1 yellow onion, diced
6 cloves of garlic, minced
15 oz ricotta cheese
1 egg
1 teaspoon dried oregano
1 cup freshly grated parmesan cheese
25 oz jar of good quality pasta sauce
2 cups shredded mozzarella cheese
9 lasagna noodles
1/4 cup chopped fresh parsley

Steps:

  • Add garlic and onion to a skillet with a splash of olive oil. Cook over medium high heat for around 10 minutes, until onion is soft. Add sauce, stir, and set aside
  • In a bowl, stir to combine the freshly grated parmesan cheese, ricotta cheese, oregano, egg, and fresh parsley.
  • Grease a 9 X 13 casserole dish with cooking spray
  • Add 1/3 cup sauce to the bottom of the dish and spread it out
  • Add 3 lasagna noodles
  • Place 1/2 cup of the ricotta mixture and spread out over the noodles
  • Add 1 cup of the sauce and spread out over the top
  • Sprinkle on 1/2 cup of mozzarella cheese
  • Add the next layer: 3 noodles, 1/2 cup ricotta, 1 cup of sauce, and 1/2 cup of mozzarella
  • For the final layer, add 3 noodles, the rest of the ricotta, the rest of the sauce, and the remaining 1 cup of mozzarella over the top
  • Cover with foil and bake at 375 degrees for 50 - 60 minutes, until hot and bubbly
  • For crispy edges and top, remove foil for the last 5 minutes (optional)

16 oz. (1 lb.) SWEET Italian sausage - out of skin (Mild will work if sweet is not available)
12 oz. (3/4 lb.) lean (80% or better) ground beef
4 oz. (1/2 cup) minced yellow onion (Vidalia or sweet white will also work)
2 cloves garlic (crushed and minced)
1 can crushed tomatoes (28 oz.)
1 can tomato sauce (15 oz.) or 2 cans (6.5 oz. ea.)
2 cans tomato paste (6 oz. ea.)
1/2 cup lukewarm water
1/4 cup dry red wine (optional)
2 tbsp. white sugar
1 1/2 tsp dried basil leaves
1/2 tsp Fennel seeds
1 tsp Italian seasoning
1 tbsp salt
1/4 tsp fresh-ground black pepper (pre-ground will also work)
1 bay leaf
4 tbsp. chopped fresh parsley (or 4 tsp dried parsley flakes) - separated into two parts
12 lasagna noodles
16 ounces (1 1/4 lb.) fresh Ricotta cheese
1 large egg (room temperature, lightly beaten)
1/2 tsp. salt
12 oz. (3/4 lb.) Mozzarella cheese, sliced (grated will also work)
3/4 cup grated Parmesan cheese

Steps:

  • Preparation: 1. Pre-heat Dutch Oven over medium heat. 2. Place sausage, ground beef, onion and garlic into pre-heated Dutch Oven and cook until well-browned (approx. 5 - 8 mins.) 3. Stir in crushed tomatoes, tomato sauce, tomato paste. wine (optional) and water - mix well. 4. Add sugar, basil, fennel seeds, Italian seasoning, 1 tbsp. salt, 1/4 tsp. ground black pepper, 2 tbsp. parsley and bay leaf. 5. Cover Dutch Oven and simmer for about 1 1/2 hours, stirring occasionally. 6. Bring 4-6 qts. water to a boil and add 1 tbsp. salt. 7. Carefully add 12 lasagna noodles and stir. 8. Bring water back to a boil. 9. Cook noodles (uncovered) for 8-10 mins. 10. Drain noodles and rinse with cold water. 11. Lightly oil 2 baking sheets (to prevent sticking) and lay out 6 lasagna noodles flat on each sheet. 12. Preheat oven to 375 degrees F (190 degrees C). 13. Combine Ricotta cheese with beaten egg, remaining 2 tbsp. fresh parsley (or 2 tsp. dried parsley flakes) and 1/2 tsp. salt. Assembly: 1. Lighly oil a 9x13-inch backing dish or pan. 2. Spread 1 1/2 cups of meat sauce to cover the bottom of the baking dish or pan. 3. Lay 3 lasagna noodles lengthwise in the dish/pan over the meat sauce. 4. Spread 1/3 of the Ricotta cheese/egg mixture evenly over the noodles all the way to the edges. 5. Lay 1/3 of the Mozzarella chees slices over the noodles (or evenly sprinkle 1/3 of the grated Mozzarella cheese). 6. Sprsad 1 1/2 cups of the meat sauce over the Mozzarella. 7. Sprinkle 1/4 cup Parmesan cheese over the sauce. 8. Repeat steps 3 through 7 Until there are only 3 lasagna noodles remaining. 9. Lay the final 3 lasagna noodles over the Parmesan. 10. Sprsad 1 1/2 cups of the meat sauce directly over the noodles. 11. Evenly spread the remaining Mozzarella and Parmesan cheese over the meat sauce. 12. Lightly oil one side of sufficient aluminum foil to cover the baking dish/pan and place over the lasagna (this allows the foil to touch the cheese without sticking) or place un-oiled foil over the dish making sure foil doesn't touch the cheese). Baking: 1. Place baking dish/pan into pre-heated oven. 2. Bake for 25 mins. 3. Remove foil from over the lasagna. 4. Bake uncovered for an additional 25 mins. or until chees has thoroughly melted and/or browned as desired. 5. Cool for 15 minutes on a wire rack before serving. Cut into 2-3 inch squares and serve with salad and garlic bread if desired.

