has a thickness to the broth, stir while pouring to give proper consistency.
  • Add in cream, and for a lighter version substitute with milk. Bring to a quick boil then reduce to simmer until thickened. Adjust seasoning to taste if necessary. Served great with a nice baguette for dunking! Enjoy!
  • Add in soya sauce, it nicely balances out the colour and flavour.

3 tbsp unsalted butter
1 shallot, minced
1/2 a sweet onion, cut into crescents.
1 small clove of garlic, minced
1 cup crimini mushrooms, roughly chopped
1 cup button mushrooms, roughly chopped
1/2 a cup shiitake or other wild mushroom.
1 cup white wine.
4 cups vegetable or chicken stock
Juice of 1 lemon.
1 green onion sliced into thin rounds.
pinch of thyme.
Salt and Pepper to taste.

Steps:

  • Melt butter in the bottom of a pot. Add shallot, onion slices and garlic to butter. Sauté on low heat until onions are golden. Add mushrooms. Toss until well coated with onions, butter, garlic and shallots. Add wine. Simmer until it has cooked down a bit, then add Chicken stock and lemon juice. Cook down until the mushrooms are cooked through and the stock has a lemon-mushroom taste, about 10 minutes (maybe). When soup is cooked down to your desired flavour strength, add green onion slices, thyme and salt and pepper to taste. When soup is finished, should be light and lemony, but with mushroom undertones. Should be thick, with a higher ratio of mushrooms to broth. This really depends on taste, as some may like it with more broth.

Originally from allrecipes.com, this is my version of a mushroom soup that tastes like the very popular cream of mushroom soup in the red and white label, but without the cream. Hope you like it as well.
