1 package (16 ounces) linguine
3 teaspoons curry powder
1 can (13.66 ounces) light coconut milk
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/4 pounds uncooked medium shrimp, peeled and deveined
1/3 cup minced fresh cilantro

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet over medium heat, toast curry powder for 2 minutes, stirring frequently. Stir in the milk, salt and pepper., Bring to a boil. Add shrimp; cook until shrimp turn pink, 5-6 minutes. Drain linguine; toss with shrimp mixture and cilantro.

1 tablespoon olive oil
1/4 cup finely chopped onion
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
1 garlic clove, minced
1 teaspoon curry powder
1/3 cup fat-free plain Greek yogurt
2 tablespoons chopped fresh cilantro
1 tablespoon water
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Add shrimp; cook and stir 2 minutes. Add garlic and curry powder; cook and stir 30-60 seconds longer or until shrimp turn pink., Remove from heat. Stir in remaining ingredients. If desired, serve with rice.

I saw this recipe from a local newspaper. I haven't tried it yet, but definitely will. I wanted to make sure I can find it when I'm ready, so I'm entering it out here. I don't see another recipe like this. While it doesn't say specifically, I would guess this should be served over rice or pasta.

2 teaspoons olive oil
3 medium shallots, minced
2 garlic cloves, minced
1 1/2 teaspoons curry powder
1 cup reduced-sodium vegetable broth or 1 cup reduced-sodium chicken broth
1 1/4 lbs shrimp, peeled and deveined
2 tablespoons fresh lime juice
1/2 cup low-fat sour cream
1/4 cup fresh cilantro, chopped
salt and pepper

Steps:

  • Over medium heat, heat oil in skillet.
  • Add shallots and garlic. Cook and stir about 2 minutes until tender.
  • Add curry powder. Cook and stir about 1 minute until the mixture becomes fragrant.
  • Add the broth and bring to simmer.
  • Add the lime juice and shrimp. Simmer until the shrimp are cooked through, about 3 minutes.
  • Remove from heat. Stir in sour cream and cilantro. Season with salt and pepper, serve immediately.
