This recipe came from a night when my husband challenged me to a grilled cheese sandwich cook-off. We each made a dinner and dessert grilled cheese.

2 c frozen raspberries
2/3 c sugar
2 tsp lemon juice
1/2 Tbsp cornstarch
4 oz dark chocolate-chopped
1 pkg brie cheese, sliced
1/2 c butter-melted

Steps:

  • 1. In a saucepan, combine raspberries, sugar, lemon juice, and cornstarch. Cook over medium heat until thick and bubbly. Remove and cool.
  • 2. Spread 1 TBSP raspberry onto each slice of cake. Place 3 slices of brie onto each slice of cake. Place 1 ounce of chocolate chunks on the bottom slice of cake. Place the top slice of cake onto the sandwich. Brush sandwich with melted butter. Grill at 325 degrees for 2-4 minutes. Flip and repeat. If bread is browning too quickly, reduce heat. Grill until cheese melts.

2 tablespoons seedless red raspberry preserves
4 slices sourdough bread
2 tablespoons chopped pecans
1 -2 tablespoon sliced green onion
4 slices muenster cheese or 4 slices baby swiss cheese
3 tablespoons butter or 3 tablespoons margarine, softened

Steps:

  • Spread preserve onto 2 slices of sourdough bread.
  • Sprinkle with pecans and green onions.
  • Lay two cheese slices on each of the two bread slices.
  • Top with remaining bread slices to make sandwiches.
  • Spread butter on the outside of each sandwich.
  • Grill on a hot griddle or in a hot skillet for 3-4 minutes on each side or until golden brown.
