1/2 teaspoon ranch dressing mix
1/3 cup whipped cream cheese
6 -8 large button mushrooms
1 cup flour
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper
1/2 cup milk
vegetable oil (for frying)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
3/4 teaspoon vinegar
2 teaspoons prepared horseradish
1/4 teaspoon sugar

Steps:

  • Combine ranch dressing with cream cheese and let sit for 10 - 15 minutes or longer so the flavors integrate.
  • Clean the mushrooms and remove the stems, leaving only the caps.
  • When the cheese has rested, use a teaspoon to fill the mushroom caps with the herb cheese mixture.
  • Combine the flour with 1 1/2 teaspoons salt and cayenne pepper in a small bowl.
  • Pour the milk into another bowl.
  • Dip each mushroom first into the milk, then into the flour. Do this twice for each mushroom so that each has been double-coated.
  • Put the coated mushrooms into the freezer for at least 3 hours. This will keep the coating from falling off, and it will keep the cheese inside from expanding too fast and leaking out of the mushroom when frying.
  • Meanwhile, make the dipping sauce by combining all of the ingredients ina small bowl. Keep the sauce covered and chilled until ready to serve it.
  • When the mushrooms are frozen, heat the oil in a deep fryer or deep pot to 350 degrees F.
  • Use enough oil to completely cover the mushrooms (or at least a couple of inches deep). Fry the mushrooms for 8 - 10 minutes or until the outside turns a golden brown. Drain the mushrooms on a rack or paper towels.
  • Let the mushrooms sit for a couple of minutes before serving- they will be very hot on the inside. Serve with the dipping sauce on the side.

Mushrooms are one of my favorites. I had this dish as an appetizer at a restaurant and couldn't believe how simple, delicious, and easy to make it was. I used the same concept as Shake'n Bake® to make this dish, but instead of baking, I fried them. It can either be served as an appetizer or even side dish and whenever I make it for my friends, they can't seem to get enough!

1 cup bread crumbs
2 tablespoons grated Parmesan cheese
½ teaspoon garlic powder
½ teaspoon dried parsley
salt to taste
1 large egg
12 medium mushrooms
2 cloves garlic
2 cups oil for frying, or as needed
3 tablespoons tartar sauce

Steps:

  • Combine bread crumbs, Parmesan cheese, garlic powder, parsley, and salt in a zip-top bag.
  • Beat egg in a large bowl. Add mushrooms and toss until well coated. Place one mushroom in the bag, seal, and shake to coat. Repeat with remaining mushrooms.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Deep-fry mushrooms until golden brown, about 5 minutes. Remove to a paper towel lined plate to cool and drain.
  • Crush garlic cloves into tartar sauce and mix well. Place into a small dish and serve alongside mushrooms for dipping.

I love fried mushrooms! I finally found the perfect batter, light and fluffy, to make awesome fried mushrooms, and I can't have fried mushrooms without creamy horseradish sauce!

FOR FRIED MUSHROOMS
2 pkg fresh white button mushrooms (8 oz each)
flour for dredging (about 1/3 cup)
2 eggs, separated
1/2 c vegetable oil
FOR HORSERADISH SAUCE
1/2 c sour cream
1 Tbsp prepared horseradish
2 Tbsp all natural unsweetened applesauce
2 Tbsp panko or plain bread crumbs
2 Tbsp finely chopped chives
salt and pepper to taste

Steps:

  • 1. For horseradish sauce: Mix all ingredients together and let sit for at least 30 minutes.
  • 2. For fried mushrooms: Heat oil over medium heat. While oil is heating remove stems from mushrooms and dredge in flour.
  • 3. Beat the egg yolks until thick and lemon colored. In a separate bowl, beat the whites until they stand in peaks. Fold the yolks into the whites. Dip each mushroom in egg mixture until well coated, then place in oil to fry. )
  • 4. Fry mushrooms until golden brown, flipping and spooning oil over tops when needed. As each mushroom is done, carefully scoop it out with a slotted spoon and place on a plate with a paper towel on it. Serve immediately with horseradish sauce or ranch dressing for dipping.

Just a quick and easy recipe. I tried to find one on here, but this is the bare bones and very yummy!

8 -10 ounces whole white mushrooms
3/4 cup flour
2 eggs, slightly beaten
1 cup Italian seasoned breadcrumbs

Steps:

  • Wash the mushrooms and remove most of the stem.
  • Pat mushrooms dry with a paper towel.
  • Coat mushrooms with flour, lightly tap to remove excess flour.
  • Dip in eggs.
  • Coat with bread crumbs.
  • Set on a rack for a few minutes, so batter sets/dries.
  • Heat the oil in the deep fryer to 375 degrees. Pay close attention to grease while it heats. Cooking with oil at high heat levels can be dangerous!
  • Deep fry mushrooms in batches for approximately 3- 4 minutes or until golden brown.
  • Drain on paper towels and serve.

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons sugar
1 tablespoon cooking oil
1 cup water (or less)
1 lb button mushroom

Steps:

  • Combine flour, baking powder, salt, and sugar.
  • Put oil in a 1 cup measure and add water to the 3/4 cup mark.
  • Make well in centre of dry ingredients and pour in the water-oil mixture.
  • Stir together, adding as much of the remaining 1/4 cup of water as you need to make a batter of the correct consistency to coat the mushrooms.
  • Stir until smooth.
  • Heat cooking oil in deep fryer.
  • Dip mushrooms in batter and drop in hot oil.
  • Cook a few minutes until nicely browned.
  • Remove with a slotted spoon to a wire rack with paper towels beneath it to catch the oil drips.
  • Repeat with remaining mushrooms until all are fried.

At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

10 ounces fresh white mushrooms, wiped clean
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup water
2 cups breadcrumbs (Panko if you can find them)

Steps:

  • Mix flour, cornstarch, baking powder and salt in a bowl.
  • Add water to make a batter.
  • Dip clean mushroom into batter letting excess batter drip off.
  • I find it easier to stick a toothpick into the mushroom to dip it.
  • After dipping into batter roll in Panko breadcrumbs to coat.
  • Deep fry in oil until golden.
  • We like to serve with cocktail sauce.
