Grilled with a nice charred flavor and exotic spice, these go great with a salad and a side of couscous. You can also cook these under the broiler as well as the grill.

2 lbs ground beef
1 onion, finely chopped
1/3 cup chopped fresh parsley
1/2 teaspoon mint
1/4 teaspoon marjoram
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
24 bamboo skewers or 24 metal skewers

Steps:

  • Mix together all ingredients until blended.
  • Chill for 45 minutes to 1 hour.
  • If using bamboo skewers, soak them for 35 minutes to an hour.
  • Oil your hands, and divide meat into 24 portions.
  • Take one portion and shape into an elongated patty like a torpedo and run a skewer through it.
  • Set on waxed paper until time to cook.
  • Repeat with remaining meat portions.
  • Grill for 6 minutes until cooked through.

This is a nice variation from ordinary kebabs. The longer you let the meat marinate, the more tender it will be when you cook it. (The times listed below does not include marinating time).

1 1/2-2 lbs beef stew meat, less than 1 inch thick
2 tablespoons parsley, finely chopped
1/3 cup olive oil
1/2 small onion, grated
1 tablespoon tomato paste
1 tablespoon vinegar
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Cut any large pieces of meat in half so they will cook faster. Then place the beef cubes in a medium bowl. Chop the parsley & add it to the beef, set aside to be used later.
  • Pour the olive oil in a small glass bowl. Add the spices, vinegar & tomato paste, stir until well blended. Grate the onion & add it to the oil mixture.
  • Stir the mixture in with the beef until it is well coated. Cover with a lid & place in the refrigerator to marinate for at least 2 hours.
  • Place the beef on skewers, leaving a little gap between each piece. Grill on each side until the meat is no longer pink inside, between 10-15 minutes.
  • Serve with thick bread instead of utensils. (Moroccans eat most of their food with their right hand, using only bread to scoop up the meal).

2 lbs fresh pork tenderloin
1 tablespoon ginger
1 teaspoon minced garlic
1 cup hoisin sauce

Steps:

  • This recipe is for smaller size slow cookers. Do not try in a large one unless you double or triple the amounts.
  • 1. Wash tenderloin in an cold water rinse.
  • 2. Rub ginger all over meat. Spread hoisin onto meat, flipping once to cover. Place in ziploc bag to marinate overnight.
  • 3. Place marinated meat into slow cooker in morning. Sprinkle with minced garlic.
  • Low heat setting: 6-8 hours.
  • High heat: setting 4 hours.
  • Slice and serve the marinade and meat over rice. Or Shred and serve on buttered Crusty rolls.

1 lb whole mushroom (button)
1/2 lb bacon
8 ounces barbecue sauce (or homemade, but we like Famous Dave's Sweet & Zesty for this)

Steps:

  • Soak bamboo skewers 30 minutes.
  • Cut bacon strips in half--they'll be just long enough to wrap around the mushroom one time.
  • Wrap each mushroom with a bacon strip and thread on skewer.
  • Grill on medium heat till bacon is done, basting with barbecue sauce.
  • This usually takes around 10-15 minutes.
  • Serve immediately.
