1 cup dates, pitted and chopped
1 teaspoon baking soda
1 cup water
1 cup white sugar
2 cups all-purpose flour
1 cup mayonnaise
1 pinch salt
½ cup packed brown sugar
½ cup chopped walnuts
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan.
  • Bring water to a boil. Pour over chopped dates and baking soda. Let stand until cool. Stir in the sugar, flour, mayonnaise, and salt. Mix until just combined. Pour batter into prepared pan.
  • Mix the brown sugar, chopped nuts, and chocolate chips together. Sprinkle over top of batter.
  • Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes.

1 teaspoon baking soda
1/2 cup walnuts
1 1/2 cups cake flour
1 teaspoon baking powder
2 tablespoons butter

1 egg

1/2 cup walnuts
3/4 cup sugar
2/3 cup water

Steps:

  • Preheat oven to 350 degrees F.
  • Prepare 8 inch cake pan and proceed as usual.
  • Mix first three ingredients together and let cool completely.
  • Add walnuts, cake flour and baking powder and stir gently.
  • Add butter sugar, salt and.
  • egg.
  • Stir completely and bake in prepared pan until tester comes out clean.
  • Topping: Cook until syrupy and spread on warm cake.
  • Serve cooled topped.
  • with fresh whipped cream, if desired.

It looks like a standard fruit cake, but the rich, moist texture of apples, dates, raisins and nuts makes it a very satisfying dessert. A slice of this cake, topped with whipped cream, whipped topping or a big scoop of ice cream will have your guests coming back for more.

1 cup raisins
2-1/2 cups all-purpose flour, divided
1/2 cup butter, softened

1 cup chopped peeled tart apple
1 cup chopped walnuts

Steps:

  • In a small bowl, combine dates and raisins. Add 1 tablespoon flour and toss to coat; set aside. , In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the baking soda, salt and remaining flour; add to creamed mixture alternately with boiling water. Stir in the apple, walnuts and reserved date mixture., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

2 cups white sugar
6 eggs
3 ⅓ cups self-rising flour
1 cup milk
1 tablespoon vanilla extract
1 tablespoon lemon extract
2 cups dates, pitted and chopped
2 cups chopped pecans
2 cups orange juice
3 ½ cups confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10 inch tube pan and line the bottom with parchment paper. Grease the paper. Dredge the dates and nuts in the flour and set aside.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well. Add flour, alternating with milk, and mix well. Add vanilla and lemon flavorings. Fold in nuts and dates.
  • Pour batter into a 10 inch tube pan. Bake at 350 degrees F (165 degrees C) for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and pour orange syrup over cake immediately. Cool in pan for 30 minutes, then remove from pan. Let stand upside-down overnight, then turn over and serve.
  • To make the orange syrup: In a medium bowl, combine orange juice and confectioners sugar. Mix until smooth.

1 qt pecans
1 qt chopped fresh dates
1 c self-rising flour, plus flour to dust
1 c sugar
2 stick butter, softened unsalted
2 eggs
1 tsp vanilla

Steps:

  • 1. Dust pecans & dates with flour. Shake off excess. Set aside. Note: I like my dates cut fairly small.
  • 2. Mix together; flour, sugar, butter, eggs, and vanilla. Combine pecan and date to mixture. This will be very stiff. ***DO NOT ADD LIQUID. Note: dough is so stiff you may wish to mix with your hands.
  • 3. Using a bundt pan, butter and flour pan. Add the dough.
  • 4. Place a pan of water on the rack below the bunt pan to keep it moist. Bake at 350 for 1 hour. Let cool 10 minutes before removing from pan.

This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!

1 1/2 cups sugar
3 eggs
3 cups flour
1/2 teaspoon baking soda
1 cup buttermilk
6 1/2 ounces dates (diced)

1 orange, rind of, grated
rind of another orange, grated
1/2 cup orange juice
1 cup powdered sugar

Steps:

  • Cream the butter and sugar.
  • Add eggs.
  • Sift flour and soda together.
  • Add 2 cups of the sifted flour and soda alternately with the buttermilk.
  • Add dates, nuts, and grated rind.
  • Grease and flour a tube pan or angel food cake pan.
  • Bake in 350 degree oven for approximately 1 hour.
  • While cake is baking, grate the rind of another orange and add to orange juice and sugar.
  • When cake is done, pour half of the sauce mixture gradually over the cake as soon as it is removed from oven.
  • The cake will absorb this mixture.
  • Wait about 15 minutes and invert the pan on a cake plate.
  • Pour remaining mixture on top and sides.
  • This cake is better when served cold.
  • In fact, don't even try to slice while still warm.
  • The cake will stay fresh for one to two weeks in the fridge.

