DEEP-DISH CHEESE, ONION & POTATO PIE



Deep-dish cheese, onion & potato pie image

Vegetarian comfort food for cold winter evenings - great for lunch the next day, too

200g strong, hard cheese (we used cheddar ), ½ coarsely grated, ½ cut into small chunks
200ml tub crème fraîche
500g shortcrust pastry
1kg floury potatoes , thinly sliced
2 onions , finely sliced
1 bunch spring onions , roughly chopped
small pinch grated nutmeg
large pinch paprika
1 egg , beaten

Steps:

  • Heat oven to 200C/fan 180C/gas 6. In a small bowl, mix the grated cheddar with the crème fraîche, then set aside. Grease and lightly flour a ceramic or metal pie dish, or shallow cake tin, about 23cm wide. Roll out two-thirds of the pastry on a lightly floured surface until large enough to line the tin with a little overhang.
  • Place a layer of potatoes over the tart and scatter over some of the sliced onions, spring onions and chunks of cheese. Season with salt, pepper, nutmeg and paprika. Layer over more potatoes, scatter again with more onions and cheese, then splodge over half the crème fraîche mix. Repeat with 2 more layers (the potatoes will come up way above the pastry), pushing the filling down slightly, then finish with the remaining crème fraîche mix.
  • Roll the remaining pastry so it fits over the potatoes. Brush the sides with egg, then lay the pastry over the top. Squeeze the edges together and trim with a knife. Crimp the sides and brush the top all over with egg. Place the pie on a baking sheet, bake for 30 mins, reduce the temperature to 180C/ fan 160C/gas 4, then carry on baking for 1 hr until golden. Leave the pie to rest for 10 mins, then serve straight from the dish cut into slices, with a salad or baked beans on the side.

This recipe was inspired by a pie at my favorite bakery in Brooklyn, Four and Twenty Blackbirds. While mine will never live up to their version, I think it's getting pretty close. I was really pleased with the addition of cardamom in the filling!

1 1/4 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 stick cold butter, cut into 1/2-inch chunks
4 to 5 tablespoons ice water
1 1/2 cups farmer cheese (about 12 ounces)
1 cup dark brown sugar
1/4 teaspoon ground cardamom
5 eggs
1 1/2 cups heavy cream
Orange marmalade, for serving

Steps:

  • For the crust: Place the flour, sugar, salt and butter in a food processor and pulse until the butter is evenly distributed but still visible in chunks. While pulsing, add the ice water 1 tablespoon at a time until the dough is just wet enough to hold together when pinched between your fingers.
  • Turn the dough out onto a piece of plastic wrap, form into a disk and refrigerate for at least 30 minutes.
  • Preheat the oven to 350 degrees F. Roll the dough out into a circle about 1/8-inch thick, and then fit into a 9-inch pie dish. Dock the crust all over using a fork. Cover the crust with plastic wrap and refrigerate for at least 30 minutes.
  • Line the crust with foil and fill with dried beans or baking marbles. Bake for 10 to 12 minutes, and then remove the foil and beans and bake until the crust just begins to brown, another 15 minutes.
  • For the filling: While the crust is baking, combine the farmer cheese, sugar and cardamom in a stand mixer with a paddle attachment and whip together until well incorporated. Add 1 egg at a time on medium speed, waiting until fully incorporated and smooth before each new addition. Stir in the heavy cream.
  • Fill the crust with the cheese filling and bake until the top is browned and the filling is just slightly jiggly, 45 minutes. Let cool, and then eat the pie. Serve with orange marmalade.

Also known as torta rustica, this glorious deep-dish pie is made with a variety of Italian-style ingredients and can be served warm or at room temperature.

1 pkg. (17-1/4 oz.) frozen puff pastry (2 sheets), thawed, divided
5 eggs, divided
2 pkg. (10 oz. each) frozen chopped spinach, thawed, squeezed dry
1 cup POLLY-O Original Ricotta Cheese
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1 cup POLLY-O All Natural Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/2 cup KRAFT Shredded or Grated Parmesan Cheese
1/2 cup dry Italian-style bread crumbs
1/2 cup chopped onions
1 jar (12 oz.) roasted red peppers, drained, sliced

Steps:

  • Heat oven to 425°F.
  • Roll 1 pastry sheet into 16-inch circle on lightly floured surface. Press lightly onto bottom and up side of 9-inch springform pan sprayed with cooking spray, extending edge of pastry over top edge of pan.
  • Mix 4 eggs and all remaining ingredients except peppers; spread half onto bottom of pastry crust. Top with peppers and remaining cheese mixture.
  • Roll remaining pastry surface to 12-inch circle. Cut out 9-inch circle; place over filling. Pinch edges of pastry together to seal. Cut pastry trimmings into desired shape with small cookie cutter; arrange on top crust. Beat remaining egg; brush onto crust. Place pan on baking sheet.
  • Bake 40 min. or until golden brown. Cool 30 min. Run knife around rim of pan to loosen crust; carefully remove rim.
