This take on traditional chicken salad has received rave reviews wherever it's been served. I've even been able to convert my husband, who won't come within 10 feet of traditional chicken salad, into a "more please" kinda guy when I serve these curried chicken lettuce wraps for dinner! Also makes great leftovers as it tastes even better after a day or two!

Number Of Ingredients 11

1 tablespoon olive oil, or to taste
2 cups cubed cooked chicken
2 tablespoons lime juice
salt to taste
1 medium green apple, diced
⅔ cup dried cranberries
¼ cup toasted slivered almonds
2 ½ tablespoons thinly sliced green onions
⅔ cup mayonnaise
½ teaspoon curry powder
12 leaves lettuce, or more to taste

Steps:

  • Heat oil in a skillet over medium heat. Add chicken, lime juice, and salt; cook and stir until chicken is no longer pink, 7 to 10 minutes. Remove from the heat.
  • Add apple, cranberries, almonds, and green onions to the chicken.
  • Mix mayonnaise and curry powder together in a large bowl. Add to chicken mixture and stir to coat. Transfer to the refrigerator until flavors have blended together, at least 1 hour, or overnight for more flavor.
  • Spoon chilled chicken salad into individual lettuce leaves. Wrap and eat with your fingers.

1/2 cup sour cream
1/4 cup mango chutney
1/4 cup mayonnaise
1 teaspoon curry powder
1 clove garlic, minced
1/4 teaspoon salt
1/2 cup celery, diced
1 apple, cored and chopped
1/4 cup red onion, diced
2 cups diced cooked chicken breasts
1/2 cup dried cranberries
12 lettuce leaves, bib or iceberg work best
1/4 cup sliced almonds

Steps:

  • Mix first 11 ingredients together (sour cream to dried cranberries).
  • Put approximately 1/4 cup mixture on lettuce leaf and sprinkle with 1 tsp almonds.
  • Roll up and enjoy.

1/4 cup(s) each sweet mango chutney and plain greek yogurt
2 teaspoon(s) curry powder
1 teaspoon(s) olive oil
2 teaspoon(s) lime juice
salt & pepper
FOR THE CHICKEN
1 cup(s) rotisserie chicken cut into small chunks
1 gala apple peeled cored and chopped into small pieces
2 ounce(s) goat cheese crumbled
1/4 cup(s) green onions chopped
2 tablespoon(s) crushed pecans
2 tablespoon(s) fresh cilantro chopped
butter lettuce leaves for serving

Steps:

  • Mix the ingredients for the dressing together and set aside.
  • Mix the chicken and apple together with the remaining ingredients except the lettuce leaves.
  • Pour the dressing over the chicken mixture and mix well.
  • Serve in lettuce leaves

Curried chicken salad is a favorite of mine. It's so flavorful, light and easy to whip together. To make mine extra light, I switched out mayo for Greek yogurt, and added tons of fresh herbs. It's the perfect lunch!

3 boneless, skinless chicken breast halves
1 onion, sliced
1 bay leaf
3 parsley sprigs
1 thyme sprig
10 black peppercorns
1 clove garlic, crushed
1 tablespoon kosher salt
1 1/2 cups Greek yogurt
1/4 cup unsalted roasted cashews
1/2 cup diced celery
1/2 cup halved red grapes
1 1/2 tablespoons curry powder
1 teaspoon ground ginger
1/4 cup chutney, such as mango or Major Grey's
2 tablespoons chopped cilantro
2 tablespoons chopped scallions
2 tablespoons chopped basil
Kosher salt and freshly ground black pepper
8 butter lettuce leaves

Steps:

  • Poach the chicken: Place all of the poached chicken ingredients in a large saucepan and add enough cool water to cover by 1 inch. Bring to a simmer and continue to simmer until the chicken is cooked through, 10 to 15 minutes. Remove the chicken to a plate and when cool enough to handle, shred into bite-size pieces with 2 forks. Set aside.
  • While the chicken is poaching, combine all of the salad ingredients in a large bowl. Add the shredded chicken and toss to coat. Season with salt and pepper. Refrigerate for 2 hours, to let the flavors mingle.
  • To serve: Scoop some of the chicken salad into the lettuce leaves, roll up and enjoy!

1/2 cup fat-free sour cream
1/4 cup fat-free mayonnaise
1 teaspoon ground curry powder
1/4 teaspoon salt
1/4 cup finely diced celery
1 Granny Smith apple, cored and chopped
1/4 cup finely chopped red onion
2 cups diced cooked chicken
1/2 cup sweetened dried cranberries
12 Bibb lettuce leaves (about 1 head)
1/4 cup toasted sliced almonds, chopped (optional)

Steps:

  • 1. In Classic Batter Bowl, combine sour cream, mayonnaise, curry powder, garlic pressed with Garlic Press and salt; mix well using small scraper. 2. Finely dice celery using a chef's knife. Cut apple into wedges; chop apple and finely chop onion. Add celery, apple onion, chicken and cranberries to sour cream mixture; mix well. 3. Using large scoop, place one scoop chicken mixture onto each lettuce leaf. If desired, chop almonds; sprinkle almonds over chicken mixture. Roll up and serve immediately. Note: To toast almonds in the microwave oven, place almonds in the small oval baker; microwave on high 5 - 7 minutes or until golden brown, stirring after each 30-second interval. Cool completely.
