MANGO & COCONUT CHICKEN SOUP
I love preparing dinner in a slow cooker because it's "carefree cooking." This chicken dish uses ingredients that I love, such as coconut milk, edamame and fresh ginger. The Asian-style entree is perfect for a potluck party. -Roxanne Chan, Albany, California

Steps:
- In a large skillet, brown chicken in oil in batches. Transfer chicken and drippings to a 5-qt. slow cooker. Add the corn, spinach, edamame and pepper. In a small bowl, combine the coconut milk, salsa and ginger; pour over vegetables., Cover and cook on low for 6-8 hours or until chicken is tender. Remove chicken; cool slightly. When cool enough to handle, remove meat from bones; cut or shred meat into bite-sized pieces. Return meat to slow cooker., Just before serving, stir in mango and lime juice. Sprinkle servings with green onions.

COCONUT YAM CURRY SOUP
I got inspired by other recipes on this site to make my own version of this vegetarian soup and it came out delicious!

Steps:
- Chop onions and garlic and sauté in butter in a large saucepan until onions are translucent but not brown.
- Meanwhile puree yams one at a time in a blender with ½ cup soymilk each and add to saucepan.
- Add bouillon, curry powder, pepper and coconut milk and heat until bouillon is incorporated, five to ten minutes.
- Garnish with cilantro and serve with naan bread or Rycrisp.

- Pulse mangoes, shallots, garlic, ginger, curry powder and salt in a food processor until pureed. Add coconut milk; pulse until well combined. Transfer mango mixture to a bowl; stir in coconut water and lime juice. (Thin with tap water if desired.) Cover and chill until cold, 1 hour. Divide among 4 bowls; garnish with shrimp and cilantro before serving.
CURRIED CARROT, SWEET POTATO (OR YAM) & GINGER SOUP
my mom got this recipe from a friend at work and made it last night. tried it today and it was awesome. very nutrient rich and low in fat and calories. had the luck of acquiring part of a croissant with swiss cheese and caramelized onions to dip in it. not too shabby.

Steps:
- Heat oil in saucepan.
- Add shallots (onions), sauté for 3 minutes until tender.
- Add potato, carrots, ginger & curry. Cook 2 minutes.
- Add broth. Bring to boil then simmer for 25-30 minutes - until tender.
- Puree soup ½ at a time in blender or food processor.
CURRIED YAM AND MANGO OVER BASMATI RICE
The same recipe as my curried yam with mango soup, except this is a main dish (recipe #136750)- in other words not pureed. Serve over basmati rice, brown basmati rice or jasmine rice.

- While the rice is cooking, in a large saute pan, melt the butter or ghee and the peanut oil over medium heat and brown the yams until golden on all sides, about 10-12 minutes and until fork tender.
- Next add the onions and brown until softened. Add the curry powder, fresh ginger, coriander, red pepper, and mango; stirring well to coat. Heat through. Season with salt to taste.
- Arrange the rice on a large serving platter and top with the yam/mango mixture.
- Garnish with chopped cilantro leaves.
- Cooking time does not include cooking the rice.
