Roasted Delicata Squash with Hot Honey image

While I rarely cook with winter squash, I do make an exception for delicata squash because its flavor is milder and I don't have to peel it! If you haven't tried hot honey before, it's amazing on roasted vegetables and meats of all kinds.

¼ cup honey
1 tablespoon red wine vinegar
1 teaspoon red pepper flakes
1 teaspoon dried thyme
½ teaspoon smoked paprika
1 pinch salt
1 delicata squash
2 tablespoons extra-virgin olive oil, or to taste
½ teaspoon kosher salt

Steps:

  • Combine honey, vinegar, red pepper flakes, thyme, smoked paprika, and salt in a small saucepan. Bring to a boil. Remove from heat and let cool to room temperature so flavors infuse, about 30 minutes.
  • Meanwhile, preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Scrub delicata squash and pat dry. Cut into 1/2-inch rings. Scoop out seeds from the center of each ring. Toss rings with olive oil and arrange on the baking sheet. Season with 1/2 teaspoon salt.
  • Roast in the preheated oven, flipping halfway through, until golden brown, about 30 minutes. Drizzle hot honey over squash.

Delicata squash -- typically a sweeter winter squash -- is rendered more explosive in flavor thanks to the garlic and hot pepper jelly.

1/4 cup hot pepper jelly
3 tablespoons extra-virgin olive oil
1 garlic clove, minced
4 medium delicata squashes (about 3 pounds total), cut lengthwise into 1-inch-thick wedges, seeds discarded
2 teaspoons coarse salt
Freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Stir jelly, oil, and garlic in a small bowl. Place squashes in a large bowl; add jelly mixture and salt. Season with pepper, and toss.
  • Divide squashes between 2 rimmed baking sheets. Roast until squashes are tender and bottoms are golden brown, 30 to 35 minutes. Serve immediately.

1/2 cup maple syrup
1/4 cup fresh sage leaf, packed
2 1/2 lbs delicata squash
1 tablespoon olive oil
1/2 teaspoon salt

Steps:

  • Heat oven to 400 degrees.
  • Cut off squash ends, halve lengthwise, seeded and sliced into 1 inch half moons.
  • In a small saucepan, combine maple syrup and sage, bring to simmer, reduce heat to low, cover and cook 15 minutes, set aside, covered.
  • In a bowl, toss squash slices with olive oil and salt.
  • Transfer to a a foil lined baking sheet in a single layer, bake at 400 for 20 minutes.
  • Pour maple syrup mixture evenly on top of squash, bake 20 minutes more until squash is browned and tender.
