Number Of Ingredients 14

1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature, plus more for the pans
3 cups water, plus 1 cup cool water
2 cups chopped pitted dates
1 cup granulated sugar
1/2 cup packed dark brown sugar
1/3 cup molasses
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon kosher salt
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • Preheat the oven to 375˚ F. Butter 18 muffin cups and line with paper liners. In a medium saucepan, bring about 3 cups water to a boil over medium heat. Put the chopped dates in a medium bowl and cover with the hot water. Let the dates soften, about 10 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and both sugars until light and fluffy, 5 to 8 minutes. Add the 1 cup cool water, molasses, eggs, vanilla and salt; beat briefly to combine (the mixture may look curdled and runny).
  • In another medium bowl, sift together the flour, baking soda, cinnamon, ginger and cloves. Add the dry ingredients to the wet ingredients and stir until just combined (do not overmix).
  • Drain the dates, discarding the liquid, and spread them out on a baking sheet to cool. Flatten the dates with the back of a spoon to crush any larger pieces. When cooled, stir the dates into the batter.
  • Divide the batter among the muffin cups, filling them almost to the top. Bake in the middle of the oven until the muffins are golden brown and spring back when gently pressed, 20 to 27 minutes. Let cool 10 minutes in the pan, then transfer the muffins to a rack to cool completely.

Steps:

  • Heat oven to 375°F. In large bowl, stir all ingredients until stiff dough forms.
  • Drop dough by teaspoonfuls 2 inches apart onto ungreased cookie sheet.
  • Bake 10 to 11 minutes or until light golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Sprinkle with powdered sugar.

3/4 cup packed brown sugar
1/2 cup sour cream
1/2 teaspoon vanilla
1 egg
1 1/4 cups Gold Medal™ all-purpose flour

1/4 teaspoon baking powder
1 package (8 ounces) chopped dates
1/2 cup chopped nuts
1/2 cup butter or margarine
3 cups powdered sugar
1 teaspoon vanilla
3 to 4 tablespoons hot water

Steps:

  • Heat oven to 400°F. Lightly grease cookie sheet. In large bowl, beat 1/4 cup butter, the brown sugar, sour cream, 1/2 teaspoon vanilla and the egg with spoon. Stir in flour, baking soda and baking powder. Stir in dates and nuts.
  • Drop dough by teaspoonfuls onto cookie sheet. Bake about 10 minutes or until golden brown. Remove from cookie sheet to wire rack. Cool completely, about 1 hour.
  • Meanwhile, in 2-quart saucepan, melt 1/2 cup butter over low heat. Stir in powdered sugar and 1 teaspoon vanilla until blended. Stir in water, 1 tablespoon at a time, until frosting is smooth and spreadable. Spread cooled cookies with Vanilla Frosting.

1/2 cup(s) chopped dates
1/2 cup(s) brown sugar
1/3 cup(s) butter, room temperature
5 fl. ounce(s) water
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) vanilla extract
3/4 cup(s) self rising flour
1/4 cup(s) whole wheat flour
1/4 cup(s) chopped pecans (could also substitute walnuts for pecans)
1 - egg, lightly beaten
1/4 cup(s) heavy cream

Steps:

  • Preheat the oven to 350F. Put the dates, half of the brown sugar, 1/4 of butter,and water in a medium saucepan. Stir over low heat until the butter has melted. Still over low heat, bring to a boil and boil for 2 minutes. Remove from heat, cool slightly, then stir in the baking soda and vanilla. set aside.
  • In a large mixing bowl, sift together the flours. Stir in the pecans. Add the beaten eggs to the date mixture. Add all at once to the flour mixture and stir just until moistened. Divide equally among the cups of a 6-cup muffin pan that has been greased, or sprayed. Bake until the tops spring back when lightly tapped, 20-25 minutes.
  • Meanwhile, put the remaining brown sugar and butter and the cream in a small saucepan. Stir over low heat until the sugar has dissolved. Bring to a low boil and boil for 1 minute. Let the cupcakes cool in the pan for 5 minutes, then brush with a little of the caramel sauce. Remove from the pan and serve warm with the remaining hot caramel sauce. Could also add a a dollop of whipped cream.

1 1/2 cups chopped dates
3 cups hot water
3/4 cup butter (1 1/2 sticks) or 3/4 cup margarine (1 1/2 sticks)
1 1/2 cups sugar
1 1/2 cups water
1 cup pecan pieces
2 extra large eggs
1 1/2 teaspoons baking soda
1 1/2 teaspoons vanilla
1/4 teaspoon salt
2 3/4 cups all-purpose flour

Steps:

  • In a medium bowl, combine dates and hot water. Let stand 10 minutes. Drain and discard water.Cover and refrigerate until cold.
  • Preheat oven to 350 degrees.
  • Line 12 medium muffin cups with paper liners or lightly grease.
  • In a large bowl, beat together butter and sugar until creamy.
  • Add water,pecans,eggs,baking soda, vanilla, and salt and mix until well blended.
  • Add flour and mix until just moistened.
  • Fold in cold dates and spoon into prepared muffin pans.
  • Bake 20-25 minutes or until a wooden toothpick inserted into the center comes out clean.
  • Let stand a few minutes before removing from pan.

1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

1/4 cup whole milk
1 cup chopped nuts

Steps:

  • In a small saucepan, combine molasses and water; add raisins. Bring to a boil. Reduce heat; simmer for 5 minutes. Remove from heat; stir in candied fruit and vanilla. Cool., Meanwhile, in a large bowl, cream butter and sugar until light and fluffy. Add 1 eggs at a time, beating well after each addition. Combine the flour, baking soda and spices; add to the creamed mixture alternately with milk, beating well after each addition. Add fruit mixture, mixing well. 1/2 cup boiling water
1/4 cup shortening
1/2 cup sugar
1 egg

Steps:

2/3 cup vegetable oil
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract

1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees, with racks in upper third and middle. In a medium bowl, whisk together flour and baking powder. Add dates, pecans, and raisins, and stir with a wooden spoon until fruit and nuts are coated. In a small bowl, whisk together eggs, 1/2 cup sugar, oil, lemon juice, vanilla, and salt. 1 cup crème fraîche

Steps:

  • Preheat oven to 325°F. Line mini muffin tins with paper liners. Whisk together flour, baking soda, baking powder, salt, and cardamom.
  • In a large bowl, combine dates with the boiling water and butter. Stir until butter is melted and dates are soft, about 2 minutes. Stir in brown sugar, beaten egg, and vanilla. Add flour mixture, and stir just until combined. Stir in walnuts.
