BIG PAPA'S HOMEMADE BEEF STEW
This is my absolute favorite beef stew. I spent the better part of two years changing and altering ingredients until it was perfect. Hope you enjoy; everyone I've fed it to does!

Steps:
- Heat vegetable oil in a large skillet over high heat; sear beef until browned on all sides, about 5 minutes. Transfer beef and oil to a large pot.
- Mix water, carrots, onion, celery, Worcestershire sauce, salt, sugar, pepper, paprika, garlic, bay leaves, and allspice with beef; cover pot and simmer over low heat for 1 1/2 hours. Add potatoes to stew, cover pot, and simmer until potatoes are tender, about 40 minutes more.

SLOW COOKER BEEF ROUND STEW
Let this beefy stew cook while you're at work. Serve on rice, or with fresh hot rolls from the oven.

- Place the flour in a shallow bowl, and mix with salt and black pepper. Sprinkle beef with more salt and black pepper. Press the beef cubes into the seasoned flour, and tap off the excess flour.
- Heat the vegetable oil in a large skillet over medium heat, and cook the beef cubes until browned on all sides, working in batches. Place the browned beef into a slow cooker. Place the mushrooms, onion, and carrot in the skillet with the last batch of meat; place in the slow cooker. Pour about 1 cup of beef broth into the skillet, and stir to dissolve any brown bits left in the bottom of the skillet. Pour into the slow cooker.
- In a saucepan over medium heat, whisk the remaining beef broth with the dry gravy mix until smooth. Bring the gravy to a boil, reduce heat to medium low, and simmer until thickened, about 2 minutes. Stir the gravy into the stew. Mix in the potato, frozen peas, corn, lima beans, and green beans. If you prefer a thicker gravy, mix in the cream of mushroom soup.
- Place the lid on the cooker, set to low heat, and cook until the beef is very tender, about 4 hours. You can cook the stew up to 8 hours if necessary.

- In a large skillet, cook beef over medium heat until no longer pink; drain. In a 5-qt. slow cooker, combine the next nine ingredients. Stir in the beef. Cover and cook on high for 4-5 hours. Stir in soup and tomato paste; cover and cook for 1 hour longer or until heated through.

- Heat the olive oil in a large stock pot over medium heat. Once hot, add the onions and saute for 2-3 minutes until fragrant.
- Add the garlic and continue to saute for an additional 30 seconds before adding the ground beef. Break up the beef as it browns.
- Add the beef stew seasoning and mix it in. Then, add the vegetables (celery, carrots, and potatoes - plus optional veggies), the broth, (optional) Worcestershire sauce, and the bay leaves. Bring to a boil.
- Once boiling, reduce the heat and simmer for 35-40 minutes until carrots and potatoes are fork tender.
- Mix a slurry with all-purpose flour and an equal amount of cold water. Repeat in 1 tablespoon increments until your desired thickness is reached (*see note). Serve immediately.

DADDY'S GROUND ROUND STEW
My sister does not eat stew meat. My Daddy came up with this recipe so that she could enjoy stew.

Steps:
- Put Ground Round in large stew pot. Cover 2 inches over Ground Round with cold water. Begin to cook Ground Round. Add Season All and Onions. Let Ground Round boil about 30 minutes until well done.
- Add 2 cans drained sliced potatoes. Cook until potatoes are well done and can be cut with a fork.
- Add Veg All, drained to stew mixture. Let Veg All Cook until well done. Add Tomato Sauce. Cook until well done.
