Great-Grandma Cathy's Date Loaf Candy image

Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

2 cups white sugar
1 cup milk
¼ cup butter
1 cup chopped dates
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Stir sugar, milk, and butter together in a saucepan; bring to a boil without stirring once the boiling begins. Heat until a small amount of syrup dropped into cold water forms a rigid ball or until the mixture reaches 250 degrees F (120 degrees C), about 20 minutes. Immediately remove saucepan from heat and stir dates, pecans, and vanilla into the milk mixture.
  • Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log.
  • Refrigerate until hard, 8 hours to overnight. Remove log from cloth and slice.

TEXAS DATE LOAF CANDY

2 cups sugar
1 cup milk
1 8-ounce package pitted dates, cut up into pieces
1 tablespoon butter
1 cup chopped pecans
1 teaspoon vanilla

Steps:

  • In a heavy large saucepan combine sugar and milk. Stir over low heat, not letting it boil, until sugar is dissolved. Raise heat to medium and bring to a boil. Add chopped dates and continue to boil until it reaches the soft ball stage (238° F.). Remove from heat and stir in butter, vanilla and pecans. Cool to lukewarm. Tear off a sheet of waxed paper and have ready for rolling the candy (or do the old-Texas way of soaking a clean non-terry cloth dish towel in cold water and wring it out). Beat candy with a large spoon until mixture becomes creamy and starts to thicken like fudge. Pour mixture out on the waxed paper or damp dish towel and roll up into a long roll about 1½-inches in diameter. Allow to harden. It may be refrigerated to speed the process. Then unroll and cut into slices. Delicious!

ANCIENT EGYPTIAN "DATE CANDY" (FOR 2 PEOPLE)

Figs, dates, pomegranates and grapes were the only fruits that could be grown in the hot climate. From: Ancient Egyptian Food and Drink. This recipe was from 1600BC and was found on an ostraca. *NOTE* There are no times given but I'm thinking it would go pretty quickly with the food processor.

1 cup confectioners' sugar
1 cup chopped dates
1 cup chopped walnuts
1 tablespoon butter, softened
1 teaspoon vanilla extract
1 pound white candy coating, coarsely chopped

Steps:

  • In a bowl, combine the first six ingredients. Shape into 3/4-in. balls; place on a waxed paper-lined baking sheet. Refrigerate for 1-2 hours or until firm. , In a microwave, melt candy coating; stir until smooth. Dip balls in coating and place on waxed paper to harden.

2 tablespoons Karo syrup
1 cup water
1 (8 ounce) package chopped dates
1 1/2 cups chopped pecans

Steps:

  • You will also need: 1 clean damp cloth.
  • Cook first 3 ingredients, in a med boiler on top of stove.
  • Bring to a rolling boil, after 3 minute of this, put a spoon full in a bowl of cold water and check for a soft ball.
  • (It should be firm enough to pick up with your fingers.) Keep checking till you get the soft ball.
  • Then add the dates, and mix until dates have melted.
  • Then add nuts and roll out onto damp cloth, and roll into a log shape.
  • Put into Refridgerator until cold,cut into thin slices.

1 1/2 cups milk
1 cup dates, seeded, but whole
1 tablespoon butter
1 cup nuts, coarsely chopped

Steps:

  • Put milk and sugar in pan and as soon as it boils, add dates and butter.
  • Boil until it forms a good soft ball in cold water (watch carefully but don't stir more than absolutely necessary).
  • Remove from fire; add nuts and stir. Beat until very stiff.
  • Dip out on a cloth wrung from cold water; knead and mold into a long roll.
  • Let stay in damp cloth until hard and cold.
  • Slice and serve.

I always thought it was some exotic mystery thing, because she kept it wrapped in a damp towel on top of the fridge (I think the towel might have been saturated in whiskey but not sure). Anyway, we were not allowed to touch it; she only gave us a small piece now and then.

1 c milk (mother used canned evaporated milk)
1 tsp butter
1 c chopped dates
2 c chopped pecans

Steps:

  • 1. Boil sugar and milk until the mixture forms a soft ball in water (or 236º on candy thermometer) Add dates and pecans and cook until a firm ball forms in water (or 240º on thermometer)
  • 2. Remove from heat, add butter and let stand until lukewarm Beat with wooden spoon like fudge until mixture begins to thicken Pour onto a damp cloth and roll into a loaf (in damp cloth)
  • 3. Place in refrigerator until cold and firm, then slice

  • 1. Dampen kitchen towel, and wring out. Sprinkle with sugar.

Steps:

  • Butter a 12x15 inch sheet of aluminum foil and dust generously with confectioners' sugar.
  • In a saucepan over medium-high heat, mix together the sugar and evaporated milk. Stir frequently and bring to softball stage of 235 degrees F. Stir in dates and nuts; allow mixture to cool.
  • Form the candy into a roll about 1-1/2 inches in diameter and wrap in the prepared foil; refrigerate until firm. Slice thinly with a knife dipped in hot water to serve.

I take no credit for this recipe whatsoever. It was found on a tomb wall in Egypt during an archaeological dig. All I did was adapt the instructions to read a little easier; steps and ingredients are the originals. It is a yummy candy and I just had to share the recipe. If you like dates or figs, you'll love it!

1 c fresh dates
1 tsp ground cinnamon
1 tsp ground cardamom
2 c almonds, chopped
confectioners' sugar

Steps:

  • 1. Mix the dates and a little bit of water in the food processor to a thick paste. Add the cinnamon and cardamom and mix well. In a pie plate or similar flat dish, spread one cup of ground almonds into a layer. Sprinkle a light layer of confectioner's sugar over the almonds. Spread the date mixture over the top, being careful not to disturb the almond layer underneath. Sprinkle another light layer of confectioner's sugar over the date paste. Top with the rest of the ground almonds, pressing lightly into the pan. Keep in the refrigerator to prevent it from spoiling and to keep it from being too sticky. Cut into small pieces.

1 c nuts (crushed)
1 lb pitted dates
1 tsp vanilla
1 dutch oven or very large sauce pan
several non-terry dish towels - wet - laid flat on counter (ready for candy)
1 wooden or strong spoon

Steps:

  • 1. Bring Sugar, Butter and Milk to rolling/bubbling boil.
  • 2. Add dates, crushing against sides of pan (Tough!)
  • 3. Cook to Soft Ball stage. (Drop tiny bit in glass of cold water. When forms a soft ball - NOT hard - Remove from heat and BEAT until thick and pour-able.
  • 4. Work fast here. Pour a long roll onto wet towel near long side, leaving space at each end. Fold ends in, and roll to other side. Put each roll in freezer
  • 5. Slice frozen (or close to it), and serve.
