I know my mom came up with this casserole which is different than any other. She told me she threw together these ingredients one night when she had little else to pick from when my sister and I were small and the cupboards were pretty bare the day before payday. So that's what I started calling it..The day before payday...

12-16 oz egg noodles cooked and drained
1 lb bulk pork sausage
1/3 lb velveeta cheese cut into small chunks
1 can(s) family sized can condensed tomato soup
1 can(s) small (10-11 oz) can condensed tomato soup

Steps:

  • 1. Cook noodles, drain and set aside
  • 2. Cook bulk sausage, breaking up as cooking until loose meat till done. Drain off grease and set aside for a moment
  • 3. In a large oven proof/microwave proof casserole dish mix soup and cheese chunks.
  • 4. Add sausage to soup/cheese mixture and stir. You'll see the cheese starting to melt into the soup.
  • 5. Fold in noodles and mix well. Cover and cook for 45 minutes (approx) in 350 degree oven Or cover and put in microwave for 10-12 minutes on full power.

Easy meal to thrown together the night before and throw in the oven when you get home...or have your little one do it after school. This is also good frozen into individual serving sizes

7 ounces macaroni (uncooked)
1 can celery soup
1 can mushroom soup
1 jar pimiento (optional)
4 ounces mushroom pieces
1 small onion, chopped
2 cups milk
1/2 lb Velveeta cheese, diced
1/4 cup green pepper, diced
2 cups ham, chicken or 2 cups turkey, cooked and chopped
1 can water chestnut, sliced

Steps:

  • Combine all ingredients.
  • Place in buttered 3 quart or 9x13 inch pan.
  • Refrigerate overnight or freeze.
  • (Can break this down into individual serving sizes) Remove from freezer 1 hour before baking.
  • If frozen, thaw before baking.
  • Preheat oven to 350.
  • Bake one hour.
