Easy-to-make and very delicious Danish recipe for Apple Trifle. This recipe is very popular in Denmark and was been used for many years.

5 apples
50 g granulated sugar
1/2 dl water
1 vanilla bean
100 g hazelnuts
50 g granulated sugar
3 dl heavy cream ((for whipped cream))

Steps:

  • Rinse and peel the apples. Remove the core and cut the apples in smaller pieces.
  • In a sauce pan; add water, the apple pieces, sugar and the seeds from a vanilla bean. Also add the empty vanilla bean, it still have a lot of flavor.
  • Heat up the apple mixture and let it simmer until the apples are tender. If the apples are sour you should add a little extra sugar. When the apples are done; set aside to cool off completely.
  • Pour the hazelnuts in an oven proof dish and bake them for 10 minutes at 200 C (400 F).
  • Pour the warm hazelnuts in a clean dishcloth and rub them well until most of the skin are removed.
  • Pour the sugar on a frying pan and slowly melt it at medium heat. Do not stir in the sugar while it is melting. Let the sugar melt completely and become light brown.
  • Add the skinned hazelnuts to the molten sugar and stir in the mixture for about 1-2 minutes. Pour the hazelnut croccante on a sheet of parchment paper and let it cool off.
  • When the hazelnut croccante is cooled off; chop it using a food processor or similar.
  • Whip the heavy cream into a whipped cream.
  • Now the apple trifle are to be assembled; Use two large or four smaller glasses; Start with a layer of apple puree, then some hazelnut croccante and then some whipped cream. Continue until you have the amount of layers you like. We normally have two layers. Finish off with some of the hazelnut croccante. Serve right away or keep it refrigerated.

1 loaf white bread, stale and cut into cubes
2 (16 ounce) cans applesauce
1/2 lb butter, divided
1/2 cup sugar, divided
1 tablespoon cinnamon, divided
1/2 pint whipped topping
1/2 cup maraschino cherry, well drained
1/4 cup walnuts, chopped

Steps:

  • Dry the bread in a low oven, when sufficiently dry crush into crumbs.
  • Melt 1/4 pound of the butter in a skillet, and add the bread crumbs. Stir to brown over medium heat. Add 1/4 cup sugar and 1/2 tablespoon cinnamon, stir to keep from sticking.
  • Pat 1/3 of the crumb mixture into a greased pie pan, smoothing down.
  • Spread over this one can of the applesauce, dot with 1/3 of the remaining butter and sprinkle half the remaining sugar and cinnamon.
  • Repeat, then finish with the last third of the crumbs. Dot with last of the butter.
  • Bake at 325 degrees for 45 minutes.
  • Cool, then turn out onto a plate and refrigerate overnight.
  • Before serving coat with whipped topping and garnish with cherries and nuts.

2 tablespoons granulated sugar
1/2 teaspoon pure vanilla extract
1 1/4 cups dried breadcrumbs
1/2 cup margarine, melted
1 cup whipping cream, whipped

Steps:

  • Preheat oven to 450 degrees F, then butter a 1 1/2-quart ovenproof dish.
  • In a bowl, combine applesauce, sugar & vanilla extract.
  • In the prepared baking dish, lay down alternate layers of breadcrumbs & applesauce, ending with breadcrumbs.
  • Pour melted margarine over the top & bake 25-30 minutes or until golden brown.

2 eggs, well beaten
3 ounces self-rising flour
4 ounces ground almonds
4 ounces milk
1 teaspoon vanilla extract
1 tablespoon boiling water
1/2 teaspoon baking powder
8 stoned prunes, chopped
4 ounces shelled walnuts, finely chopped and mixed with 2 tablespoons sugar
2 green apples, cored and sliced
3 tablespoons sugar
Ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F and butter a 10-inch round cake pan.
  • Cream together the butter, sugar, eggs, flour, almonds, milk, vanilla, boiling water and baking powder in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into the prepared pan.
  • Scatter the prunes evenly on the batter. Spoon over walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake for 45 minutes.
  • Sprinkle the surface with sugar and cinnamon. Dot with butter and bake for 20 to 25 minutes more, or until a skewer comes out clean. Cool in the tin.

Yield Makes 5 to 6 servings

Number Of Ingredients 7

1 kilogram (2 pounds) Granny Smith apples
90 grams (3 ounces) butter
sugar to taste
2 cups (4 ounces) fresh breadcrumbs
3 tablespoons sugar
1/2 cup (4 fluid ounces) cream, whipped
red currant jelly (or jam)

Steps:

  • Peel, core and thinly slice the apples. Put into a stainless steel or enamel pan with a little water. Cover and cook gently until soft, then purée. Stir in 1 tablespoon of butter and enough sugar to taste. Melt remaining butter in a frying pan, add breadcrumbs and sugar and stir until golden. Allow to cool.
  • Just before serving, arrange alternate layers of apple purée and crumbs in a serving dish or individual bowls. Finish with a sprinkling of crumbs, decorate with whipped cream and red currant jelly.
