Vegetable oil, for frying
3 tablespoons grated Parmesan
1 teaspoon ground sumac
1/2 teaspoon ground cayenne
Zest of 1 lemon, plus wedges, for serving
6 large cloves garlic, thinly sliced
1 head broccoli (about 1 pound), cut into florets
Kosher salt

Steps:

  • Heat about 2 inches of oil in a large pot to 365 degrees F. Meanwhile, line a baking sheet with paper towels.
  • In a small bowl, stir together the Parmesan, sumac, cayenne and lemon zest.
  • Add the garlic to the oil. Fry until light golden, 30 seconds to 1 minute. Remove to the lined baking sheet to drain. Add half of the broccoli to the oil and fry, turning occasionally, until browned and crispy, about 3 minutes. Remove to the lined baking sheet to drain and season with salt. Repeat with the remaining broccoli.
  • Put the broccoli in a serving bowl and toss with the Parmesan mixture. Sprinkle with the fried garlic. Serve immediately with lemon wedges.

This recipe was originally written for cauliflower, but I had just purchased a mixed bag of fresh broccoli, carrots, and cauliflower and decided to try it with the broccoli and cauliflowerl. I liked the cauliflower but fell in love with the broccoli so here it is for safe keeping. Like the saying goes, just about anything fried is good, and this is good!

3 heads fresh broccoli, cleaned and cut bite-size (or cauliflower)
2 large eggs
1/2 cup milk
3 cups all-purpose flour
1/2 teaspoon nutmeg
1 teaspoon granulated garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon creole seasoning
3 -4 cups canola oil, enough to fill deep fryer (or vegetable, canola oil is best)

Steps:

  • Heat oil in deep fryer or large pot on stove to 350° Fahrenheit
  • Beat eggs and milk together in a bowl. Pour milk and egg wash in a ziplock bag.
  • Combine remaining ingredients (except broccoli) in a separate ziplock bag; close the bag and shake thoroughly to mix. (Cajun or Creole seasonings: Zatarain's or Tony Chachere's, to taste or 1 teaspoon).
  • Shake and soak broccoli pieces in egg wash bag for 5 minutes, then place them in flour and seasoning ziplock bag. Shake to coat. Place each coated broccoli piece in hot oil and cook until golden brown. Drain on paper towel.
  • Best served hot out of the fryer. Serve with condiments of your choice, catsup, hot sauce, or cocktail sauce are my favorite choices.

3/4 teaspoon salt, divided
3 cups fresh broccoli florets
3/4 cup all-purpose flour, -divided
4 tsb finely chopped American cheese
3/4 teaspoon onion powder
1 cup whole buttermilk
1/2 teaspoon baking powder
canola oil (for frying)

Steps:

  • Mix together in a lg. pan the water and 1/2 tsp salt.
  • Bring to a boil over med. high heat.
  • Add broccoli - return to a boil and cook for 3 minutes.
  • Drani and rinse broccoli in cold water.
  • Mix 1/4 C flour - 2 tbs cheese and onion powder in a plastic bag, Seal and shake to mix.
  • Mix buttermilk,baking powder,1/2 C flour, 2 tbs cheese and 1/4 tsp salt.
  • Stir until smooth.
  • Heat 2 to 3 inches oil to 375.
  • Dip a few pieces of broccoli in batter.
  • Fry until golden brown.

1 1/2 cups all-purpose flour
a 12-ounce bottle of beer (not dark)
6 scallions, chopped fine
2 tablespoons drained bottled capers, chopped fine
1 1/2 teaspoons salt
vegetable oil for deep-frying
1 head of broccoli, cut into 1 1/2-inch flowerets
3 carrots, cut into 1/2-inch-thick sticks

Steps:

  • Preheat the oven to 325°F. In a bowl whisk together the flour, the beer, the scallions, the capers, and the salt. In a heavy kettle heat 1 1/2 inches of the oil to 375°F. on a deep-fat thermometer, working in batches dip the broccoli in the batter, and fry it in the oil for 3 minutes, or until golden, transferring it as it is fried to paper towels to drain. Dip the carrots in the batter and fry them for 2 minutes in the same manner.

1 1/2 cakes bean curd
vegetable oil for frying
6 medium Chinese dried mushrooms
1 medium onion
8 ounces broccoli
3 tablespoons vegetable oil
3 slices ginger root
4 tablespoons vegetarian stock
SAUCE
2 tablespoons light soy sauce
1 tablespoon hoisin sauce
2 teaspoons chili sauce
1 teaspoon sugar

Steps:

  • Cut the bean curd into 1- x 1-1/2-inch flat pieces. Deep-fry them in hot oil for 2 to 2-1/2 minutes, until the surfaces are somewhat firm and yellow. Drain thoroughly. Soak the mushrooms in boiling water for half an hour. Drain. Discard the stems and cut the caps into halves. Cut the onion into thin slices. Break the broccoli intoindividual florets and cut the stem into 1-inch wedges.Heat the vegetable oil in a large frying pan or wok. When hot, add the onion, ginger, broccoli stems, and mushrooms and stir-fry in the hot oil for 2 minutes, to season the oil. Add the broccoli and stock and continue to stir-fry for 1-1/2 minutes, and then cook, covered, for 1-1/2 minutes. Uncover the pan or wok, pour the sauce ingredients over the contents, and continue to turn and stir-fry all ingredients together for a further 1-1/2 minutes. Serve with rice and other dishes.

4 c. water
3/4 tsp. salt, divided
3 c. fresh broccoli flowerets
3/4 c. flour, divided
4 tbsp. American cheese, grated (divided)
3/4 tsp. onion powder
1 c. buttermilk
1/2 tsp. baking powder
Oil for frying

Steps:

  • Combine water and 1/2 teaspoon salt in a large saucepan. Heat to boiling. Add broccoli and return to boiling for 3 minutes. Drain and rinse in cold water. Mix 1/4 cup flour and 2 tablespoons cheese and onion powder in a large plastic bag. Add broccoli and shake to coat. Set aside. Combine buttermilk, baking powder and remaining 1/2 flour, 2 tablespoons cheese and 1/4 teaspoon salt in small bowl. Stir until smooth. Heat 2 to 3 inches of oil in deep fryer at 375 degrees, dip a few pieces of broccoli in batter. Fry 1 to 2 minutes until golden brown. Drain and serve.
