CRISPY CHEDDAR CHICKEN WITH CREAM SAUCE



Crispy Cheddar Chicken with Cream Sauce image

A classic, flavorful meal the whole family will love!

Number Of Ingredients 13

2 lbs boneless skinless chicken breasts, cut into 12 equal pieces ((for me this was 4 large breasts; I cut each into 3 pieces))
2 tablespoons flour
2 egg whites
2 tablespoons skim milk
1 cup cornflake crumbs
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon onion powder
1 teaspoon dried parsley flakes
3 oz shredded 50% sharp cheddar cheese
10.5 oz can Campbell's Healthy Request Cream of Chicken condensed soup
2 tablespoons fat free sour cream
2 tablespoons light butter (I used Land O'Lakes)

Steps:

  • Pre-heat your oven to 400 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
  • Place the chicken pieces into a gallon zip top bag with the flour and seal. Shake/massage the bag contents until the chicken is coated with flour.
  • In a shallow dish, combine the egg whites and milk and beat together lightly with a whisk or fork. In a separate shallow dish, combine the corn flake crumbs, salt, pepper, onion powder, parsley and shredded cheddar and stir together until well combined.
  • Take one of the chicken pieces from the bag and dip it into the egg white mixture to coat all sides, then transfer it to the crumby cheese mixture and coat all sides with crumbs and cheese. Place the coated chicken in the prepared baking dish and repeat the coating process with all remaining pieces of chicken. If any of the crumb/cheese mixture is remaining, sprinkle it over the top of the chicken in the dish.
  • Lightly mist the tops of the chicken breasts with cooking spray and cover the dish with aluminum foil. Bake for 35 minutes. Remove the aluminum foil and bake for another 10-12 minutes uncovered until the coating is crispy.
  • When the chicken goes back in the oven, combine the cream of chicken soup, sour cream and butter in a small saucepan and bring over medium heat. Cook, stirring occasionally, until the sauce is heated through. When the chicken is done, serve the sauce over the chicken. One serving is two pieces of chicken and 3 tablespoons of sauce.

1 cup crushed cornflakes cereal
¾ cup grated Parmesan cheese
¼ cup shredded Cheddar cheese
½ cup butter, melted
8 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the cornflake crumbs, Parmesan cheese and Cheddar cheese.
  • Dip the chicken breasts in the melted butter, and roll them in the cornflake crumb mixture. Place chicken in a lightly greased 9x13 inch baking dish.
  • Bake in the preheated oven for 30 to 40 minutes, until chicken is no longer pink and juices run clear.

½ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 egg
1 tablespoon milk
1 cup shredded Cheddar cheese
½ cup Italian seasoned bread crumbs
1 cup crispy rice cereal
3 skinless, boneless chicken breast halves - cut in half
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a medium baking dish with 1/4 cup melted butter.
  • In a bowl, mix the flour, salt, pepper, and garlic powder. In a separate bowl, beat together the egg and milk. In a third bowl, mix the cheese, bread crumbs, cereal. Dredge chicken pieces in the flour mixture, dip in the egg mixture, then press in the breadcrumb mixture to coat. Arrange in the prepared baking dish. Drizzle 2 tablespoons butter evenly over chicken.
  • Bake 35 minutes in the preheated oven, or until coating is golden brown and chicken juices run clear.

2 cups diced peeled potatoes
1-3/4 cups sliced carrots
1 cup butter, cubed
2/3 cup chopped onion
1 cup all-purpose flour
1-3/4 teaspoons salt
1 teaspoon dried thyme
3/4 teaspoon pepper
3 cups chicken broth
1-1/2 cups whole milk
4 cups cubed cooked chicken
1 cup frozen peas
1 cup frozen corn
4 sheets refrigerated pie crust

Steps:

  • Preheat oven to 425°. Place potatoes and carrots in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, 8-10 minutes or until crisp-tender; drain. , In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour and seasonings until blended. Gradually stir in broth and milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. A wonderful potluck dish that I found originally in a TV guide insert for a Kraft TV event, many many years ago. Wonderful. I often add sage, as I like that flavor, but it's good without t, and will get great reviews from all who try it. I use breasts for this, but I'm sure any chicken would work well.

1/2 cup onion, chopped
1/4 cup butter
1/4 cup flour
1/4 teaspoon salt
1 dash pepper
1 1/2 cups milk
4 cups cooked chicken, chopped
8 ounces cheddar cheese, grated
10 ounces frozen broccoli, cooked and drained
8 ounces Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Saute onion in 1/4 cup butter.
  • Blend in flour and seasonings.
  • Gradually add milk, stirring constantly until thickened.
  • Add chicken, cheese, and broccoli; mix well; and spoon into 13x9 baking dish.
  • Separate rolls into 1 large (long) and 2 small rectangles; firmly press perforations to seal.
  • Cut large rectangle into 4 strips lengthwise. Place on top of casserole.
  • Cut small rectangles into 8 strips crosswise (4 each).
  • Create a lattice pattern by weaving the short pieces over and under the long pieces.
  • Brush with melted butter.
  • Bake at 350 degrees for 35 minutes.
