2 tablespoons orange marmalade
2 teaspoons curry powder
3/4 teaspoon salt

3 tablespoons finely chopped green onion

1 cup finely chopped almonds, toasted

Steps:

  • In a large bowl, beat the first five ingredients until well blended. Stir in the chicken, onion and celery. , Shape into 1-in. balls; roll in almonds. Cover and chill until firm (can refrigerate up to 2 days).

These Curry Lime Chicken Phyllo Rolls were adapted from Ina Garten's Crab Strudel recipe, which is awesome. But I'm not an established TV personality who regularly throws around phrases like "good olive oil" and "lunch in East Hampton," so lump crab meat isn't something that I'm shelling out money for very often. That's why I decided to make a version with chicken!

2 tablespoons olive oil
1 small onion ((sliced))
2 scallions ((chopped))
3 cloves garlic ((minced))
2 teaspoons curry powder
2 cups cooked chicken ((shredded))
1 tablespoon cilantro ((chopped))
1 lime ((zested))
2 tablespoons freshly squeezed lime juice
Salt
Pepper
4 tablespoons butter ((melted))
8 sheets phyllo dough
¼ cup panko breadcrumbs ((or regular dried plain breadcrumbs))

Steps:

  • Heat the olive oil in a pan over medium heat and add the sliced onion. Cook for 5 minutes until the onions begin to soften. Then add the scallions and garlic and continue to cook until everything gets slightly golden, about 8 more minutes. Lower the heat, add the curry powder and cook for another 2-3 minutes. Turn the heat off.
  • Add the shredded chicken to the scallion and onion mixture along with the chopped cilantro, lime juice, lime zest, and salt and pepper, to taste. Stir to combine.
  • Heat your oven to 400 degrees. Melt 4 tablespoons butter and set aside. Prepare a sheet pan with a layer of nonstick foil or parchment paper.
  • Take your phyllo dough and lay out one sheet on a clean surface. Brush it with a little melted butter and sprinkle lightly with breadcrumbs. Put another layer of phyllo dough on top, and repeat the butter and breadcrumb process again and again until you have 4 layers. Spoon half of the curry chicken mixture along one edge (lengthwise) of the phyllo. Roll it up tightly and set the roll seam side down on the baking sheet.
  • Repeat the process with the rest of the phyllo and chicken mixture to make a second roll. Brush each roll with the rest of the melted butter and score both rolls diagonally into 1 inch pieces with a serrated knife. You'll get about 8 pieces out of each roll. You want to cut them about ¾ of the way down, without cutting all the way through. Bake for 12 minutes, until the top is golden brown. Slice them the rest of the way through and serve immediately.

1/4 cup finely chopped onion
1/4 cup finely chopped carrot
2 teaspoons butter

1-1/2 cups diced cooked chicken
1/4 cup sour cream
1/4 cup plain yogurt
1 package (17.3 ounces) frozen puff pastry, thawed
1 large egg yolk
1 teaspoon water

Steps:

  • In a large skillet, saute the celery, onion and carrot in butter for 4-6 minutes or until tender. Stir in the flour, curry powder and salt until blended. Add broth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat. Stir in the chicken, sour cream and yogurt., On a lightly floured surface, roll each pastry sheet into a 12-in. x 10-in. rectangle. With a floured 3-in. round cookie cutter, cut out 12 circles from each rectangle. Place 2 teaspoons chicken mixture on one side of each circle. Moisten edges with water; fold dough over filling. Press edges with a fork to seal., Place 1 in. apart on a greased baking sheet. In a small bowl, beat egg yolk and water; brush over pastry. Bake at 400° for 17-20 minutes or until golden brown. ¼ cup olive oil, divided
3 tablespoons soy sauce, divided
1 (5 ounce) skinless, boneless chicken breast, finely chopped
½ cup finely chopped red cabbage
¼ cup red onion, chopped
¼ cup finely chopped carrot
¼ cup light mayonnaise
3 tablespoons curry powder
1 tablespoon red curry paste (such as Thai Kitchen®)
1 teaspoon minced garlic
1 teaspoon red chile powder
½ (16 ounce) package egg roll wrappers (such as Nasoya®)

Steps:

  • Heat 1 tablespoon olive oil and 1 tablespoon soy sauce in a large saucepan over medium heat. Add chicken and cook until no longer pink, 3 to 5 minutes. Add cabbage, onion, and carrot; cook, stirring occasionally, until softened.
  • Mix remaining soy sauce, mayonnaise, curry powder, curry paste, garlic, and chile powder together in a bowl. Fold into the chicken mixture.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly brush a rimmed baking sheet with some olive oil.

3 split (1 1/2 whole) chicken breasts, bone in, skin on
Olive oil
Kosher salt
Freshly ground black pepper
1 1/2 cups good mayonnaise
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Gray's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews, chopped
6 tortillas

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and shred the chicken in pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews to the chicken.
  • Fill the center of each tortilla with the chicken mixture. Fold the 2 sides of the tortilla over the filling so that the sides overlap. Roll the tortilla from bottom to top, and cut in half diagonally.

