PUMPKIN BELGIAN WAFFLES

Number Of Ingredients 14

2 1/2 cups all-purpose flour
1/3 cup packed light brown sugar
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves
4 large eggs
1 cup whole milk (I didn't have this so I used 1/4 cup cream and 3/4 cup skimmed milk)
1 cup well-shaken buttermilk
1 cup canned solid-pack pumpkin
3/4 stick (6 tablespoons) unsalted butter, melted
Vegetable oil for brushing waffle iron

Steps:

  • Preheat oven to 250°F and preheat waffle iron.
  • Sift together flour, brown sugar, baking powder and soda, salt, and spices.
  • Whisk eggs in a large bowl until blended, then whisk in milk, buttermilk, pumpkin, and butter until smooth. Whisk in dry ingredients just until smooth.
  • Brush waffle iron lightly with oil and spoon batter (I was able to get 6 waffles) into waffle iron, spreading quickly. Cook according to manufacturer's instructions.
  • Transfer waffles to rack in oven to keep warm and crisp. Make more waffles in same manner

3 cups Krusteaz Belgian Waffle mix
2 eggs
1/3 cups oil
1 cups water
2/3 cups canned pumpkin
1 1/2 teaspoons cinnamon
1/4 teaspoons nutmeg
1 tablespoon brown sugar
butter
maple syrup
whipped cream
chopped pecans

Steps:

  • Mix waffle mix, eggs, oil, water, pumpkin, spices, and sugar in a medium-sized mixing bowl until smooth.
  • Pour batter onto waffle iron and cook until golden brown (or to desired doneness).
  • Top with butter, syrup, whipped cream, and/or pecans.

10 inch deep dish pie crust, unbaked
Glass or ceramic pie plate
Filling:
750ml (3c) baked, well mashed pumpkin
5 eggs (slightly beaten)
2T molasses
1can Eaglebrand condensed milk
1.5 c evaporated milk
1.25 c dark brown sugar
2T cinnamon
2T nutmeg
1T allspice
1T vanilla

Steps:

  • 1. Pre-heat oven to 450º 2. Prepare your favorite 2-crust pie crust recipe. Use 1.5 of the dough for the bottom crust. Use the remaining dough for a lattice or decorative crust topping. Be sure the fluted pie crust rim is high and substantial. 3. Thoroughly whisk all filling ingredients together in a very large bowl. 4. Fill a thick, 10-inch crust with the pumpkin filling. Add a lattice top or pastry decorations to the top if desired. 5. On the middle rack of the oven, bake at 450º for 20, then reduce heat to 350º for 30-40 minutes (or longer if needed.. (See instructions for checking 'doneness') If the fluting begins to turn to dark, protect it with a narrow strip of foil wrap, gently bent over the fluting. Doneness: The pie is done when a sharp knife comes out dry from the filling centre, or a small crack appears at the centre of the filling. If using a glass pie plate, double-check that the bottom of the crust is a light golden colour. 6. Allow to cool. Refrigerate until served 7. Serve with English cream, whipped cream or ice cream if desired.

3/4 cup pumpkin puree
1/3 cup vegetable oil

3 egg whites

Steps:

  • Preheat waffle iron.
  • In a mixing bowl, combine flours, oat bran, brown sugar, baking powder, spices, and salt.
  • Separately, mix together milk, pumpkin, oil, and honey until smooth.
  • Add pumpkin mixture to dry ingredients, mixing well.
  • In another bowl, beat egg whites until stiff but not dry; gently fold into batter.
  • Pour 1 1/4 cups batter onto greased waffle iron and cook until waffle is golden and cooked through.
