An easy and quick date nut loaf served with a warm brown sugar sauce.

1 cup dates, pitted and chopped
1 cup water
½ cup butter
1 cup white sugar
1 teaspoon baking soda
1 ½ cups all-purpose flour
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped walnuts
¼ cup butter
⅓ cup heavy cream
½ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
  • Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
  • To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

One of the best recipes for date loaf...this recipe makes four mini loaves, if desired you may freeze a couple, they freeze very well --- servings is only estimated, raisins may be replaced for the dates or for the holidays use candied cherries in place of the dates, or half of each.

2 cups flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1 cup pitted dates, chopped
1 cup chopped pecans
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1/4 teaspoon almond extract
2/3 cup milk

Steps:

  • Set oven to 350 degrees F.
  • Grease four 6x3-inch mini loaf pans.
  • In a bowl sift first 5 ingredients.
  • Combine 1/4 of the flour mixture with the chopped dates and nuts; toss to coat.
  • In another bowl combine butter and sugar; beat with an electric mixer until light and fluffy.
  • Add in eggs and beat well then add in the vanilla, almond extract, and beat for another 2-3 minutes.
  • Add in dry ingredients alternately with milk beating after each addition.
  • Fold in the dates/flour mixture by hand, then spoon into prepared mini loaf pans.
  • Bake for 25-30 minutes or until loaves test done.

My childhood friend's mom used to make this delicious old fashioned loaf. We love it with cream cheese smeared on it. It is dark, moist and yummy.

2 c boiling water
2 tsp baking soda
1 1/2 c chopped walnuts
1/2 lb raisens
1 lb dates
3 1/2 c flour
1 1/2 c sugar
1 tsp salt
2 tsp vanilla
2 large eggs
5 Tbsp melted butter

Steps:

  • 1. 2 greased loaf pans Put baking soda in boiling water and pour over fruit and nuts. Let stand one hour. Beat egg whites until stiff. Combine yolks, salt and all liquids and alternately mix with dry ingredients. Fold in egg whites and then the melted butter. Bake for 1 hour at 375.

1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 cup dark brown sugar, packed
1/3 cup tahini (sesame paste)
1 egg
1 cup plain yogurt
1/2 cup chopped dates
1/2 cup chopped pistachio nut
3 ounces bittersweet chocolate (broken into small chunks)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350ºF.
  • In a small bowl combine flour, baking soda, salt, and cinnamon. In a large electric mixer bowl cream together the tahini and brown sugar; add the egg and beat until smooth.
  • Now add the flour mixture and yoghurt alternately, beating well after each addition, ending with youghurt. Add the vanilla and beat until smooth.
  • Add the Pistachios, dates, and bittersweet chocolate chunks and mix until well blended.
  • Turn ito a greased and floured loaf pan and bake for about an hour at 350ºF or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes and then turn out onto wire rack to cool completely.

18 Dates: remove seed - chop into small pieces.
4 T. Softened Butter
1 ½ t. Baking Soda (stir into 1 T. Milk)
¾ t. SALT
¾ C. Brown Sugar (2 small hand fulls)
1 C. Very Hot Coffee
1 Large Egg
1 T. Boiled Apple Cider concentrate
½ t. Cinnamon
1 t. Baking Powder
1/4 C. Buttermilk Powder
1¾ C. Unbleached All-Purpose Flour
1 C. Pecans (or Walnuts)

Steps:

  • Combine dates, butter, baking soda, salt and brown sugar in a bowl. Add hot coffee over date mixture. Stir well. Heat mixture for 3 minutes in the microwave. Cool for 15 minutes. Stir egg in a separate bowl with Boiled Apple Cider. Add to cooled date mixture. Stir in the dry ingredients: cinnamon, baking powder, unbleached All-Purpose flour, buttermilk powder, and coarsely chopped Pecans. Beat on low to blend ingredients. Be careful not to over mix; too much mixing will interfere with leavening. Preheat oven to 350 degrees. Lightly grease an 8 1/2" x 4 1/2" loaf pan. Pour the batter into the pan, gently tapping the pan on the counter to settle the batter. Bake the bread from 45 to 55 minutes. Loaf is done at 180 to 200 degrees measured one inch from edge with an instant read thermometer. After 10 minutes gently turn the bread out of the pan onto a rack to cool. Cool completely. Continue cooling in the refrigerator. Do not seal or slice before fully cooled. Slice into 12 slices and spread with cream cheese if desired.