These Curry Chicken Hand Pie are made with sliced chicken breast, frozen puff pastry dough, and a simple creamy chicken curry and vegetable filling; pleasing even the pickiest party guests. 2 teaspoons salted butter
1/4 cup celery (diced)
1/4 cup onion (diced)
1/4 cup carrots (diced)
1 tablespoon all purpose flour
1 teaspoon curry powder
1/2 cup chicken broth
1/2 cup light sour cream
1 cup sliced Curry Chicken
2 sheets frozen puff pastry (thawed)
1 egg (whisked)
2 tablespoons water
flake sea salt

Steps:

  • Preheat oven to 350F.
  • Add butter to a skillet over medium high heat. Toss in celery, onion, and carrots and stir to coat in the butter.
  • Cook for approximately 5 minutes or until veggies are tender and fragrant.
  • Stir in the flour and curry powder and stir to coat. Once the veggies are all coated and a paste forms, stir in the chicken broth. Bring to a boil and then reduce heat to low. Allow to thicken for about 1-2 minutes, then remove from the heat.
  • Stir in the sour cream and the sliced chicken breast. Set aside.
  • Lightly flour a work surface and roll out the puff pastry sheets. Use the bottom of a glass or a 3" round cookie cutter to cut out circles in the dough. The two sheets should yield about 18 circles total.
  • Add 1 tablespoon of the chicken mixture to one half of each circle. Moisten the edge of each circle with a small amount of water, and then fold over the dough to cover the mixture
  • and press to close. Use a fork to close each hand pie. Lay each completed hand pie on a greased baking sheet, about 1" apart.
  • Repeat with remaining dough.
  • In a small bowl, combine whisked egg and water. Brush each hand pie with egg mixture and then sprinkle lightly with flake sea salt.
  • Bake for 18-20 minutes or until crisped and golden. Serve warm.

1 cup Sushi Rice, recipe follows
Pickled ginger, for serving
Wasabi, for serving
Soy sauce, for serving
1 tablespoon olive oil
3 boneless, skinless chicken breasts, cut into medium dice
1 small onion, minced
2 cloves garlic, minced
1 (14-ounce) can coconut milk
1/4 cup raisins
1 tablespoon chopped fresh cilantro leaves
1 tablespoon mild curry powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon pine nuts, roughly chopped
3 cups water
1 teaspoon salt
1 cup short-grain sushi rice
1/4 cup rice wine vinegar

Steps:

  • Place 1 sheet of nori lengthwise on a bamboo mat, shiny-side down. Position the sheet about 1-inch from the side of the mat closest to you. Wet your hands in cool water and take a handful of sushi rice. Place the rice in the center of the nori and use your fingers to spread the rice evenly across it. Next place the curried chicken salad horizontally across the roll. Use the mat to roll up the sushi, pinching and squeezing the mat to shape it into a round cigar shape. Slice into 1-inch thick rolls with a sharp knife. Turn rolls onto their sides so the rice is facing upwards, and serve with the pickled ginger, wasabi, and soy sauce.
  • Heat olive oil in a large skillet over medium heat. Add chicken and saute until fully cooked through. Remove chicken from pan. Add onion and garlic and saute for 2 to 3 minutes. Add coconut milk and bring to a simmer. Meanwhile, chop the chicken finely and return it to the pan. Add the raisins, cilantro, curry powder, salt, pepper, and pine nuts. Simmer for about 10 to 15 minutes or until the mixture is thick. Remove from heat and cool completely before using.
  • Place the water and salt in a medium sized saucepan and cover it with a tight-fitting lid. Bring the water to a boil. Add rice, return to a boil over medium heat, and then reduce heat to low and simmer. Once the water has evaporated from the rice, remove the pan from the heat. Stir in the rice vinegar and let cool before using.

8 ounces boneless chicken breasts, pounded lightly at the thick end
3 ounces cream cheese, at room temperature
2 tablespoons mayonnaise
2 tablespoons minced onions
1 teaspoon curry powder
1 cup walnuts, chopped medium-fine
1/2 teaspoon kosher salt
3/4 cup shredded sweetened coconut, toasted on a baking sheet at 350 F (175 C)

Steps:

  • Put the stock and chicken breast in a small saucepan over low heat.
  • Cover, bring to a simmer, then cook for 8 minutes.
  • Set aside until completely cooled. This could be done the day before.
  • Remove the chicken from the stock (saving the liquid for a soup) and chop medium-fine.
  • In a bowl, beat the cream cheese with the mayonnaise until smooth.
  • Add the chicken, onion, curry powder, walnuts, and salt; mix together gently.
  • Cover the bowl with plastic wrap and refrigerate for a couple of hours - it's much easier to roll when cold.
  • Dampen your hands and lightly roll the mixture into 3/4-inch balls.
  • Press on a coating of toasted coconut and, if you can, serve this hors d'oeuvre within an hour so the coconut will stay crunchy.
