I've made this cake for my children(see photo below), grandchildren and great-grandchildren. It is their favorite birthday cake...it's light and tasty, and lends itself beautifully to decorating. I often place a small arrangement of fresh flowers in the center.

6 large egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2/3 cup sugar
1/2 cup cake flour
1/2 teaspoon baking powder
1/2 teaspoon salt
YELLOW CAKE:
6 large egg yolks
2 tablespoons warm water
1/2 cup cake flour
1/2 cup sugar
1 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon vanilla extract
FROSTING:
1/2 cup sugar
4 teaspoons all-purpose flour
Pinch salt
1 cup pineapple juice
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add cream of tartar and vanilla; beat on medium speed until foamy. Gradually beat in sugar, 1 tablespoon at a time, until soft peaks form. Combine the flour, baking powder and salt; fold into egg white mixture. Set aside., In another large bowl, beat egg yolks and water until thick and lemon-colored. Combine the flour, sugar, baking powder and salt; gradually beat into egg yolk mixture. Beat in vanilla. , Alternately spoon yellow batter and white batter into an ungreased 10-in. tube pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Immediately invert pan; cool completely., For frosting, combine the sugar, flour and salt in a small saucepan. Stir in pineapple juice until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool. Fold in whipped topping. , Remove cake from pan to a serving plate. Spread frosting over top and sides of cake. Store in the refrigerator.

This cake was MY birthday cake for many years & was made by my best friend, and later sister-in-law, Becki. Oh, the barbecues & lasagna dinners that were topped off by this delicious dessert! Talk about happy memories, even if the event meant I was getting older. =^..^=

1 box yellow cake mix, any brand
1 c water, as directed for the cake
1/2 c vegetable oil, as directed for the cake
3 eggs, as directed for the cake
20 oz can of crushed pineapple, drained
8 oz block of cream cheese
1 box instant vanilla pudding mix, 4 serving size
2 c milk
8 oz container of cool whip

Steps:

  • 1. Mix the cake mix, water, oil, and eggs together, as directed on the cake mix box. Bake the cake in a 13 x 9" baking dish, using the temperature & time suggested on the cake mix box. Remove from oven and cool.
  • 2. Drain the pineapple well. (I actually squish it with a wooden spoon, just a little, so the cake won't get soggy.)
  • 3. Spread drained pinepple over the cooled cake.
  • 4. In a blender (or using a bowl & mixer), mix together the cream cheese, pudding mix, and milk until well-blended. Pour over the pineapple on the cake...
  • 5. ...and smooth the pudding evenly over the cake.
  • 6. Refrigerate at least 30 minutes until the pudding is set. Then frost with Cool Whip.
  • 7. Refrigerate again until ready to serve. (If there are any leftovers, refrigerate them, too.) I wish this photo showed the whole slice of cake. Silly JAP editing! =^..^=

1 teaspoon cream of tartar
1/2 teaspoon salt
1-1/3 cups sugar

LEMON FILLING:
1 tablespoon unflavored gelatin
3/4 cup cold water, divided
1 cup sugar
3 tablespoons cornstarch
4 large egg yolks, beaten
1/3 cup butter
2 tablespoons grated lemon zest
1/2 cup lemon juice
1 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, beat the egg whites, cream of tartar and salt on medium speed until soft peaks form. Gradually add sugar, 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Fold in flour, 1/4 cup at a time. Divide mixture in half. Fold vanilla into one portion; set aside. In another large bowl, beat egg yolks on high speed until thick and lemon-colored. Stir in almond extract. Fold in unflavored egg white batter. , Alternately spoon batters into an ungreased 10-in. tube pan. Gently cut through batter with a knife to swirl. Bake on the lowest rack at 325° for 50-60 minutes or until top springs back when lightly touched. Immediately invert pan; cool completely., For filling, soften gelatin in 1/4 cup cold water; let stand for 1 minute. In a heavy saucepan, combine the sugar, cornstarch and remaining water until smooth. Bring to a boil over medium heat; cook and stir 2 minutes longer. Remove from the heat. Gradually stir 1/2 cup hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil, stirring constantly. Cook and stir 2 minutes longer. Remove from the heat; stir in butter and lemon zest. Gently stir in lemon juice and softened gelatin until gelatin is dissolved. , Cool room temperature without stirring. Fold in whipped cream. Refrigerate until mixture achieves spreading consistency, about 40-50 minutes., Run a knife around sides and center tube of pan. Remove cake; split into two horizontal layers. Spread filling between layers and over top of cake. Store in refrigerator.

