This is a traditional Danish Smorgasbord dish. It is very versatile I sometimes put a layer of steamed spinach in a casserole, leave out the toast,put boiled eggs onto the spinach, pour in the sauce and broil for 5-10 minutes

8 eggs (poached or hard boiled)
8 pieces of toasted bread
1 carrot, scraped & grated
1 cup onion, finely minced
2 tablespoons butter or 2 tablespoons margarine
4 tablespoons flour
1 1/2 teaspoons curry powder (or a bit less)
1 teaspoon Dijon mustard
1/2 teaspoon fresh lemon juice
1 cup chicken broth (consomme) or 1 cup vegetable broth (consomme)
1 1/4 cups milk
salt & pepper

Steps:

  • Saute the carrot and onion in the butter for 15 minutes.
  • Use low heat you do not want to brown the veggies.
  • Add flour and curry.
  • Stir and heat to a smooth paste.
  • Gradually add all the remaining ingredients starting with the consomme, stirring all the while to prevent any lumps.
  • Simmer approx 8 minutes. Keep hot while you are poaching the eggs.
  • Poach the eggs (or use hard boiled eggs cut in half lengthwise).
  • Place eggs on toast and pour over the sauce.
  • Garnish with fresh parsley and dust with paprika (optional).

½ tsp turmeric
1 tsp garam masala
½ tbsp rapeseed oil
200g Tenderstem broccoli
2 medium eggs
2 slices wholemeal sourdough
1 tbsp natural yogurt
1 tbsp pomegranate seeds

Steps:

  • Heat oven to 200C/180C/gas 6. Mix together the spices and oil, then toss with the broccoli and some seasoning on a baking tray. Roast for 12-15 mins until tender.
  • Meanwhile, bring a small pan of water to the boil, lower in the eggs and boil for 6-8 mins, depending on how you like them, then immediately rinse under cold water, peel and halve. Toast the bread, then spread with the yogurt. Top each slice with the roasted broccoli and an egg, then scatter over the pomegranate seeds.

1 tablespoon unsalted butter
1 tablespoon olive oil
1/8 cup whole wheat pastry flour
1 cup nonfat milk
4 hard-boiled eggs, peeled and chopped
3/4 teaspoon curry powder (McCormick)
3/8 teaspoon salt
1/8 teaspoon fresh ground pepper
4 slices whole wheat bread

Steps:

  • In a saucepan, over low-medium heat, melt/combine unsalted butter and olive oil; then whisk in whole wheat pastry flour.
  • Slowly add nonfat milk, whisking constantly to avoid lumps--and continue to cook and whisk until sauce is smooth and thickened.
  • Stir in chopped hard-boiled eggs, curry powder, salt, and freshly ground black pepper, and cook until thoroughly warmed; then remove from heat and cover.
  • Toast whole wheat bread, top with curried egg mixture, and serve.

1 egg
1 pinch curry powder
1 slice bread, toasted
Kraft Mayonnaise
Salt & pepper

Steps:

  • Cook bacon, set aside.
  • Spray 5" skillet. Crack one egg in small mixing bowl. Add a pinch of fresh curry powder and mix well with a fork. Pour into skillet and cook over med. Heat until cooked thru (2 or 3 min).
  • At the same time, begin making toast. Spread toast with Kraft Mayo, slip egg over toast, salt & pepper. Serve with bacon on the side.

3T olive oil
½t mustard seeds
½ cumin
½ turmeric
¼t each salt, cayenne, cloves, ginger
¼C sour cream
¾C plain yoghurt
¼C sesame seeds
4 poached eggs
2 pieces of buttered toast cut on diagonal

Steps:

  • Heat olive oil. Cook mustard seeds until they pop. Remove from heat. Add remainder of spices to oil. Beat yoghurt and sour cream together. Add spiced oil. Whisk well. Heat in microwave 30 seconds, stirring every 10 seconds. Should be warm. Poach eggs 6 minutes, Toast and butter bread. Arrange each on plate. Turn on broiler. Top eggs on toast. Top w/curry sauce. Sprinkle w/sesame seed. Broil until bubbly.

12 hard-cooked eggs, peeled
¼ cup butter
½ cup all-purpose flour
3 cups milk
1 tablespoon chicken bouillon granules
6 slices white bread, lightly toasted
salt and white pepper to taste

Steps:

  • Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork. Chop the egg whites into small pieces and set aside.
  • Melt the butter in a saucepan set over medium heat. Stir in flour until smooth. Gradually mix in the milk and chicken bouillon so that no lumps form and stir constantly until the mixture comes to a boil. Add the egg yolks and mix until dissolved. Stir in egg whites. Serve over toast and season with salt and white pepper.

You don't even need a toaster to make perfect toast. Crisping bread in a skillet - in melted butter, of course - gives it a tasty brown crunch and leaves you with a hot pan ready to scramble eggs. Be sure to swipe up all the butter and crumbs with the toasted bread when you take it out to keep the eggs nice and golden. Because more butter is added to the pan at the same time as the eggs, it melts slowly into the eggs while you stir them, leaving you with a creamy mix that ends up even creamier when cheese is melted in at the very end.

2 large eggs
Salt and pepper
1 1/2 tablespoons unsalted butter
1 slice bread
1/4 cup shredded cheese (Cheddar, Monterey Jack or a blend)

Steps:

  • Crack the eggs into a bowl and sprinkle generously with salt and pepper. Beat with a fork until evenly yellow. Leave the bowl next to the stove while you make the toast.
  • In a small nonstick skillet, melt a thin slice of the butter over medium-low heat. Swipe the bread in the melted butter to soak it all up. Let sit until golden brown, 2 to 3 minutes. Add another thin slice of butter to the pan then flip the bread, swiping it in the newly melted butter until it's all soaked up. Turn the heat to the lowest setting and let the bread sit until lightly browned, 1 to 2 minutes. Transfer to a plate.
  • Add the remaining butter and the eggs and cook, stirring gently and constantly with a wooden spoon, until the butter melts and the eggs are half wet and half solid, 15 to 45 seconds. Turn off the heat, add the cheese and continue stirring until the mixture is creamy but no longer wet, about 30 to 45 seconds. Scrape onto the toast right away and enjoy.
