- Cut each bacon strip in half. In a large skillet, cook bacon in batches over medium heat until partially cooked but not crisp. Remove to paper towels; drain drippings. Crumble chorizo into the same skillet; cook and stir until fully cooked. Drain. Stir in cream cheese., Carefully cut a slit in the center of each date; fill with cream cheese mixture. Wrap a piece of bacon around each stuffed date; secure with toothpicks. Place on ungreased baking sheets. Bake at 350° for 12-15 minutes or until bacon is crisp.

- 1. Partially cook the bacon on a sheet pan in 350 deg oven for approx 5 minutes. 2. Cook the chorizo to render excess fat. If the chorizo is in links, remove the meat from the casings before cooking. 3. Remove the cooked chorizo from the pan and drain. Then blend the cream cheese into the meat. 4. Cut the dates open, butterfly style. Stuff each date with a portion of the chorizo mixture. 5. Wrap each date with a half slice of bacon, securing with a toothpick. 6. Arrange on a rack placed over a sheet pan. Bake 350 deg until the bacon is crisp and the dates are hot, approx 15 to 20 minutes.
