2 tablespoons butter
2 large green chiles, diced
2 jalapenos, finely diced
1 poblano chile, diced
2 onions, diced
4 pounds diced frozen hash brown potatoes (2 bags)
Salt and ground pepper
2 cups grated sharp Cheddar
2 cups grated Monterey Jack
8 slices bacon, fried and chopped

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large skillet and saute the chiles and onions until browned, almost blackened. Add the frozen hash browns, some salt and pepper and toss together. Tip into a buttered baking dish and top with the cheese and bacon. Bake until hot and bubbly, about 30 minutes.

1 stick (1/2 cup) real butter (not margarine)
1 can(s) (10.5 oz.) campbell's cream of chicken soup
1/4 c chopped onion
2 c shredded cheddar cheese, separated
16 oz sour cream
1 tsp salt
1/4 tsp black pepper

Steps:

  • 1. In a large bowl, combine all ingredients, except 1/2 cup cheese.
  • 2. Place mixture in a greased 9x13" baking dish. Sprinkle with remaining cheese.
  • 3. Bake in a preheated 350-degree oven for about 45 minutes or until golden brown.

1 cup milk
½ teaspoon salt

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

1 chopped onion
1 (16 oz) container sour cream
1 (10.5 oz) can cream of celery soup
1 (8 oz) package shredded cheddar and Monterey Jack cheese blend
1/2 teaspoon garlic powder
1 (30 oz) package thawed frozen shredded hash brown potatoes
1 teaspoon salt
1/2 teaspoon black pepper
2 cups crushed potato chips

Steps:

  • Preheat oven to 350 °F. Lightly butter a casserole dish.
  • In a small skillet, melt 1/4 cup of butter over medium heat. Add onion, and cook 3 to 4 minutes, or until soft. Pour mixture into a large bowl. Add the sour cream, cream of celery soup, cheese, garlic powder, hash browns, and salt and pepper. Combine until well blended.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 envelope ranch salad dressing mix
1 teaspoon onion powder

1 package (30 ounces) frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese

I just adopted this recipe. I have made some changes to make it mine. I love Old Fashioned Beef Hash and this recipe brought back some memories. I think the best hash is made using a meat grinder and grinding equal amounts of leftover roast or steak with equal amounts of raw potatoes and yellow onions. I have my mothers...

olive oil
onion, quartered
potatoes, peeled and quartered
leftover beef, cooked and diced
salt and pepper to taste
ketchup, optional
corn kernel, optional

Steps:

  • 1. Take approximately equal proportions of beef, potatoes, and onions and put them through a meat grinder using a medium grinder attachment so that they are well mixed and ground. NOTE: If you don't have a meat grinder, you can hand chop the ingredients.
  • 2. Heat a large frying pan, preferably a cast iron pan, on medium high to high heat. Add the hash to the frying pan so that a half an inch of hash covers the bottom of the pan. If you have more hash to cook, do so in separate batches. Add several tablespoons of Olive Oil. Brown the hash, stirring only infrequently at first to make sure that the hash has an opportunity to brown well. As you cook the hash, add pinches of salt and fresh ground pepper. Do this a couple of times with each batch of hash. Cook for at least 10 minutes and until the hash is well browned.
  • 3. Served topped with ketsup, if desired. Or, serve over homemade biscuits as Donna mentioned. Or toss in some corn as Shelley suggested with her beautiful photo....Yum!

3 tablespoons butter
1 small yellow onion, chopped
4 cups frozen shredded hash browns
1 lb bulk sausage, mild, hot (or 1 lb sage sausage)
2 1/4 cups whole milk
8 large eggs
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
2 tablespoons Dijon mustard
8 cups cubed French bread or 8 cups Italian bread, crusts removed
2 cups grated cheddar cheese
2 cups freshly grated parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
  • Melt the butter in a large frying pan.
  • Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
  • Saute until soft, about 5 minutes.
  • In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
  • In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.
  • To assemble, spread the onions and hash browns evenly at the bottom of the greased dish.
  • Place the bread cubes evenly on top of hash browns.
  • With a slotted spoon distribute sausage as the third layer.
  • Pour the milk and egg mixture over these layers.
  • Add Parmesan as the next layer, while then adding the Cheddar.
  • *Cook's Note: Save a few tablespoons of cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted cheddar.
  • Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.
