DADDY'S BISCUITS

Cooking spray
4 tablespoons vegetable shortening
2 cups self-rising flour (see Note), plus more for dusting
3/4 cup buttermilk, well shaken

Steps:

  • Preheat the oven to 450 degrees F. Lightly grease a 9-inch cake pan with nonstick cooking spray.
  • Using a pastry blender or two table knives, cut the shortening into the flour until it resembles coarse meal. Use a fork to stir in the buttermilk to make a soft dough, or until the dough comes together and leaves the sides of the bowl. Continue stirring with the fork until all the flour is worked into the dough, then turn the dough out onto a lightly floured board and knead 3 or 4 times until smooth and manageable.
  • With your hands or floured rolling pin, flatten the dough to a thickness of 1/2 inch. Cut the dough with a 2 1/2-inch floured biscuit cutter. Place the biscuits in the cake round 1 inch apart for crisp biscuits or almost touching for softer biscuits. Bake until lightly browned, 10 to 12 minutes.

2 1/4 cups self-rising flour
1/2 cup butter or 1/2 cup margarine, softened
1 1/4 cups buttermilk
all-purpose flour, for dusting
melted butter for brushing on biscuit

Steps:

  • Preheat oven to 450 degrees Plavee flout in large bowl. Cut butter with fork until crumbly.
  • Cover and place in fridge 10 minutes.
  • Slowly pour in buttermilk and stir hust until moistened.
  • Turn dough unto floured surface and knead 3-4 times with your hands, adding flour as needed to prevent sticking.
  • With well-floured hands pat dough out into the center as if folding letter. Repeat 2-3 more times, beginning with patting the dough out.
  • Pat the dough out a final time until it is 1/2" thick.
  • Cut with biscuit cutter dipped in flour and place the biscuits on the baking sheet with the sides touching.
  • Bake 12-15 minutes, until lightly browned.
  • Remove biscuits from the oven and brush the tops with melted butter.

2 cups White Lily self-rising flour (see notes if using all-purpose flour)
1/4 cup shortening
2/3-3/4 cup milk

Steps:

  • Preheat your oven to 500 degrees and lightly spray a baking sheet with cooking spray.
  • Place flour into a medium bowl and cut in the shortening until well incorporated. Stir in just enough milk until the dough leaves the sides of the bowl.
  • Turn dough out onto a lightly floured surface. Gently knead two or three times. Roll dough out to 1/2-inch thickness and cut with a biscuit cutter or small glass that has been dipped in flour. Place the biscuits onto the prepared baking sheet.
  • Bake for 8-10 minutes, or until golden brown.

1 tablespoon sugar, plus
2 teaspoons sugar
1/3 cup sour cream
1/3 cup club soda
2 cups bisquick biscuit mix

Steps:

  • Combine sugar, soda and sour cream and mix well.
  • Stir in biscuit mix.
  • Sprinkle small amount of dry biscuit mix on counter and dump out batter.
  • Knead 10-12 times.
  • Cut out 12 biscuits about 2 inches round.
  • Bake at 450 for 16-18 minutes til golden brown.
