CINNAMON APPLESAUCE COOKIES

This is a healthier cookie but is still delicious! From one of my favourite cookbooks, "One Smart Cookie", by Julie Van Rosendaal. Dough needs an hour to chill before rolling out.

Number Of Ingredients 9

1/4 cup stick butter or 1/4 cup margarine, softened
1 1/4 cups packed brown sugar
1/4 cup applesauce
1 large egg
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • In a large bowl, beat margarine, brown sugar, applesauce and egg until smooth.
  • In a medium bowl, combine flour, baking powder, cinnamon and salt. Add to the applesauce mixture, stirring by hand just until you have a soft dough. Divide the dough in half, wrap each half in plastic and refrigerate for at least an hour or until well chilled.
  • When ready to bake, preheat oven to 375 degrees. Roll dough 1/8 inch thick between two sheets of waxed paper. Cut with a 2 1/2 inch cookie cutter or glass rim, and place 1 inch apart on a cookie sheet that has been lightly sprayed with nonstick spray.
  • Bake for 10 - 12 minutes, until edges are golden. Bake 5 minutes longer for darker golden, crispier cookies. Transfer to a wire rack to cool.

2 cups flour
1 cup whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1 cup butter, softened
1 1/2 cups packed brown sugar
2 eggs
1 cup applesauce, recipe follows
1 1/2 cups raisins
Powdered sugar, for garnish
6 apples, McIntosh preferred
1 cup water
1 tablespoon fresh lemon juice
1 teaspoon sugar
1/4 teaspoon cinnamon, optional

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, combine the dry ingredients and set aside.
  • In the bowl of a standing mixer, fitted with a paddle attachment, cream the butter. Add the brown sugar and continue creaming. Then add the eggs and applesauce mixing well. Gradually add the dry ingredients and raisins to make dough.
  • Drop by rounded tablespoons onto a greased cookie sheet (save those butter papers!) and bake until light golden brown, about 9 to13 minutes. The cookies do not brown very much. Sprinkle with powdered sugar.
  • Peel and core apples and cut into quarters. Place them in an enamel sauce pan with the water and lemon juice then bring to a boil then turn the heat down slightly and simmer 30 minutes to break them down and get them to thicken. Take off the heat and stir in the sugar and cinnamon, if using.

1 cup packed brown sugar
1 egg
¾ cup shortening
1 cup applesauce
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup chopped walnuts
1 cup raisins

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon clove
1 cup margarine or 1 cup butter, softened
1 1/2 cups brown sugar
1 1/2 cups unsweetened applesauce

Steps:

  • Stir together first five ingredients; set aside.
  • Cream butter and sugar until light and fluffy. Beat in applesauce; mixture will look curdled.
  • Beat in flour mixture until well-blended.
  • Drop by teaspoonsful on greased cookie sheets.
  • Bake in preheated 375 degree oven for 12-15 minutes or until browned around edges and top springs back when lightly pressed.
  • Cool on wire racks.

1 c raisins (optional)
2/3 c applesauce
2/3 c chopped nuts
1 egg
2 Tbsp cinnamon
1/2 c butter, softened
1/4 c all purpose flour

Steps:

  • 1. In a large bowl, mix brown sugar, butter and egg. Stir in remaining ingredients.
  • 2. Drop dough by teaspoonfuls onto an ungreased baking sheet
  • 3. Bake in a preheated 375-degree oven for about 10-12 minutes or until brown. Immediately remove from oven and from cookie sheet. Cool slightly May frost if desired.
