I was looking for OAMC recipes, and as I was looking at those shops that you can go into and make stuff and take it home, they had a posting for white bean chili with chicken and so of COURSE I had to go look it up on my own and ran across Paula Deen's recipe. I LOVE her cooking! I'm posting it here so I can save it for when I do my cooking with a friend this month. Sounds yummy!

Number Of Ingredients 13

1 lb dried navy beans
5 cups chicken stock
4 tablespoons butter
1 tablespoon garlic, minced
3/4 cup diced onion
1 1/2 cups green chilies, chopped (fresh or canned)
1 lb chicken breast, chopped into small pieces
1 tablespoon ground cumin
1 tablespoon dried oregano
1 -2 teaspoon ground black pepper
1/2 teaspoon white pepper
1 pinch red pepper flakes
1/2 bunch cilantro leaf, chopped

Steps:

  • Rinse beans well, cover with cool water, and soak for 2 hours. Drain.
  • Place beans in large pot with chicken stock and bring to a boil over high heat. In a saucepan, heat butter over medium heat.
  • Add garlic, onion, and chiles and saute for 5 minutes.
  • Add chile mixture to pot with beans. Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro.
  • Lower heat to medium and cook, stirring occasionally, for approximately 1 1/2 hours.
  • Serve with cornbread, if desired.

3/4 pound boneless skinless chicken breasts, cut into 1-1/4-inch pieces
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil, divided
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped
4 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon ground cumin
2 cans (15 ounces each) cannellini beans, rinsed and drained, divided
2-1/2 cups chicken broth, divided
1-1/2 cups shredded cheddar cheese
Optional toppings: sliced avocado, quartered cherry tomatoes and chopped cilantro

Steps:

  • Toss chicken with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high heat; saute chicken until browned. Transfer to a 3-qt. slow cooker., In same skillet, heat remaining oil over medium heat; saute onion until tender. Add jalapeno, garlic, oregano and cumin; cook and stir 2 minutes. Add to slow cooker., In a bowl, mash 1 cup beans; stir in 1/2 cup broth. Stir bean mixture and the remaining whole beans and broth into chicken mixture., Cook, covered, on low until chicken is tender, 3-3-1/2 hours. Stir before serving. Sprinkle with cheese; add toppings if desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

This recipe was passed down from a friend, and now it is one of our favorites! It's great to make whenever there is left over chicken or turkey around! We pray for colder weather in California just so we can make this soup! You can substitute additional diced tomatoes for the tomatillos. If you would like the soup to be spicier, you can add some red chili flakes or salsa. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth
1 (18.75 ounce) can tomatillos, drained and chopped
1 (16 ounce) can diced tomatoes
1 (7 ounce) can diced green chiles
½ teaspoon dried oregano
½ teaspoon ground coriander seed

1 pound diced, cooked chicken meat

  • Heat oil, and cook onion and garlic until soft.

1 tablespoon olive oil
3/4-1 lb boneless skinless chicken breast, cubed
1 large onion, minced
2 garlic cloves, minced
4 cups chicken broth
2 (16 ounce) cans great northern beans, rinsed and drained
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 (10 1/2 ounce) can Rotel tomatoes & chilies
4 cups baked corn tortilla chips (optional)
1/2 cup shredded reduced-fat sharp cheddar cheese (optional)
sour cream (optional)

Steps:

  • Heat oil in large pot over medium-high heat.
  • Add chicken and cook until no longer pink.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet and cook until tender.
  • Place chicken, onion, and garlic in pot.
  • Add chicken stock, beans, Rotelle tomatoes salt and pepper.
  • Cook about 30 minutes on medium heat or until the chicken is the desired tenderness.
  • Place servings into bowl (If using tortilla chips put them in bowl first).
  • Sprinkle with cheese and add sour cream.
  • CROCKPOT Directions: Place chicken, onion, and garlic in crockpot. Add chicken stock, beans, Rotelle tomatoes salt and pepper.
  • Cook on low 5 to 6 hours.

Dee Dee's Chicken Chili with White Beans image

This is a change from my tomato based chili but non the less, very tasty and good! With the days getting cooler, chili just seemed fitting for today! While this is not on my low carb diet, I think it's probably pretty healthy! Enjoy!

Number Of Ingredients 15

3 large boneless chicken breast (about 2 lbs)
32 oz chicken broth
1 c chopped onions
4 clove garlic, minced
1 tsp oregano, dried
1 tsp white pepper
1 tsp red pepper flakes
1 1/2 tsp cummin
1/2 tsp everglades seasoning
salt to taste
2 pt canned great nothern beans, drained (or two 15-oz cans)
1 (15-oz) can whole kernel corn, drained
2 Tbsp lime juice
colby jack cheese for garnish
snipped green onions for garnish

Steps:

  • 1. Combine first 11 ingredients in a heavy 6-quart pot. Bring to a boil, and cook over medium heat until chicken is tender and done. Remove chicken from pot; set aside to cool.
  • 2. Add beans, corn and lime juice to pot.
  • 3. Once chicken is cool enough to handle (I cut it hot), cut into bite size pieces and return to pot. Simmer over a medium low heat for 30 minutes.
  • 4. Spoon into bowls and garnish with cheese, onions, peppers, sour cream...etc Serve with a hot buttered slice of cornbread.