And this light, creamy, lemony, slightly tropical concoction always seemed the perfect harbinger of spring.

18 ounces lemon cake mix, made according to package directions with
1 1/3 cups water, as per cake mix directions
1/3 cup vegetable oil, as per cake mix directions

1 (3 1/2 ounce) package instant lemon pudding
1 1/2 cups milk
1 (8 ounce) container Cool Whip Topping
shredded coconut (optional)

Steps:

  • Bake a Lemon Cake mix (Betty Crocker) according to package directions. Use a greased and floured 9x13 inch pan.
  • Ten minutes after removing from the oven, poke holes all over the cake with the handle of a wooden spoon.
  • Pour crushed pineapple with juice over the cake in the pan.
  • Fold 1 package lemon instant pudding into 1 1/2 cups milk.
  • Fold this into 1 small carton Cool Whip.
  • Spread over cake.
  • Top with coconut! (optional).

1 1/2 cups sugar, divided
1 1/4 teaspoons kosher salt (we use Diamond Crystal), divided
12 large egg whites, plus 6 large yolks
1 1/2 teaspoons finely grated lemon zest, plus 2 tablespoons fresh juice
1 teaspoon finely grated orange zest, plus 1 tablespoon fresh juice
1 teaspoon cream of tartar
Edible pansies, for serving (optional)
2 cups sifted confectioners' sugar, plus more if needed
2 tablespoons fresh lemon juice, plus more if needed

Steps:

  • For the Cake: Preheat oven to 350°F. Sift flour, 1/4 cup sugar, and 1 teaspoon salt through a coarse-mesh sieve onto a piece of parchment. Beat yolks and 1/4 cup sugar with an electric mixer on high speed until doubled in volume, 3 minutes. Beat in both zests and juices.
  • In a clean bowl with clean whisks, beat egg whites on high speed until foamy. Beat in remaining 1/4 teaspoon salt and cream of tartar until soft peaks form. Gradually add remaining 1 cup sugar; beat to stiff peaks. Transfer to a large, wide bowl. Sift one-third of flour mixture over top; gently but thoroughly fold in.   • Fold half of egg-white mixture into yolk mixture; dollop into an ungreased 10-inch angel-food-cake pan. Top with remaining egg-white mixture. Run a knife through to release air bubbles. Bake until top springs back when lightly touched, 35 to 40 minutes.
  • Invert pan onto its legs (or rest on the neck of a wine bottle); let cool 1 hour. Run a knife around inside of pan and tube to release cake and unmold, then use it to release cake from pan bottom; remove.
  • For the Glaze: Whisk together all ingredients to create a thick but pourable glaze. If too thick, whisk in more lemon juice, 1 teaspoon at a time; if too thin, more confectioners' sugar. Place cake on a cake stand and pour glaze over top, letting it drip down sides. Let stand until set, about 30 minutes; decorate with flowers.

  • Place round cake in the center of sheet cake. Place 4 cupcakes on the top of the layer cake so that they touch in the center; then add 1 more cupcake on top of the 4 cupcakes. Place the 4 remaining cupcakes on the corners of the sheet cake. Decorate with cookies around cakes pressing gently into frosting and/or inserted into the cupcakes.

18 ounces lemon cake mix
1 white frosting mix
1/4 cup butter

  • Drain pineapple. Reserve juice / syrup.

1 1/2 c (11 or 12 large) egg whites
1 c sifted cake flour (sift before measuring)
1 1/2 c granulated sugar divided
2 tsp vanilla
1 1/2 tsp cream of tartar
1/4 tsp salt
6 large egg yolks
1 1/2 tsp finely shredded lemon zest (yello portion of peel)
Frosting 1/2 cup (1stick) butter at room temperature
5 1/2 c sifted powdered sugar (sift before measuring)
1/2 tsp finely shredded lemon zest (yellow portion of peel) plus more for optional garnish
1/3 c lemon juice or as needed

Steps:

