DAN'S FAVORITE SUPERSIZED SOUTHWESTERN CHICKEN SANDWICH
I saw Sara Moulton make this sandwich on Food Network. My friend Dan loves it and is always thrilled when I make it for him. It is a great sandwich to serve while watching football on TV. It's pretty spicy, so adjust accordingly.

Steps:
- Preheat oven to 350°F.
- Split loaf in half lengthwise.
- Blend mayo and chipotle in a food processor until smooth. Spread on both halves of ciabatta.
- Layer sliced chicken, avocado, tomatoes and jack cheese on bottom half of ciabatta.
- Cover with top half of loaf and wrap in foil.
- Bake for 10-15 minutes or until cheese is melted.
- Slice into four pieces.

I wanted something new for lunch, and we didn't have much fruit, so this is what I came up with. A mix of watermelon, peanut butter, and a couple other ingredients. Please trust me, it's not gross.

- Stir the sugar and cinnamon together in a small bowl; set aside.
- Spread 1 tablespoon peanut butter onto each slice of bread. Sprinkle the peanut butter with the sugar mixture. Sandwich the watermelon slice between the bread.

DAN'S FAVORITE CHICKEN SANDWICH
BBQ sauce and bacon are the secrets to the wonderful flavor of the chicken in this sandwich. Add avocado and cheese, and how can you go wrong? Makes a hearty lunch by itself or serve with salad or french fries for a delicious dinner.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Coat a baking dish with cooking spray. Brush both sides of each chicken breast with barbeque sauce and place in the baking dish. Top each breast with 2 slices bacon.
- Bake chicken 25 minutes in the preheated oven, until juices run clear. Drain bacon strips on paper towels, and slice breasts in half lengthwise.
- Heat the oven broiler. Spread both halves of each hoagie roll with Ranch dressing. Place 2 breast halves on one half of each roll. Place 2 strips of bacon on each remaining roll half. Top each half with 1 slice Swiss cheese.
- Arrange sandwich halves on the baking sheet, and broil 2 to 5 minutes, until the cheese is melted and bubbly. Layer chicken halves of sandwiches with avocado slices, and top with bacon halves to serve.

DAN SANDWICH
Steps:
- Grill sausages under a medium heat until surface is browned. Cut each in half and return to front of grill pan to keep them hot without overcooking them as you prepare the rest of your sandwich fillers. Grill bacon under a medium heat till sides start to curl. Turn over and cook fully. Turn off heat and leave in grill with sausages to keep hot. Heat cooking oil in a frying pan until hot. Add 1 round of bread to cooking oil. Fry until both sides are browned and crispy. Lean fried bread on one side to cool. Top up, and heat, cooking oil as necessary and add egg. As this fries on a medium heat, butter the 2 remaining rounds of bread, or add condiments depending on your preference. By this time the egg should be ready to be flipped or broken or however you like your eggs. With 1 round of buttered bread as a base, add Sausages and bacon, followed by the fried round of bread. Add egg on top of this and finish with the last remaining round of bread. Cut in half and enjoy.
