EASY TACO CASSEROLE RECIPE

This taco casserole recipe has tender ground beef, all the best taco flavors, tons of cheese, and a layer of Doritos! It's the ultimate easy comfort food for busy families.

1 tablespoon olive oil
1 pound lean ground beef
2 cups crushed Doritos (I used Nacho Cheese flavor)
1/2 medium onion (chopped)
1 tablespoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1 (14 fluid ounce) can black beans (drained & rinsed)
1 (12 fluid ounce) can corn (drained)
1 (15.5 ounce) jar salsa (use your favorite kind)
2 cups shredded Tex-Mex cheese blend (or use cheddar)
Toppings (optional, to taste): tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce, etc.

Steps:

  • Preheat oven to 350F and move the rack to the middle position. Prep your ingredients.
  • Add the oil and ground beef to a skillet. Cook, breaking up the meat as you go along, for 5 minutes over medium-high heat.
  • Stir in the onion, chili powder, garlic powder, and ground cumin, and continue cooking for another 5 minutes.
  • Meanwhile, add the crushed Doritos in an even layer to the bottom of a 9x13 (or similar size) casserole dish.
  • If there's a lot of excess fat in the skillet, spoon most of it out. Stir in the beans, corn, salsa, and half the cheese. Let it warm through (until the cheese melts).
  • Spoon the beef mixture evenly over the Doritos.
  • Top the casserole with the remaining cheese. Bake, uncovered, for 15-20 minutes or until it's warm and the cheese is nice and melty. Meanwhile, prep the toppings.
  • Serve casserole as-is or with your favorite toppings.

1 pound ground beef (, (85/15))
1 yellow onion (, diced)
2 cups salsa
3 tablespoons taco seasoning (, or one packet)
1/2 cup water
2 cans refried beans
2 cups cheddar cheese (, shredded)
2 cups Fritos chips
1 cup romaine lettuce (, thinly sliced)
1 vine tomatoes (, diced)
1/2 cup black olives (, sliced)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
  • Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
  • Drain excess fat before adding in taco seasoning and water.
  • Stir well and cook until water has evaporated then add in the salsa and stir.
  • Layer the baking dish with refried beans, taco salsa mixture and cheese.
  • Bake, uncovered for 20 minutes, top with Fritos and bake an additional 10 minutes.
  • Top with lettuce, tomato and olives before serving.

2/3 cup all-purpose flour
6 tablespoons granulated sugar
2 tablespoons Dutch-process cocoa powder
2 teaspoons baking powder
1/4 teaspoon kosher salt
1/4 cup (4 tablespoons) unsalted butter, melted
1/4 cup whole milk
1 large egg
Nonstick cooking spray, for the pizzelle maker
2 1/2 cups chopped fresh strawberries (about 14 ounces)
2 tablespoons granulated sugar
1 1/2 tablespoons chopped fresh mint
7 1/2 cups vanilla ice cream, softened

Steps:

  • For the pizzelles: Preheat a pizzelle maker according to the manufacturer's instructions.
  • Whisk together the flour, sugar, cocoa powder, baking powder and salt in a medium bowl. Whisk together the melted butter, milk and egg in a small bowl; add to the flour mixture and whisk until blended and smooth.
  • Coat the pizzelle maker with cooking spray. Spoon 1 tablespoon batter into the hot pizzelle maker; cook until set and slightly darker in color, 45 to 50 seconds. Use a small offset spatula to remove the pizzelles, and immediately drape the pizzelles over the handle of a wooden spoon (3/4 inch to 1 inch in diameter) to form a taco shape; let stand until completely cool, about 3 minutes. Transfer to a wire rack and repeat with remaining batter.
  • For the tacos: Combine the strawberries, sugar and mint in a medium bowl; let stand about 10 minutes, stirring occasionally to dissolve the sugar.
  • Spoon 3 small scoops vanilla ice cream (about 2 tablespoons per scoop) into each pizzelle taco; top each with about 1 1/2 tablespoons of the strawberry mixture.

2 tablespoons vegetable oil, plus more for greasing dish
1 1/2 pounds ground beef
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 medium onion, finely diced
4 cloves garlic, minced
One 15-ounce can pinto beans, strained and rinsed
2 cups jarred tomato salsa, plus more for serving
6 cups yellow corn tortilla chips (about 5 ounces), plus more for serving
3 cups shredded Cheddar and Monterey jack blend
3 cups shredded Cheddar and Monterey jack blend
1 cup sour cream, stirred well for easy dolloping
1 cup shredded iceberg lettuce
2 plum tomatoes, diced

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

1 (15.25 ounce) package devil's food cake mix
1 ¼ cups cold brewed coffee
1 cup oil
4 large eggs
½ cup heavy whipping cream
1 (6 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with nonstick spray.
  • Combine brownie mix, cake mix, cold coffee, oil, and eggs in a large bowl; beat with an electric mixer until well combined. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool on a wire rack for 10 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • Heat whipping cream for ganache in the microwave until hot, 2 to 3 minutes. Add chocolate chips and stir until melted.
