This delicious fruity mango chutney chicken curry is super quick to make with only 5 minutes of prep, and perfect for a fuss-free midweek Indian inspired dinner.

Steps:
- Heat the oil in a shallow casserole or frying pan and brown the chicken pieces on a high heat, stirring continuously.
- Turn down the heat to medium and add the garlic and ginger. Stir for a couple of minutes.
- Add the curry powder, mango chutney and crème fraiche and mix everything together to combine.
- Simmer for 10 minutes until the sauce is thick and the chicken pieces are cooked through.
- Season with salt and pepper and serve with chopped coriander, rice and naan bread.

- In a large skillet, heat oil over medium-high heat; brown chicken. Stir in curry powder, garlic, salt and pepper; cook until aromatic, 1-2 minutes longer., Stir in chutney and cream. Bring to boil. Reduce heat; simmer, uncovered, until chicken is no longer pink, 4-6 minutes, stirring occasionally.

GRILLED CHICKEN WITH APPLE-MANGO CHUTNEY

- For the chicken: In a medium bowl, combine the yogurt, apple juice concentrate, vinegar, garam marsala, salt and pepper. Whisk until combined. Add the chicken and toss to coat. Cover the dish and refrigerate for 4 hours and up to 1 day. (You can also put all the ingredients in a resealable plastic bag.)
- For the chutney: Stir the vinegar, preserves, chile pepper, salt, pepper, dry mustard, cloves and ginger in a medium bowl until the mustard dissolves and the chutney base is blended. Mix in the apples, mango and mint. Let stand up to 30 minutes before serving.
- Coat grill rack with nonstick spray and prepare the barbecue for direct grilling over medium-high heat. Place the chicken breasts (still coated with yogurt) on the grill. Cover and grill, about 5 minutes. Flip the chicken over. Cover and grill until the chicken is cooked through and feels firm to touch, about 4 minutes. Transfer the chicken to a cutting board. Let rest 5 minutes.
- Place the chicken on a serving platter, and then spoon some chutney alongside the chicken. Garnish with mint sprigs.

CHICKEN CURRY WITH MANGO CHUTNEY
This recipe was picked up somewhere, somehow during the past 10 years or so, because it added a new deminsion to my stack of recipes that include mincemeat! There are several flavors of mango chutney, any one of which can be used here. The recipe can be made in advance & reheated, & it also freezes well.

- In a large nonstick skillet, heat the oil; add in the chicken and sprinkle with salt and pepper.
- Stir/saute for about 6 minutes or until browned; transfer to a plate.

CREAMY CHICKEN & MANGO CURRY
Use korma paste, turmeric and black onion seeds as the base for this mild, Indian spice-pot, made creamy with coconut milk

- Toss the chicken thighs with 1 tsp of the turmeric and some salt. Heat the oil in a big frying pan or wide flameproof casserole, and brown the thighs well on both sides. Remove from the pan. Add the chopped onion and cook for 5 mins until softened.
- Roughly cut all the flesh from one of the mangoes, scraping as much as you can from the stone. Put into a food processor with the korma paste, ginger and quartered onion. Whizz to a paste, then tip into the pan and gently cook until softened.
- Stir in the remaining turmeric, cumin and onion seeds and turn up the heat for a couple of mins. Return the chicken to the pan. Stir in the coconut milk and stock. Bring to a gentle simmer, then cover and cook for 20 mins.
- Uncover the pan and cook for another 25-30 mins until the chicken is really tender, adding a few drops of water to keep it saucy.
- Slice the remaining mango and stir in to heat through while you shred the chicken with two forks. Season and serve scattered with the coriander, with basmati rice, naan bread, chutney, lime pickle and our sides, if you like.

CURRIED CHICKEN WITH APPLES
This is spicy, but not too spicy. It's full of flavor and no one ingredient is overpowering. I think it'd be great over plain rice. This is from an old Cooking Light cookbook (1987).

- Sprinkle chicken with pepper.
- Spray a Dutch oven with cooking spray and put on a burner on medium heat.
- Add chicken and brown on each side.
- Remove chicken and set aside.
- Rinse Dutch oven and recoat with cooking spray.
- Add apple, onion, celery, and garlic.
- Cook at medium heat stirring constantly until veggies are tender.
- Stir in water and next 5 ingredients.
- Return chicken to Dutch oven.
- Bring to a boil.
- Cover, reduce heat and simmer for 40 minutes or until chicken is tender.
- Combine orange juice and cornstarch, stirring until blended.
- Stir into Dutch oven. Bring to boil and cook 1 minute or until slightly thickened.

- 1. Combine apples, mangoes, red pepper, sugar, onion, raisins, vinegar, and gingerroot in a large stainless steel or enamel saucepan. Bring to a boil over high heat, reduce heat, and boil gently, uncovered, for 20 minutes or until fruit is tender and mixture is thickened, stirring occasionally. Add lemon juice, curry powder, nutmeg, cinnamon, and salt; boil gently for 5 minutes.
- 2. Remove hot jars from canner and ladle chutney into jars to within 1/2 inch (1 cm) of rim (head space). Process 10 minutes for half-pint (250 mL) jars and 15 minutes for pint (500 mL) jars as directed for Longer Time Processing Procedure.
- SERVING SUGGESTION: Chutney Butter
- Serve with grilled or barbecued chicken parts.
- Combine 3 tbsp (45 mL) Mango Chutney and 1 tbsp (15 mL) softened butter or margarine. Stir in 2 tsp (10 mL) chopped fresh cilantro and a pinch of cayenne pepper.
- Makes 1/4 cup (50 mL).