1 c pitted and chopped dates
2 tsp baking soda
1 c boiling apple juice or boiling water
2 c all purpose flour
1/2 c light brown sugar,light packed
1/2 c granulated sugar
1 Tbsp molasses
1 c mayonnaise-must be mayonnaise only
1 c chopped pecans or walnuts
LEMON SAUCE:
1/4 c water
1 large egg,beaten
1 c granulated sugar
1/2 c butter
1 tsp lemon zest, grated
3 or 4 Tbsp lemon juice

Steps:

  • 1. Heat oven to 350^. Grease and flour or spray a 9x13-inch baking pan- I used my pineapple up-side down cake pan. --- In the large mixer bowl, mix the dates and 1 teaspoon of the baking soda and the boiling apple juice or water. Let set till cool.
  • 2. Cake: When date mixture is cool, add flour and remaining ingredients, except nuts, to the bowl and beat on medium speed until mixture is well blended. Stir in the nuts. Spread batter in prepared pan. Bake 45 minutes, or until a toothpick inserted in center comes out clean.
  • 3. Sauce: While cake is baking . Mix beaten egg and water in a medium saucepan. Add the sugar, butter and lemon peel and lemon juice . Heat to boiling over medium heat, stirring constantly. Serve sauce over warm cake . Refrigerate any leftover sauce.

My mom used to make a cake that contained dates, nuts and maraschino cherries. I don't have her exact recipe so I recreated it by substituting a similar recipe for a delicious date and nut cake and added maraschino cherries. (The basic cake recipe is adapted from Maida Heatter.) Note re maraschino cherries: Most of the brands available in the U.S. are an imitation of an Italian product and contain lots of preservatives. Trader Joe's sells a version of maraschino cherries without all the chemicals.

This is an easy home made cake with a delicious crunchy topping on a super moist cake! It is not super sweet but rather you taste the cocoa. People tend to put to much of the toppings on, big mistake stick to the recipe amounts! Dates are some times hard to find, so I order my chopped dates on line in 8oz pks. Dromedary are my favorite, but Sun Maid , or Dole are good too.Enjoy!

  • Topping- Stir together 1/2c sugar, 1c choc chips, 1/2c chopped walnuts. Mix together and sprinkle over cake.
  • Bake at 350 for 35-40 min or untill toothpick comes out almost clean. Do not over bake!

1 1/2 cups chopped dates
6 tablespoons water
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
3/4 cup chopped walnuts
1 tablespoon dry breadcrumbs
1 1/4 cups semolina (can use farina or regular Cream of Wheat)
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 cup granulated sugar
1/2 teaspoon vanilla
1/2 cup butter, plus
1 tablespoon butter, melted

Steps:

  • Combine dates and water in a small saucepan. Bring water to a boil; simmer 5 minutes, stirring constantly. Stir in honey, lemon juice, cinnamon, and nuts. Remove from heat.
  • Preheat oven to 400ºF. Butter a round 8-1/2" cake pan; sprinkle with breadcrumbs.
  • In a large bowl, combine semolina (or farina, or Cream of Wheat), flour, baking powder and sugar. Sprinkle vanilla over the mixture. Stir in butter.
  • Spoon half of the mixture into the buttered cake pan; press over bottom and up side of pan. Spoon date mixture evenly over the top. Sprinkle the remaining flour mixture over the date mixture.
  • Bake in center of the oven for 35 to 40 minutes, or until golden brown. Cool, then slice.

1 cup dates, pitted and chopped
1 cup water
1/2 cup butter
1 cup white sugar
1 teaspoon baking soda

1 egg, beaten
1 teaspoon vanilla extract

1/3 cup heavy cream
1/2 cup brown sugar

Steps:

  • 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
  • 2. Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
  • 3. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
  • 4. To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.

1 cup boiling water
2 cups all-purpose flour

1 cup mayonnaise
1 cup chopped walnuts
¼ cup water
1 egg, beaten
1 cup white sugar
½ cup butter
¾ teaspoon lemon zest
3 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 x 13 inch pan.
  • In a large bowl, mix dates, 1 teaspoon soda, and boiling water. Cool.
  • Add flour, 1 cup sugar, mayonnaise, and remaining 1 teaspoon soda. Use medium speed of mixer, and beat until mixture is well blended. Stir in nuts. Spread batter in prepared pan.
  • Bake for 45 minutes, or until a toothpick inserted in center comes out clean.
  • While the cake is baking, prepare the lemon sauce. Mix beaten egg and 1/4 cup water; place in a medium saucepan. Add 1 cup sugar, butter or margarine, and lemon peel and juice. Heat to boiling over medium heat, stirring constantly. Serve sauce over warm cake. Refrigerate any leftover sauce.