1 C dates, chopped (about 6 oz whole)
1 C strong coffee
zest of 1 large orange
1 t baking soda
5 oz (10 T) butter
1/2 C sugar
3/4 C dark brown sugar
1 egg @ room temperature
1 1/4 C flour
1/4 C cocoa powder
1/2 t salt
1/4 t cinnamon
pinch of freshly grated nutmeg
2 T milk
2 T Amontillado sherry (optional)
1 t vanilla
3/4 C toasted walnuts, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Toast the walnuts for just about 8 - 10 minutes. Prepare an 8 1/2" x 4 1/2" loaf pan with oil and a piece of parchment paper large enough to form an overhang along the length of the pan. Pit the dates and remove the stems. Chop into coarse pieces and place in a medium bowl. Cover the dates with 1 cup of strong coffee. Add the zest of 1 orange and the baking soda. Melt butter and beat in the sugars. Add the egg and beat until the mixture is emulsified. Add the date mixture and combine thoroughly. Sift the flour, cocoa powder, salt, cinnamon and nutmeg. Combine milk, liquor (if using) and vanilla. Alternate adding half the flour and all the milk mixture, beginning and ending with the flour. Once all the ingredients have been added, mix just a minute or so until everything is fully combined. Fold in the toasted walnuts. Pour the mixture into the prepared loaf pan. Bake the cake for about 55 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Cool the cake on a wire rack for about 30 minutes. Remove it from the pan, carefully peel off the parchment paper and cool the cake completely.

This recipe uses twice the amount of dates as a typical date loaf. The author credits the original recipe to her sister. I reduce the amount of sugar to 1/2 c. and use 1 1/4 c. whole wheat flour plus 1/4 cup ground flaxmeal to make this a bit healthier.

1 lb dates, chopped
1 teaspoon baking soda
1 cup boiling water
1 tablespoon unsalted butter
1 cup sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 dash cinnamon
1 dash nutmeg
1 dash salt
1 1/2 cups flour
1/2 cup chopped toasted walnuts

Steps:

  • Place the dates in a medium bowl and sprinkle with the baking soda, then pour the boiling water over. Set aside.
  • Preheat the oven to 350 degrees. Grease a large loaf pan. The original recipe calls for a 2 pound coffee can, but I never have one of those.
  • In a mixing bowl, cream butter. Stir in sugar, egg, vanilla, spices, and salt.
  • Add half the flour, then stir in the dates.
  • Add remaining flour and nuts.
  • Place batter in prepared pan.
  • Bake until a cake tester comes out clean, usually around 50 minutes to an hour. The original recipe calls for a 90 minute bake time, but I don't think it needs that much time.
  • Cool ten minutes before removing from pan.
  • Slices better the next day.

1 C mayonaise
1 tbl bking sda
1 C chopped nuts

  • Grease and lightly flour a 9X12 loaf pan. Mix dry ingredients in a bowl set aside.. Place chopped dates and baking soda in small saucepan w/ 1/3 c water.. bring to a boil. Set aside to cool. Combine date mixture, mayo,vanilla , nuts and dry mix together.Stir well. Pour into baking pan, Bake at 340 for 50 minutes. When done.cool and invert on baking rack.

I did cook this in my Ninja and the recipe is from my Ninja cookbook. I only changed a few things just to add more flavor. This would be wonderful for breakfast...

2 c all purpose flour
1 c dates, chopped - dried and pitted
1/2 c orange juice
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon, ground
1/2 tsp baking soda

2/3 c pecans, chopped
2 Tbsp butter, softened
2/3 c brown sugar, firmly packed
1 medium orange, zest of
1 large egg
cooking spray & 1 tbsp of flour (for pan)

Steps:

  • 1. 1 Ninja Cooking System
  • 2. Spray 9X5 loaf pan with cooking spray and coat with flour. Stir dates, oj and vanilla in a bowl. (I didn't have enough dates and added some chopped figs.)
  • 3. Stir 2 cups of flour, baking powder, cinnamon, baking soda, and salt in bow and add pecans. (I used 1/2 pecans and 1/2 walnuts.)
  • 4. Beat butter, brown sugar, and egg in bowl with mixer until creamy. Stir in the date mixture and orange zest.
  • 5. Gradually add flour mixture, stirring well after each addition. Spoon the batter into the loaf pan. The batter is very thick and I just pressed it lightly down into the pan.
  • 6. Pour 2 cups of water into pot. Place rack into pot and place loaf pan on rack. Set OVEN to 350 degrees and bake for 35 minutes. Cover and cook for amount of time or until a toothpick inserted in center of pan comes out clean. Remove pan from pot and let cool on rack for 5 minutes and then remove loaf from pan and cool completely.
  • 7. I added a cream cheese icing that is very light but went well with this bread.
