While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

I found this recipe in my "Fix It And Forget It" cookbook. I always add some fresh cilantro as well as chopped green onions and extra cheese to mix in as well. This has been a huge hit with everyone I have served it to!

1 lb ground beef
1 dash salt
1 dash pepper
1 dash onion powder
2 garlic cloves, minced (optional)
2 (16 ounce) jars salsa (as hot or mild as you like)
15 ounces refried beans
1 1/2 cups sour cream
3 cups shredded cheddar cheese, divided
tortilla chips

Steps:

  • Brown ground beef. Drain. Add salt, pepper, onion powder, and minced garlic.
  • Combine beef, salsa, beans, sour cream, and 2 cups cheese in slow cooker.
  • Cover. Heat on Low 2 hours. Just before serving, sprinkle with 1 cup cheese.
  • Serve with tortilla chips.

This is a great recipe for those game days or family get-togethers. I have used this recipe for years and it ALWAYS a hit!

32 oz velveeta type cheese
10 oz rotel
10 3/4 oz cream of mushroom soup
1 medium onion diced
1 lb (to 1 1/2 lbs.) ground beef

Steps:

  • 1. Cut "Velveeta" type cheese block into cubes and put in crock pot turned on HIGH so cheese begins to melt.
  • 2. Brown ground beef (if you prefer a meatier dip use 1 1/2 lbs. of ground beef) and chopped onions together. Drain well and add to melted cheese.
  • 3. Stir in Rotel (I use the mild type but that is a matter of taste) and Cream of Mushroom soup. Stir everything together well and keep on LOW in the crock pot for serving with Nacho Chips.

1 tablespoon garlic, minced
1 tablespoon sugar (optional)
2 (15 ounce) jars nacho cheese dip (Tostados)
1 (15 ounce) jar chunky salsa (tostados)
1 cup beer (not light)
2 cups Mexican blend cheese
1 teaspoon Tabasco sauce

Steps:

  • Brown beef and drain.
  • Add remaining ingredients and simmer on low until hot.
  • or keep warm on low in crock pot.
  • Serve with corn chips.
  • Note: This will get thin if cooked too long. Just let it cool off.
  • and it will thicken back up.

2 1/2 cups cheddar cheese
1 tablespoon cornstarch
12 ounces evaporated milk
2 tablespoons jalapeno peppers, finely chopped
1 tablespoon hot sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon salt

Steps:

  • Toss the cheese and cornstarch together in a saucepan.
  • Add all other ingredients and cook over medium heat, whisking often until the cheese is melted and smooth.
  • While hot it will have a sauce-like consistency (perfect for pouring over nachos). As it cools it will thicken and become a dip-like consistency. Whisk occasionally to mix in the skin that forms on the top.
  • Stir in additional evaporated milk or regular milk to achieve the desired consistency if you want to use it as a pourable sauce.

16 ounces refried beans
1/2 cup salsa, hot and chunky
16 ounces Velveeta cheese, 1/2 inch pieces
1/4 cup fresh cilantro, chopped
tortilla chips

Steps:

  • Combine beer, cumin, dried oregano and garlic powder in heavy medium sauce-pan. Bring to simmer. Add beans and salsa; stir until heated through.
  • Add Velveeta cheese; stir until cheese melts, about 3 minutes. Stir in cilantro. Transfer to bowl. Serve warm with tortilla chips.
