12 slices sourdough bread, 1/2-inch thick
3 tablespoons butter, softened
3/4 lb deli turkey, thinly sliced
12 slices bacon, crisply cooked and broken in half
1 large tomatoes, sliced
6 slices colby-monterey jack cheese
1/4 cup ranch salad dressing
1 small avocado, mashed

Steps:

  • Spread one side of each bread slice with butter. Place 6 bread slices butter sides down; top with turkey, bacon, tomato, cheese and dressing. Top with remaining bread slices, butter sides up.
  • Cover and cook sandwiches in 12 inch skillet over medium heat 4 to 5 minutes, turning once, until bread is crisp and cheese is melted.

2 slices Texas toast thick bread
3 ounces deli turkey, sliced thin
1 slice bacon, cooked crisp
2 slices tomatoes
mayonnaise
1 slice swiss cheese (I use light)
drizzle olive oil or butter-flavored cooking spray

Steps:

  • Assemble sandwich using all ingredients except oil. Brush oil on bread or spray with butter.
  • Cook until sandwich is crisp on the outside and cheese has melted.

TURKEY PARMESAN PANINI

2 cups cherry tomatoes, halved
1/4 cup olive oil
1/2 teaspoon kosher salt
1/4 cup store-bought pesto
8 slices pullman white bread
1/4 cup marinara sauce
8 slices sliced mozzarella or provolone
8 thin slices smoked turkey
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomatoes on a rimmed baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with the salt. Toss well to coat. Roast the tomatoes until beginning to pop and blister, about 15 minutes.
  • Meanwhile, spread 1 tablespoon pesto on 4 slices of bread. Spread 1 tablespoon marinara on the other 4 slices. Place a slice of mozzarella on each slice of bread. Divide the turkey evenly on 4 slices of bread and top with some of the blistered tomatoes. Sprinkle each sandwich with 1 tablespoon Parmesan. Top with the remaining slices of bread and press gently.
  • Heat a large skillet over medium heat. Add half of the remaining oil to the skillet and add 2 sandwiches. Place a lid slightly smaller than the skillet on top of the sandwiches and press down. Cook until golden brown, about 3 minutes. Flip the sandwiches and repeat on the second side. Continue with the remaining sandwiches. (Alternatively, you can use a panini press.) Serve warm.

Dairy Queen is getting into the panini scene with a new product line called Iron Grilled Sandwiches The dairy queen in Mancelona serves the best panini's going.It's the secret neva sauce they put on the bread to grill them. Note: Make Neva sauce a day ahead.

2 slice panini bread
2 thin slices turkey
2 strips bacon cooked
2 slice tomato
1 lettuce leaf
1 tsp diced onion
1 slice swiss cheese (we order cheddar on ours)
NEVA'S SECRET SAUCE
1/2 c cooking oil
1/2 c olive oil
2 tsp italian seasoning
1 Tbsp parmesan cheese
1 tsp garlic salt

Steps:

  • 1. Spread Neva sauce on 1 side of bread then put into a panin pan or frypan sauceside down. Assembly the turkey, cheddar and bacon then another bread slice and brush outside with the sauce, like you would a grilled cheese. press or fry like a grilled cheese or in a panini pan. add lettuce onion, tomato and mayonnaise serve and enjoy. Only the Mancelona store serves Neva's secret sauce and you have to ask special for it. Neva is the owner, and a friend.
  • 2. NOTE: Allow Neva's sauce to sit covered overnight before using to blend flavors