  • 1. To Prepare Cake: Let egg whites stand at room temperature for 30 min. in a very large mixing bowl.
  • 2. Meanwhile sift together cake flour and 3/4 cup sugar; repeat twice. Set aside. preheat oven to 350 degrees.
  • 3. Add vanilla, cream of tartar and salt to egg whites. Beat with electric mixer on medium to high speed until soft peaks form (tips curl).
  • 4. Gradually add remaining 3/4 cup sugar 2 tablespoons at a time, beating until stiff peaks form (tips Stand straight). sift 1/4 cup cup of the flour mixture over white mixture; fold in gently.
  • 5. Repeat with remaining flour mixture using 1/4 of the flour mixture, using 1/4 of the flour mixture each time. Transfer half of the batter to another bowl.
  • 6. In a small mixing bowl, beat egg yolks on high speed for 6 minutes or thick and lemon colored. Fold in lemon zest.
  • 7. Gently fold into half of the egg white mixture. Alternately spoon yellow batter and white batter into an ungreased 10-inch tube pan, swirl metal spatula through batters to marble.
  • 8. Bake on the lowest oven rack for 40-45 minutes or until top springs back when lightly touched. Immediately invert cake in pan; let cool completely. Loosen sides of cake from pan; remove pan place cake upside down on plate.
  • 9. To prepare frosting: Beat butter with an electric mixer till light. Beat in powdered sugar, lemon zest, and lemon juice, adding additional lemon juice if necessary to achieve spreading consistency. Frost Cake. To garnish sprinkle top with lemon zest . Final note Recipe doesn't specifically say how long it take to put together I just did an about figure.

  • Spoon white and yellow batters alternately into an ungreased tube pan. Run knife gently through batter to eliminate air pockets and to swirl the batters.
  • Bake in lower third of oven for 35 - 40 minutes Invert pan to cool. When cool, remove from pan and spoon warm glaze over top or serve sauce on the side.
  • Glaze: Cook sugar, cornstarch and water over medium heat till smooth and thickened. Add lemon peel, juice and butter and heat till warm.

Steps:

  • White Part: Beat egg whites till stiff.
  • Add cream of tartar.
  • Fold in sugar, vanilla and flour sifted 3 times with baking powder and salt.
  • Put in bottom of greased angel cake pan.
  • Yellow Part: Beat egg yolks with hot water and salt until light and lemon coloured.
  • Add sugar, vanilla and flour sifted three times with baking powder.
  • Add on top of white part and bake in oven at 375 degrees for about 35 minutes.

Cake:
1 1/4 c sifted cake flour
1 1/2 c plus 2 tablespoons sugar (divided)
1 1/4 c room temp egg whites (10 eggs)
1 1/4 teaspoon salt
1 1/2 teaspoon cream of tartar
1/2 teaspoon vanilla
4 egg yolks
1 teaspoon grated orange rind
2 tables orange juice
Frosting
1/3 c butter
1/8 teaspoon salt
2 tablespoon orange rind
3 cups confectioners sugar, sifted
1/4 c orange juice
1 1/2 teaspoons lemon juice

Steps:

  • Preheat oven to 350 Sifted together flour and 1/2 c sugar. Beat egg white in a seperate bowl until foamy. Add salt and cream of tartar and vanilla. Beat until soft peaks form. Sprinkle 1 c sugar, 1/4 c at a time into egg whites, until just blended. Fold flour mixture into egg white, 1/4 c at a time, using a rubber spatula. Beat egg yolks with orange rind, juice and remaining 2 tablespoons of sugar until thick and light. Stir 1/3 of egg white mixture into egg yolk mixture. Scrape the yellow and white batters into an ungreased 10 - inche tube pan to give a marbled effect with a white layer on top. Bake 30 - 35 minutes until done. Invert pan, cool. Remove cake from pan. Frosting: Combine butter, salt, rind and 1 c powdered sugar in mixing bowl. Beat with mixer at high speed until fluffy. Add remaining sugar and orange juice alternately, beating until smooth and spreadable. Beat in lemon juice. Frost top and sides of cake.

ANGEL FOOD CAKE:
1 cup plus 2 tablespoons cake flour* (4 1/2 ounces) I used King Arthur Flour brand (see note)
1/4 teaspoon salt
1 3/4 cups granulated sugar (12 1/4-ounces)
12 large egg whites**
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla extract
DAFFODIL CAKE:
1 recipe angel food cake (see related recipe or use your own)
6 egg yolks, lightly beaten
1/2 teaspoon orange extract
GLAZE:
2 tablespoons cream cheese, room temperature
1/4 cup orange juice concentrate, thawed
1 1/2 cups confectioners' sugar
Note: *Do not use all-purpose flour. Our tasters unflatteringly compared a cake made with it to Wonder Bread.
I used the equivalent liquid egg whites, which worked out quite well. actually!

