Waffled Leftover Thanksgiving Brunch image

Invite friends and family back over to re-celebrate the holidays with this unique brunch made from leftovers. The stuffing works perfectly in waffle form, topped with all the trimmings.

Yield 4 waffles

Number Of Ingredients 5

4 1/2 cups crumbled leftover stuffing
1/4 cup chopped fresh parsley
2 large eggs, beaten
Vegetable oil, for brushing waffle iron
Sliced leftover turkey, gravy and cranberry sauce, for serving

Steps:

  • Preheat a waffle iron to medium-high. Combine the stuffing, parsley and eggs. Generously brush the top and bottom of the waffle iron with oil. Evenly and firmly pack each section of the waffle iron full with the stuffing mixture. Close and cook until golden and the waffles can easily be lifted out of the waffle iron, 4 to 6 minutes.
  • Meanwhile, heat the gravy in a small saucepan. Once the waffles are ready, top each with as much turkey as you want and close the waffle iron. Cook until the turkey is warmed through, 2 to 3 minutes.
  • Transfer the waffles to 4 plates and top each with as much gravy and cranberry sauce as you'd like.

1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

2 cups flour
2 teaspoons baking powder
1 -2 cup milk
1 teaspoon vinegar
1/2 teaspoon salt
1 teaspoon vanilla

6 slices bacon, cooked (optional)
1 banana, sliced thin (optional)

Steps:

  • separate eggs
  • beat whites until stiff.
  • mix dry ingredients together
  • add vinegar to milk
  • put oil and egg yolks into flour add milk and vanilla.
  • stir in milk add enough to make batter
  • fold in whites
  • pour onto hot pam sprayed waffle iron.
  • if using bacon add in strips cross ways will cook around
  • cook until doe can freeze for later.

This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

2 egg whites
2 egg yolks
2 tablespoons grated lemon zest
1 teaspoon vanilla extract

6 tablespoons butter, melted

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Whisk the flour, baking powder, sugar, and salt together in a mixing bowl; set aside. Beat egg whites until foamy in a separate large glass or metal mixing bowl. Whisk the egg yolks, lemon zest, and vanilla extract together in a third bowl; whisk in the milk. Stir in the flour mixture until smooth. These waffles are just oozing with creamy sweetness with a nice pleasant hint of orange. If you love cinnamon rolls, I'm positive you will love these waffles. I found a wonderful recipe for Cinnamon Roll Waffles, tweaked it a little to add the orange flavor that we like and came up with this recipe. Adapted from Recipe Girl.

WAFFLES:
1 3/4 c all purpose flour
2 Tbsp sugar
1/2 Tbsp grated orange peel
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
2 c buttermilk
1/4 c canola oil
1 tsp orange extract
CINNAMON TOPPING
1/2 c butter, melted
3/4 c brown sugar, firmly packed
1/2 Tbsp ground cinnamon
CREAM CHEESE TOPPING
4 Tbsp butter, room temperature
2 oz cream cheese, room temperature
3/4 c powdered sugar
1/2 tsp orange extract

Steps:

  • 1. Preheat Waffle Iron. NOTE: The waffle iron I used is a Krups Belgian Waffle Iron. This recipe will make a lot more than 8 with a smaller waffle iron.
  • 2. In a medium bowl, whisk together flour, sugar, orange peel, baking powder, baking soda and salt; make a well in the center of mixture; set aside.
  • 3. In a separate bowl, whisk together eggs, buttermilk, oil and orange extract. Pour this mixture into bowl with dry ingredients. Stir just until moistened; batter will be slighly lumpy.
  • 4. Spray waffle iron with nonstick spray (I used PAM). Pour batter into waffle iron grid and close lid. Following your waffle iron instructions, bake waffles until completely done. NOTE: My waffle iron instruction say waffles are done when they stop steaming. Repeat with remaining batter. Keep waffles warm in a 200 degree oven until ready to serve.
  • 5. PREPARE CINNAMON TOPPING: In a medium bowl, mix melted butter, brown sugar and cinnamon. Pour this mixture into a small ziploc bag, seal and set aside.
  • 6. PREPARE CREAM CHEESE TOPPING: In a medium, micorowave-safe bowl (I used a 2 cup pyrex measuring cup) heat butter and cream cheese for about 30 seconds, adding 15 seconds as needed; just until melted. Whisk in powdered sugar and orange extract.
  • 7. WHEN READY TO SERVE: Place waffles on plates, snip a small hole in the bottom corner of ziploc bag and drizzle cinnamon topping over warm waffles, then drizzle cream cheese topping using as much or as little as you like. Serve immediatley.
  • 8. NOTE: I could only eat one of these! I cooled the other waffles and put in the freezer for a quick breakfast for another day. Also put cream cheese topping in a ziploc bag and froze both toppings for later use.