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Dave Grohl shared this family favorite with me, and it's the best lasagna I have ever tasted! I make mine dairy free by swapping out the butter for 4 extra tablespoons of olive oil and the mozzarella and Parmesan with vegan alternatives.

6 tablespoons olive oil
4 tablespoons lightly salted butter, plus more for greasing the pan
3 small onions, finely chopped
4 cloves garlic, minced
3 stalks celery, finely chopped
2 carrots, peeled and finely chopped
2 bay leaves
2 1/2 pounds plant-based ground beef alternative
3 tablespoons tomato paste
7 ounces marinara sauce or tomato passata
1 1/2 cups red wine
1 1/2 cups vegetable broth
4 pinches ground nutmeg
Sea salt and freshly ground black pepper
9 no-boil lasagna sheets
14 ounces whole milk mozzarella, coarsely grated
2 ounces grated Parmesan

Steps:

  • Heat the oil and butter in a large flame-proof pan over medium heat. Add the onions and cook until softened, about 10 minutes. Add the garlic, celery, carrots and bay leaves and cook, stirring frequently, until soft, about 10 minutes.
  • Turn the heat up to medium-high. Add the plant-based ground beef alternative and break up with a fork if necessary. Add the tomato paste and marinara sauce and cook until bubbly, about 2 minutes.
  • Splash in the red wine and cook until it has evaporated. Remove the bay leaves, then pour in the broth and add the nutmeg, 3 pinches of salt and a sprinkle of pepper.
  • Simmer uncovered, stirring occasionally and adding a splash of water if dry, until the sauce has darkened and thickened and all the flavors have infused, about 2 hours.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C) with a rack in the center. Grease an 8-by-12-inch broiler-safe baking dish or lasagna pan with butter.
  • Spoon a thin layer of sauce into the bottom of the pan. Top with a layer of 3 pasta sheets, followed by a third of the remaining sauce and a third of the mozzarella and Parmesan. Repeat the layers with the pasta, sauce and cheeses twice more until you have 3 layers in total.
  • Cover the dish with aluminum foil and bake until the lasagna is bubbling and the cheese is melted, about 25 minutes.
  • Remove the foil and turn the oven to broil, keeping the lasagna on the center rack. Cook to crisp the top, being careful not to let it burn, 10 to 15 minutes more.
  • Let cool for 15 minutes. Then it's ready to eat.

12 sausages
2 tbsp olive oil
2 onions , chopped
4 garlic cloves , crushed
2 tsp fennel seeds
2 tsp dried oregano or a small handful of fresh oregano leaves, chopped
½ tsp chilli flakes (optional)
1 tbsp sugar
500ml passata
400g can chopped tomatoes
100g butter
2 bay leaves
100g plain flour
1l milk
¼ fresh nutmeg , finely grated
100g baby spinach
handful basil , leaves torn
50g parmesan , grated
250g dried lasagne sheets (about 12 sheets)
50g cheddar , grated
150g ball mozzarella , torn into small pieces

Steps:

  • Squeeze the meat from the sausages and roll into meatballs - you'll get about four balls from each sausage. Heat 1 tbsp oil in a wide, deep frying pan or casserole dish. Cook the meatballs in batches, making sure you don't overcrowd the pan, until they're all golden brown. Put them aside on a plate when they're ready.
  • Heat the rest of the oil in the pan and add the onion. Cook for 8-10 mins until soft, then stir in the garlic, fennel, oregano and chilli, if using. Stir around for a min or 2, then add the sugar, passata and tomatoes. Swish a little water around the containers to wash out all the tomatoes and add to the pan. Season well and simmer, uncovered, for 30-40 mins over a gentle heat until the sauce thickens and the chopped tomatoes break down.
  • Heat the butter in a saucepan, add the bay leaves and let them sizzle in the butter for 1 min, then add the flour. Whisk to make a smooth paste, then add the milk, a little at a time, stirring continuously until it's all incorporated and you have a thick white sauce. Add the nutmeg and some seasoning. Leave over a low heat for 5 mins to allow the bay to infuse, whisking every now and then.
  • Keep about 10 meatballs aside and add the rest to the tomato sauce. Spoon half the tomato sauce and meatballs into a baking dish (ours was 25cm x 35cm). Top with half the spinach, the basil and a little parmesan. Pour over about a third of the white sauce, and top with a layer of lasagne sheets, breaking them up to fit the dish if you need to.
  • Repeat the layers once more; meatballs and sauce, spinach, basil, parmesan, white sauce, pasta. Pour the remaining white sauce over the lasagne, spreading it to the corners to cover the pasta. Dot with the meatballs you set aside earlier and the mozzarella, then scatter over a generous helping of parmesan and cheddar. Heat oven to 190C/170C fan/gas 5. Or if not eating straight away, chill for up to 24 hrs or freeze for two months (defrost in the fridge overnight before cooking).
  • Bake the lasagne for 40-50 mins until bubbling and golden with lots of crusty cheesy bits around the edges. Leave to sit for 5-10 mins before serving.

