DEEP FRIED BROWNED CALF LIVER

What makes this liver so special is that it is deep fried until very dark and crisp.

Number Of Ingredients 10

3 c flour
2 Tbsp black pepper
1 Tbsp onion powder
1 tsp garlic powder
1 Tbsp mrs dash or other mixed herb
2 raw beaten eggs
1 c buttermilk
1 pkg calf liver
1 large onion
1 pkg calf liver

Steps:

  • 1. Combine all the wet ingredients and beat very well, Add the liver that has been cut up to fit the pan.
  • 2. Let the liver soak while you mix together the dry ingredients. Heat cooking oil until a piece of uncooked flour sizzles.
  • 3. Cover the soaked liver in the flour mixture and fry the liver until almost done and add large cut up pieces of onion.
  • 4. Finish browning the liver but remove the onion when it starts to turn brown...The fried liver should be a very dark brown but not burnt. Drain the liver on paper towels.

This recipe will turn liver haters into converts. Very simple! The three things that will set your liver above all others are: 1) soak in milk, 2)turn liver as little as possible and 3) don't overcook!

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

1 pound beef liver
2 stalks celery
1 medium onion
1 slice fresh ginger root
1 tablespoon soy sauce
1 tablespoon sherry
1/2 teaspoon salt
flour
oil for deep-frying
1 1/2 tablespoons oils
1/2 teaspoon sugar
2 tablespoons soy sauce

Steps:

  • 1. Cut beef liver in 1/2-inch slices, then in 1/2-inch cubes. Cut celery in 1/2-inch sections and blanch. Slice onion. 2. Mince ginger root and combine with the soy sauce, sherry and salt. Add liver cubes and toss gently. Let stand 15 to 20 minutes, turning occasionally. 3. Drain well, discarding marinade. Dredge liver in flour to coat lightly. Meanwhile, heat oil. 4. Place liver in a wire basket or strainer. Immerse in oil until liver is light brown. Drain on paper toweling. 5. Heat remaining oil. Add sliced onion and celery. Stir-fry to soften slightly. IDAHO-STYLE FINGER STEAKS

Yummy, highly seasoned steak nuggets, deep fried and served with Ranch dressing -- just like in the fast food joints in Idaho in the '70's! I missed these so much that I kept playing with the ingredients until I finally came up with this perfect re-creation of the real thing. A taste of the old times when we didn't know how bad deep frying was for us! Serve with ranch dressing, or your favorite bbq sauce, steak sauce, or blue cheese dressing!

1 egg
2 cups buttermilk
2 tablespoons grill seasoning, such as McCormick Montreal Steak Seasoning
½ cup all-purpose flour
1 ½ pounds boneless beef sirloin steak, cut into 2 1/2 x 1/4 inch strips
2 ½ cups all-purpose flour
2 teaspoons garlic powder
salt and pepper to taste
3 cups canola oil for deep frying

Steps:

  • Beat together the egg, buttermilk, grill seasoning, and 1/2 cup of flour in a large bowl until smooth. Add the beef, and toss until well coated. Cover with plastic wrap, and place into the refrigerator to marinate at least 2 hours.
  • Sift 2 1/2 cups flour with the garlic powder, salt, and pepper into a large bowl. Remove steak strips from buttermilk batter and allow excess to drip off. Dredge each piece with seasoned flour and place onto a baking sheet. Place in the freezer and freeze until firm, 1 hour to overnight.
  • Heat oil to 370 degrees F (185 degrees C) in a deep fryer or cast iron skillet.
  • Drop a few frozen steak pieces into the hot oil and fry until golden brown on the outside, about 5 minutes. Do not overcrowd the frying oil, and do not allow the steak strips to thaw before they are fried. Once golden brown, remove to drain on a paper towel-lined plate.

1 pound lean beef
2 stalks celery
1 round onion
1 stalk scallion
1 to 2 slice fresh ginger root
1 tablespoon cornstarch
1 egg white
oil for deep-frying
2 tablespoons soy sauce
1 tablespoon sherry
1/2 teaspoon sugar
1/2 teaspoon salt
2 teaspoons cornstarch
2 tablespoons water
2 tablespoons oils

Steps:

  • 1. Cut beef against the grain in thin slices, then sliver. Shred celery and onion. Cut scallion in 1/2-inch sections. Mince ginger root. 2. Mix cornstarch and egg white to make a batter. Add beef slivers and toss gently to coat. Meanwhile, heat oil. 3. In one cup, combine soy sauce, sherry, sugar and salt. In another, blend remaining cornstarch and cold water to a paste. 4. Place beef slivers in a wire basket. Immerse in oil until meat begins to turn golden (less than a minute). Drain on paper toweling. 5. Heat remaining oil. Add celery, onion, scallion and ginger root. Stir-fry until slightly softened (about 1 minute). 6. Stir in beef, then add soy-sherry mixture. Stir-fry only to heat through. 7. Stir in cornstarch paste to thicken. Serve at once. 1 egg white

2 tablespoons soy sauce
1 tablespoon sherry

1/2 teaspoon salt
2 teaspoons cornstarch
2 tablespoons water
2 tablespoons oils

Steps:

  • Garnishes: cucumber slices and cherries. Table seasonings: tomato catsup and hua-chiao-yen.1. Combine the ground pork with Mixture A, the egg and green onion. Mix thoroughly. Form into 1" balls.2. Heat the oil in deep fryer. Deep fry the meat balls over medium heat until golden brown and well cooked. Do not fry too many at a time.3. Serve on a platter with the garnishes and seasonings. 4 servings.
