Just a spoonful of Thai curry paste transforms everyday ingredients such as beef and pasta into one aromatic at-home dinner.

Coarse salt and ground pepper
2 tablespoons vegetable oil
1 pound beef sirloin, cut into thin 2-inch-long strips
1 red onion, halved and thinly sliced
2 red bell peppers (ribs and seeds removed), thinly sliced lengthwise
1 tablespoon Thai red curry paste
1 can (14 ounces) coconut milk
1 cup packed fresh basil leaves
1 tablespoon fresh lemon juice
8 ounces angel-hair pasta

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Season beef with salt and pepper; add half the beef to skillet. Cook, without stirring, until browned on one side, 1 to 2 minutes. Transfer to a plate (meat will cook more later), and repeat with remaining tablespoon oil and remaining beef. Setbeef aside, reserving skillet.
  • Add onion, bell peppers, and 1/4 cup water to skillet; season with salt and pepper. Cook, stirring occasionally, until vegetables are crisp-tender, 3 to 4 minutes. Add curry paste; cook, scraping bottom of skillet, 1 minute.
  • Return beef to skillet, with any accumulated juices, and add coconut milk. Simmer until sauce thickens slightly, 4 to 5 minutes. Remove from heat. Stir in basil and lemon juice, and season curry with salt and pepper.
  • Add pasta to boiling water, and cook until al dente, according to package instructions; drain. Servebeef curry over pasta.

You can use any prepared Indian curry paste for these noodles, hot Madras curry paste is an excellent choice. Serve with pappadams on the side, and fresh lime wedges to squeeze over the noodles. I hope you enjoy :)

1 lb broccoli
10 ounces rice noodles
1 1/2 cups tomatoes, canned with juice
1 Spanish onion, thinly sliced
3 tablespoons indian curry paste (or madras curry)
1 tablespoon vegetable oil, plus
2 teaspoons vegetable oil
12 ounces flank steaks, thinly sliced
salt, to taste
black pepper, to taste

Steps:

  • cut broccoli into small florets, peel and slice stems.
  • in large pot of boiling salted water, blanch until tender-crisp, about 4 minutes. remove with slotted spoon and chill under cold running water, drain and set aside.
  • in same pot boil noodles until tender, about 5 minutes, drain and rinse with cold water. drain again and set aside.
  • in wok or large skillet, heat 1 tablespoon oil over med-high heat. stir fry onion until golden, about 8 minutes. remove from pan with slotted spoon, set aside.
  • add 2 teaspoons oil to pan, add curry paste, salt and black pepper, fry until fragrant. add steak and stir fry until rare, 1 to 2 minutes.
  • add tomatoes with juices, onion and 1/4 cup water, boil for 1 minute.
  • add noodles and broccoli, stir fry until heated through, about 3 minutes.

2 tablespoons vegetable oil
400 g rump steak, cut into thin strips
1 large onion, chopped
1 tablespoon red curry paste
1 red capsicum, cut into thin strips
185 ml coconut milk
60 ml water
1 bunch baby bok choy, ends trimmed,seperated,washed well
500 g hokkien noodles
1 tablespoon fish sauce
1 tablespoon lime juice
2 teaspoons brown sugar
4 spring onions, sliced diagonally

Steps:

  • Heat half the oil in a wok or large fry pan over a high heat, and stir fry the beef in 2 batches tossing frequently for about 2 minutes or until just sealed.
  • Transfer to a bowl.
  • Reduce the heat to medium and add the remaining oil.
  • Add the onion and curry paste and cook for a further 2 minutes or until aromatic.
  • Add the capsicum, coconut milk and water.
  • Bring to the boil, then reduce the heat and simmer for about 3 minutes.
  • Add the bok choy and cook for about 2-3 minutes or until just tender.
  • Meanwhile, put the noodles in a heatproof bowl and cover with boiling water, allow to stand for 2 minutes to soften slightly.
  • Drain.
  • Add the beef, noodles, fish sauce, lime juice, sugar and spring onions to the curry.
  • Toss to combine and heat through.
  • Serve at once.

FOR THE BRAISED SHORT RIBS
2 lb beef short ribs
6 clove garlic
1 Tbsp salt
4 c beef broth
1 medium onion chopped
1 large carrot sliced
1 c red wine
3 sprig(s) fresh thyme
1 bay leaf
FOR THE CURRY
2 can(s) coconut milk
2 Tbsp yellow curry paste
1 Tbsp masamun curry paste
1 lime juiced
1 c reserved beef broth
1 tsp each fish sauce and tamarind paste
2 Tbsp sugar
4 scallions cut on bias
8 oz rice noodles cook according to directions on package and drained
fried shallots and cilantro for garnish

Steps:

  • 1. For the braised ribs Place all ingredients in a slow cooker. Let cook 8 hours. Remove ribs and shred. Strain the broth through a fine mesh strainer and reserve 1 cup for curry.
  • 2. For the curry Spoon 3 tbsp. cream of the top of coconut milk Place in a wok or large pot. Mix in the curry pastes and cook until well incorporated. Add the lime juice. Stir in the reserved beef broth and the coconut milk.
  • 3. Stir in the fish sauce tamarind paste and sugar. Let simmer about 10 minutes To serve Add noodles to bowl Ladle in the broth Top with scallions and beef Top with garnishes of cilantro and fried shallots
