This is an excellant snack mix for the holidays. We cook up several batches of this every year, package it up, and deliver it to friends and family. It's always a great hit. When cooking more than 2 batches at once I increase the bake time to 60 minutes to compensate for the loss of heat from opening the oven door repeatedly

2 cups Quaker Oatmeal Squares Cereal (Cinnamon or Brown Sugar)
2 cups Corn Chex
2 cups small pretzels
1 cup whole almond
2/3 cup dried cranberries
1/4 cup butter, melted
1/3 cup orange juice concentrate, thawed
3 tablespoons brown sugar (packed)
1 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves

Steps:

  • Preheat Oven to 250 degrees.
  • In a large bowl, combine cereals, pretzels, and almonds.
  • In a small bowl, combine brown sugar and spices. Stir in melted butter and orange concentrate.
  • Pour sugar/butter mixture over cereal mixture and stir to coat evenly.
  • Pour mixture into a greased 13" x 9" baking pan and spread into an even layer.
  • Cook for 50 minutes, stirring every 10 minutes.
  • Remove from oven and stir in dried Cranberries.
  • Cool completely.
  • Store in an airtight conatiner.

This is so different from any other Chex mix I've tried and so simple to prepare. A co-worker shared this recipe with us after bringing it to a get-together. We all agreed that it made a great holiday munchie. The dried cranberries gives it a festive touch while the orange juice provides a refreshing citrus flavor. Be sure to use concentrate....not juice!

3 cups Corn Chex
3 cups Rice Chex
3 cups Wheat Chex
1 cup sliced almonds
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup packed brown sugar
1/4 cup frozen orange juice concentrate, thawed
1/2 cup dried cranberries

Steps:

  • Preheat oven to 300 degrees.
  • Mix cereals and almonds in a large bowl; set aside.
  • Microwave butter, brown sugar and orange juice*concentrate* in a 1 cup microwaveable measuring cup, uncovered, on high for 30 seconds; stir.
  • Pour butter mixture over cereal mixture; stirring until well coated.
  • Pour into a large roasting pan.
  • Bake uncovered for 30 minutes; stirring after 15 minutes.
  • Stir in cranberries; cool.
  • Store in an air-tight container or zip-lock bag.

Chewy raisins and dried cranberries are sweet surprises in a zesty mix of crunchy cereal, pretzels and cashews.

3 cups Corn Chex™ cereal
3 cups Cheerios™ cereal
3 cups small pretzel twists
2 cups salted cashew pieces
1 cup golden raisins
1 cup sweetened dried cranberries
1/2 cup butter or margarine, melted
2 tablespoons curry powder
1 tablespoon garlic salt

Steps:

  • Heat oven to 250°F. In 15x10x1-inch pan or large roaster, mix cereals, pretzels, cashews, raisins and cranberries.
  • In small bowl, mix remaining ingredients. Pour over cereal mix; stir to coat well.
  • Bake 1 hour, stirring every 15 minutes, until crispy and well coated with seasoning. Spread on waxed paper or cooking parchment paper to cool. Cool completely, about 10 minutes.

3 cups Rice Chex™ cereal
3 cups Wheat Chex™ cereal
1 cup sliced almonds
1/4 cup butter or margarine, melted
1/4 cup packed brown sugar
1/4 cup frozen (thawed) orange juice concentrate
1/2 cup dried cranberries

Steps:

  • In large microwavable bowl, mix cereals and almonds.
  • In 2-cup microwavable measuring cup, microwave butter, brown sugar and juice concentrate uncovered on High 30 seconds; stir. Microwave 30 to 45 seconds longer or until butter is melted; stir. Pour over cereal mixture, stirring until evenly coated.
  • Microwave uncovered on High about 5 minutes, stirring every 2 minutes, until mixture begins to brown. Stir in cranberries. Spread on waxed paper to cool. Store in airtight container.

1 package (6 ounces) Bugles™ original flavor snacks
1 can (12 ounces) mixed nuts or peanuts
2 egg whites
2 tablespoons orange juice or water
1 1/3 cups sugar
2 teaspoons ground cinnamon
1 cup dried cranberries or cherries

Steps:

  • Heat oven to 275°. Grease jelly roll pan, 15 1/2x10 1/2x1 inch.
  • Mix snacks and nuts in large bowl. Beat egg whites, orange juice, sugar and cinnamon in small bowl, using wire whisk or hand beater, until foamy. Pour over snack mixture; stir until evenly coated. Spread in pan.
  • Bake uncovered 35 minutes, stirring every 15 minutes. Stir in cranberries. Bake uncovered 10 to 15 minutes or until light brown and crisp. Cool completely. Store in airtight container.