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 325°F. Prepare angel food cake batter according to directions. Angel food cake: (If your angel food cake pan does not have a removable bottom, line the bottom of the pan with parchment paper. In either case, do not grease the pan (or the paper). Whisk flour and salt in bowl. Process sugar in food processor until fine and powdery, about 1 minute. Reserve half of sugar in small bowl. Add flour mixture to food processor with remaining sugar and process until aerated, about 1 minute. BEAT WHITES With electric mixer on medium-low speed, beat egg whites and cream of tartar until frothy, about 1 minute. Increase speed to medium-high. With motor running, slowly add reserved sugar and beat until soft peaks form, about 6 minutes. Add vanilla and mix until incorporated. Sift and fold: Sift flour mixture over egg whites in 3 additions, folding gently with rubber spatula after each addition until incorporated. Daffodil cake: Place one-third of the angel food cake batter (about 3 cups) in medium bowl and set aside. Gently scrape remaining batter into 12-cup ungreased tube pan. Add yolks and extract to reserved batter and gently fold mixture with rubber spatula until combined. Scrape into tube pan over top of plain batter. Pull spatula or knife through batters. Bake until toothpick inserted into center of cake comes out clean with no crumbs attached, 40 to 45 minutes. Cool, inverted in cake pan, to room temperature, about 3 hours. To unmold, run knife along interior of pan and invert cake onto serving platter. Glaze: Whisk cream cheese and orange juice concentrate in medium bowl until smooth. Add confectioners' sugar and continue whisking until no lumps remain. Drizzle over top of cooled cake, letting glaze drip down sides. Let glaze set, about 30 minutes. Serve.

This is a great spring angel food-type of cake made with two flavors of batter alternated in a tube pan.

10 egg whites
1 teaspoon cream of tartar
½ teaspoon salt
1 ¼ cups white sugar, divided
¾ cup sifted cake flour
6 egg yolks
½ teaspoon orange extract
½ cup sifted cake flour
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wash the tube pan in hot soapy water to ensure it is totally grease-free.
  • In a large dry glass or metal bowl, whip egg whites until frothy. Add cream of tartar and salt, and continue to whip. When the whites can form soft peaks, gradually sprinkle in 1 cup sugar, while continuing to beat until stiff peaks form.
  • In a separate bowl, beat egg yolks with 1/4 cup sugar until thick and lemon-colored. Blend in 3/4 cup cake flour and orange extract. Fold half of the whipped egg whites into the yolk mixture.
  • Fold the remaining 1/2 cup of cake flour into the egg whites, along with the vanilla. Spoon about 1 cup of batter at a time, alternating colors, into the prepared pan.
  • Bake for 30 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C) and continue baking for another 20 minutes, or until the top of the cake springs back when pressed.
  • Without removing cake from pan, invert pan onto a wire rack to cool. Once completely cooled, remove cake from the pan and frost with your choice of frosting. Lemon Cream Cheese Frosting works quite well.

Steps:

  • WHITE BATTER...remove eggs from fridge and leave on counter for at least an hour..while waiting for the eggs to get to room temperature sift the 1 1/4 cups flour with 1/2 cup sugar 3 times.
  • With Electric mixer at high speed beat egg whites with cream of tartar until soft peaks form when beater is slowly lifted..beat in sugar 1/4 cup at a time until stiff peaks form when beater is slowly lifted.. with wire whisk fold vanilla into egg whites until combined sift flour mixture one fourth at a time over egg whites with wire whisk using an over and under motion gently fold in after addition with 15 strokes fold 10 more strokes to completely blend put 1/3 batter into medium bowl Preheat oven to 375F. .
  • Make yellow batter....In separate bowl co,bine yolks.cake flour and sugar..with mixer at high speed beat until very thick add lemon zest..with wire whisk fold with over and under motion yolk mixter into reserved 1/3 batter using about 15 to 20 strokes.
  • For marbling spoon batters alternately into 10 inch ungreased tube pan ending with white batter on top..bake on lower rack 35 to 40 minutes or until cake springs back when lightly pressed with fingertip..invert over neck of wine bottle or bottle on hand and cool for 2 hours..run a table knife around edge of cake to remove from pan sprinkle with confectioners sugar...cut with sawing motion with serrated knife.