1/2 cup chopped onion
1 package (6.4 ounces) lasagna dinner mix
2-1/4 cups hot water
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup sliced fresh mushrooms
1/2 cup chopped green onions
1 cup 4% cottage cheese
1/4 cup grated Parmesan cheese
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 10-12 minutes or until meat is no longer pink; drain. Stir in pasta from the dinner mix, contents of seasoning mix, water, tomatoes, spinach, mushrooms and onions. Bring to a boil. , Reduce heat; cover and simmer 10-13 minutes or until pasta is tender. 1 tablespoon extra-virgin olive oil
1 pound sweet Italian sausage, casings removed
1 medium onion, chopped
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 garlic cloves, minced
1/2 teaspoon red-pepper flakes, plus more to taste
2 tablespoons tomato paste
Two 28-ounce cans whole tomatoes
2 teaspoons dried oregano
For the filling:
Two 15-ounce containers part-skim ricotta cheese
1 1/2 cups packed basil leaves
1/2 cup grated Parmesan (about 2 ounces)
2 large egg yolks
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
For the assembly:
2 10-ounce packages frozen chopped spinach, thawed, or 1 1/2 pounds fresh spinach, steamed
Pinch kosher salt
Vegetable-oil cooking spray
9 no-boil lasagna noodles (such as Barilla)
1 pound fresh mozzarella, grated (about 4 cups)
Special equipment:
9 x 13 x 2-inch baking dish, preferably glass

Steps:

  • Preparation:
  • Position the rack in the upper third of the oven and preheat to 375°F.
  • Make the sauce:
  • In a large pot over medium-high heat, heat the oil. Add the sausage, onion and 3/4 teaspoon salt and 1/4 teaspoon pepper; cook, breaking up sausage with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Reduce heat to medium and add garlic, red-pepper flakes, and tomato paste; cook, stirring often, until fragrant, 1 to 2 minutes more. Add tomatoes (along with their juice) and oregano; bring to a simmer, and cook, breaking up the tomatoes with a wooden spoon until in small pieces, about 5 minutes. Taste and adjust seasoning, adding more red-pepper flakes if desired.
  • Make the filling:
  • In the bowl of a food processor, combine all of the filling ingredients and process until mostly smooth.
  • Assemble the lasagna:
  • Squeeze the spinach in a paper towel or clean dishcloth until very dry. Transfer to a bowl and season with a pinch of salt.
  • Coat baking dish with cooking spray and spread the bottom with 2 cups sauce. Top with a layer of three noodles, then a third of the ricotta mixture (about 1 1/3 cups), and a third of the spinach (about 2/3 cup). Sprinkle with 1 cup grated mozzarella.
  • Repeat twice more, skipping the mozzarella on the third layer. Top the lasagna with the remaining sauce. Sprinkle the remaining 2 cups mozzarella in clusters so some of the sauce peeks through.
  • Place the baking pan on a rimmed baking sheet. Lightly spray a piece of foil with cooking spray, cover the lasagna, and bake for 45 minutes. Remove the foil and continue baking until lightly browned and bubbly, about 20 minutes more. Let cool at least 10 minutes before serving.
  • DO AHEAD: The sauce can be prepared up to 2 days in advance and refrigerated. The filling can be prepared up to 1 day in advance and refrigerated.

THREE-CHEESE SKILLET LASAGNA

43 ounces canned whole peeled plum tomatoes (from a 28-ounce can and a 15-ounce can)
3 garlic cloves, finely chopped
3 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 large egg yolk
1 1/2 cups part-skim ricotta cheese, room temperature
1 box (12 ounces) no-boil lasagna noodles
1/2 pound fresh mozzarella, shredded
1/4 cup grated pecorino or Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. In a food processor, pulse tomatoes until coarsely pureed. In a large deep skillet, bring tomatoes, garlic, and oil to a boil. Season with salt and pepper. Reduce to a simmer and cook on medium until thickened, about 12 minutes (you should have 5 cups marinara sauce).
  • Meanwhile, in a medium bowl, mix together egg yolk, ricotta, and 1/2 teaspoon each salt and pepper.
  • Carefully pour sauce into a heatproof bowl and return 3/4 cup to skillet; spread sauce evenly. Add a single layer of noodles, breaking them up to fit. Top with half the ricotta mixture, spreading evenly. Follow with a second layer of noodles, then 1 1/2 cups marinara. Add a third layer of noodles, then remaining ricotta mixture. Follow with a final noodle layer, then remaining sauce. Sprinkle mozzarella and pecorino over top.
  • Bake lasagna until golden and bubbling, 30 to 35 minutes. Let stand 10 minutes before serving.
