Dad's Tuna Melt Casserole is a recipe devised by my DH on one of his kick the shelves and thats whats for dinner nights. It has become a family favorite.

Number Of Ingredients 6

1 lb dreamfields low-carb penne
1 (26 ounce) can cream of mushroom soup (Undiluted)
2 (1 1/2 ounce) envelopes tuna
2 cups fancy shredded cheese
1 cup low-carb breadcrumbs (We Use Carb-Careful By 4C You Can Use Crumbs of your Choice And Amount of Your Choice)
1 tablespoon butter-flavored cooking spray (to taste)

Steps:

  • Prepare Pasta as Directed - Drain.
  • Mix - All Ingredients Together , Except Crumbs.
  • Place in a 9 X 13 Casserole Dish.
  • Sprinkle with your Preferred Amount of Crumbs.
  • Spray with Butter Flavor , Butter Replacement Spray , NOT Cooking Oil Spray.
  • Bake at 350 Degrees for 20-30 Minutes.

If you enjoy diner tuna-melt sandwiches, you'll love the taste of this. To save time, use packaged frozen broccoli florets. Jarlsberg Swiss cheese works nicely in this casserole.

Number Of Ingredients 10

1 (16 ounce) package corkscrew macaroni or 1 (16 ounce) package shell pasta
3 cups broccoli florets
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
3/4 teaspoon salt
1/4 teaspoon ground black pepper
4 cups milk (reduced-fat 2% milk is fine)
6 ounces swiss cheese, shredded (1 1/2 cups)
3 (6 ounce) cans albacore tuna in water, drained and flaked
2 medium tomatoes, cut into 1/4-inch-thick slices

Steps:

  • Preheat oven to 400 degrees Fahrenheit. In a large saucepot, cook pasta in boiling salted water for 5 minutes; add broccoli to pasta and cook another 5 minutes or until broccoli is tender and pasta is al dente. Drain well and return to saucepot; set aside.
  • Meanwhile, in a 3-quart saucepan, melt butter or margarine over low heat. Stir in flour, salt, and pepper until blended and cook, stirring constantly, 1 minute. Gradually stir in milk; increase heat to medium-high and cook, stirring occasionally, until mixture thickens and boils. Boil 1 minute, stirring frequently. Remove saucepan from heat and stir in 1 cup of cheese until blended.
  • Add cheese sauce and tuna to pasta and broccoli in saucepot; toss until evenly mixed. Transfer mixture to a 13"x9" glass baking dish. Arrange tomato slices on top, overlapping if necessary. Sprinkle with remaining 1/2 cup cheese.
  • Cover baking dish with foil and bake 20 to 25 minutes or until hot and bubbly. Makes 6 main-dish servings.

When Dad had to work at night Mom always made her famous tuna casserole for us. Certainly not the healthiest of meals but it brings back a lot of memories. Times were tough, money was tight back then. 1 can of tuna, some soup, a few vegies and some potato chips made a warm and belly filling supper for us. I still make this...

Number Of Ingredients 10

1 6 oz can tuna - drained
1 can(s) cream of mushroom soup
1 soup can of milk
1/2 c frozen peas
1/2 c frozen corn
1 small can black olives - chopped or sliced
1 approx 10 oz bag plain potato chips
1/4 c shredded cheddar cheese
extra olives for garnish if desired
sour cream for garnish if desired

Steps:

  • 1. Preheat oven to 375. Grease small casserole, 8x8 baking dish or 9" pie plate.
  • 2. In medium saucepan warm the soup. Mix in the milk and warm through. Add the peas and the corn. Remove from heat and add tuna.
  • 3. Crush entire bag of potato chips. Mix about 3/4 of the chips into the soup mixture. Stir olives into mixture.
  • 4. Put mixture into prepared baking dish and spread evenly. Top with remaining potato chips and the cheese.
  • 5. Bake - uncovered - at 375* for about 35 minutes or until bubbly and cheese is melted. Remove from oven and let it sit for 5 minutes.
  • 6. If desired top with extra olives and a dab of sour cream.
