This goes back a long time, and I still make it to serve with a turkey dinner. It is one of my favorite cranberry recipes, and is always enjoyed by everyone. Serve this at your holiday dinner table and you will receive rave reviews! You can make this up to a week in advance.... this has the perfect balance of sweet and tart with the the right texture! No need to double the recipe this makes close to 6 cups, plan ahead the sauce needs to chill for 24 hours before using and you may omit the walnuts if desired

1 (20 ounce) can crushed pineapple in juice
2 (12 ounce) packages cranberries (fresh or frozen, preferably fresh)
1 1/4 cups sugar (can use more)
1 1/4 cups walnuts, chopped (optional)
1 tablespoon fresh lemon juice
1/4 teaspoon clove

Steps:

  • Drain the pineapple thoroughly in a fine sieve set over a large measuring cup (push the pineapple against the sieve to drain out any extra juice).
  • Add enough water to the measuring cup (with the juice in it) to make 2 cups liquid.
  • Place the liquid in a saucepan.
  • Add in cranberries and sugar.
  • Stir over medium heat until sugar dissolves and the mixture comes to a boil.
  • Continue to boil until most of the berries pop (you might want to keep a splatter screen or a lid over until the berries are finished popping) and the mixture is thick, stirring occasionally (about 10 minutes) remove from heat.
  • Add in drained pineapple, walnuts, lemon juice and cloves; mix until well combined.
  • Transfer to a bowl and cool to room temperature.
  • Cover and refrigerate for 24 hours.
  • Delicious!

½ cup white sugar
½ cup brown sugar
½ cup orange juice
½ cup water
¼ teaspoon ground cinnamon
1 (12 ounce) package fresh or frozen cranberries

Steps:

  • Place the sugars, orange juice, water, and cinnamon in a heavy saucepan, and stir to dissolve the sugar. Add the cranberries and bring the mixture to a boil. Cook over medium heat until the berries pop, about 10 minutes. Mash the mixture with a spoon to pop any unpopped berries and help thicken the sauce, if desired, and reduce heat to low and simmer until the sauce is the desired thickness, up to 10 more minutes.
  • Remove from the heat, pour the sauce into a bowl, and chill until serving time. Sauce will thicken as it cools.

1 large sweet crisp apple (braeburn or gala) diced chunky
1 twelve oz package fresh or frozen cranberries
1 cup apple cider
1/2 cup granulated sugar
1/2 tsp cinnamon
1/16 tsp nutmeg (2 seconds grated fresh with microplane)

Steps:

  • Cook all ingredients together for 10 minutes, over medium-high heat, stirring occasionally, until all cranberries "pop". Can be served warm, room-temperature or chilled.

I made this recently and it is fabulous, tangy with intense flavor! -- plan ahead the sauce needs to chill for a minimum of 2 hours before serving and may be made up to three days ahead -- the amounts listed will make about 5 cups, if desired you can cut all ingredients in half, minced orange peel may also be added, use 1 tablespoon for a double recipe :)

2 cups frozen cranberry juice concentrate, thawed
2/3 cup sugar, plus
2 tablespoons sugar (or use more or less sugar to taste)
2 (12 ounce) packages cranberries (fresh or froze)
1 cup dried cranberries
6 tablespoons orange marmalade
1/4 cup fresh orange juice
1/2 teaspoon allspice

Steps:

  • In a heavy saucepan combine cranberry juice concentrate and sugar; bring to a boil over high heat, stirring until sugar dissolves.
  • Add in the fresh and dried cranberries; cook until the dried berries begin to soften and the fresh berries begin to pop, stirring often (about 7 minutes).
  • Remove from heat and stir in the orange marmalade, orange juice and allspice; cool completely, cover and refrigerate until cold (about 2 hours).

4 bag(s) cranberries, fresh
3 medium granny smith apples
4 c sugar
2 c water

Steps:

  • 1. Wash and sort cranberries, removing any spoiled berries.
  • 2. Wash and core apples, and cut them into one-inch chunks.
  • 3. Place washed cranberries and apple chunks into a large soup kettle with 2 cups of water.
  • 4. Cover and bring to a boil; reduce heat to medium, just so that the berries continue to simmer gently; continue cooking with the lid on until berries pop and apples are tender, stirring FREQUENTLY to avoid sticking an scorching.
  • 5. Run the cooked berry mixture through a food mill or sieve to remove berry skins and apple peelings.
  • 6. Add the sugar to the hot cranberries, stirring till sugar is dissolved.
  • 7. Ladle into jars and cool to room temperature before storing in the refrigerator, chilling until ready to serve. A simply delicious complement to your Thanksgiving. dinner.
  • 8. Keeps in the refrigerator for several months. Keeps in the freezer for a couple of years, or more. YIELD: 2-3 quarts

1 cup water
1 cup sugar
1 (12 ounce) pkge. fresh cranberries
1 orange, peeled and pureed
1 apple, peeled, cored and diced
1 pear, peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • In a medium saucepan, boil warer and sugar until the sugar dissolves.
  • Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon and nutmeg.
  • Cover and simmer for 30 minutes, stirring occasionally, until the cranberries burst.
  • Remove from heat and let cool to room temperature.
