1 1/2 cups couscous
1 tablespoon unsalted butter
1 1/2 cups boiling water
1/4 cup plain yogurt
1/4 cup good olive oil
1 teaspoon white wine vinegar
1 teaspoon curry powder
1/4 teaspoon ground turmeric
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup small-diced carrots
1/2 cup minced fresh flat-leaf parsley
1/2 cup dried currants or raisins
1/4 cup blanched, sliced almonds
2 scallions, thinly sliced (white and green parts)
1/4 cup small-diced red onion

Steps:

  • Place the couscous in a medium bowl. Melt the butter in the boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.
  • Whisk together the yogurt, olive oil, vinegar, curry, turmeric, salt, and pepper. Pour over the fluffed couscous, and mix well with a fork. Add the carrots, parsley, currants, almonds, scallions, and red onions, mix well, and season to taste. Serve at room temperature.

1 cup fat-free plain Greek yogurt
1 cup finely chopped peeled cucumber
1 tablespoon minced fresh mint
2 garlic cloves, minced
2 teaspoons snipped fresh dill
2 teaspoons lemon juice
1/4 teaspoon salt
PITAS:
1 pound lean ground beef (90% lean)
1 small onion, chopped
1 medium Golden Delicious apple, finely chopped
1/4 cup raisins
2 teaspoons curry powder
1/4 teaspoon salt
8 whole wheat pita pocket halves

Steps:

  • In a small bowl, mix the first seven ingredients. Refrigerate until serving., In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink; crumble beef; drain. Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally. Serve in pita halves with sauce.

Tasty marinated cucumbers. Ideal for a fresh side salad.

3 large cucumbers
1 teaspoon salt
¼ cup white sugar
⅛ cup water
¼ cup distilled white vinegar
½ teaspoon celery seed
¼ cup chopped onion

Steps:

  • Peel the cucumbers and slice wafer thin. Sprinkle with salt. Let stand 30 minutes, then squeeze cucumbers to release moisture.
  • In a medium size bowl mix sugar, water, vinegar, celery seed, and onion. Add cucumbers to mixture. Mix well. Refrigerate 1 hour.

8 cups peeled sliced pickling cucumbers (2 1/2 pounds)
2 cups thinly sliced onions
1 tablespoon coarse salt (pickling)
2 1/2 cups white vinegar
2 cups granulated sugar
2 teaspoons curry powder
1/4 teaspoon pepper

Steps:

  • Place cucumbers, onions and salt in large bowl. Stir. Cover and let stand on counter overnight. Drain. Rinse with cold water. Drain again well.
  • Combine vinegar, sugar, curry and pepper in a large pot. Stir. Bring to a boil, stirring occasionally.
  • Add cucumber mixture. Return to a boil.
  • Pack vegetables into hot sterilized pint jars to within 1 inch of top. Fill with brine to within 1/2 inch of top. Place sterilized metal lids on jars and screw metal bands on securely. For added assurance against spoilage, you may choose to process in a water bath for 10 minutes.
