1 tablespoon flour, or as needed
¼ cup butter, softened
¾ cup brown sugar
1 large egg
¼ cup sour cream
¼ cup vanilla yogurt
1 teaspoon vanilla extract
1 cup all-purpose flour
¾ teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
2 cups diced Granny Smith apple
¼ cup brown sugar
¼ cup all-purpose flour
2 tablespoons butter
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch square baking dish with cooking spray; dust with 1 tablespoon flour.
  • Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
  • Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
  • Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

3 cups all-purpose flour
1 tablespoon baking powder
2 cups white sugar
1 cup vegetable oil
4 eggs
½ cup orange juice
4 apples - peeled, cored and sliced
5 tablespoons white sugar
5 tablespoons brown sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch tube pan.
  • In a large bowl, stir together flour and baking powder. In a separate bowl, beat together 2 cups sugar, vegetable oil, eggs. Stir egg mixture into flour mixture, alternately with orange juice, until smooth. In a small bowl, combine 5 tablespoons white sugar, 5 tablespoons brown sugar and 2 teaspoons cinnamon.
  • Pour 1/2 of batter into prepared pan. Add 1/2 of the apples then 1/2 of the cinnamon sugar mixture. Repeat laying with remaining ingredients.
  • Bake in preheated oven until a toothpick inserted into center of cake comes out clean, about 50 to 70 minutes. Let cool for 15 to 20 minutes, invert on a plate and serve.

This is a make-ahead coffee cake with apple that uses no dairy. It is not vegan because it uses one egg, but you can replace the egg with 1/4 cup applesauce or powdered egg replacer if you wish. If you have no molasses, you can replace it with 2 tablespoons of brown sugar. You can simply prepare this the night before and pop it in the oven an hour before guests will arrive.

1/2 teaspoon baking soda

2 tablespoons vegan margarine
1 tablespoon applesauce
1/4 cup brown sugar
1 egg
1/4 cup soy cream cheese
1/4 cup soymilk
1/2 cup chopped raw apple
1/4 cup brown sugar
1/4 cup walnuts, chopped
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg

Steps:

  • Mix all dry ingredients in a large mixing bowl.
  • Add all remaining ingredients except apple.
  • Beat one minute.
  • Stir in apple.
  • Pour into a greased 9 x 9-inch pan.
  • Mix the topping and sprinkle over the batter.
  • Cover the pan and refrigerate overnight.
  • The next day, set the pan out on the counter while preheating oven to 350 degrees.
  • Bake 45 to 50 minutes.
  • Turn off the oven, open the oven door, and let the coffeecake cool in the oven.
  • Cut into squares and serve while warm.

1 egg, lightly beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking pan and set aside.

1 cup sugar
2 eggs
1 cup sour cream
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup brown sugar
1/2 cup chopped pecans
1 teaspoon cinnamon

Steps:

  • Cream butter and add sugar gradually.
  • Beat at medium speed until light and fluffy.
  • Add eggs one at a time and beat.
  • Add sour cream and mix well.
  • Combine flour and next 4 ingredients.
  • Add to creamed mixture and mix well.
  • Pour into greased and floured 13x9 pan.
  • Combine brown sugar, pecans and cinnamon.
  • Sprinkle evenly over batter.

1/2 cup white whole wheat flour
1/2 cup quick-cooking oats
2 tablespoons flax seed meal
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/3 cup canola oil
1 egg
3/4 cup buttermilk
2 cups apples, peeled, cored, and chopped
1/2 cup walnuts, chopped (or pecans)

Steps:

  • Mix flours, oats, baking powder, soda, salt, flax seed meal and 1 tsp cinnamon in a bowl and set aside.
  • In another bowl, mix granulated sugar, oil, 1/4 cup brown sugar and egg. Mix in buttermilk and flour mixture. Fold in apples.
  • Pour into a 9x13-inch greased baking pan.
